Why is it Sunday night always comes far too quickly? Where has my weekend gone? What have I done? ::sigh:: — it’s a good thing I love my job or else I would be upset right now.
I have a deep deep love for weekend breakfasts. I absolutely love taking my time eating, drinking my coffee, and reading my blogs. It doesn’t matter what day of the week it is, though. If I don’t have an alarm set, my body will naturally wake me up at 6 am. I fought it this morning and stayed in bed until 6:30 (it was cold and I liked my covers) until my rumbling stomach told me to get up and eat the breakfast I had waiting in the fridge.
I whipped up a batch of Standard Overnight Oats last night and mixed in about 1/4 cup pumpkin this morning. I topped my oats with cinnamon, apple, raisins, and peanut butter.
This combo has not disappointed me yet. Expect to see it again tomorrow morning.
For some reason, I never take a picture of my morning coffee. But I usually use this glass coffee mug (I like to see the color of my coffee after I pour my almond milk in) and drink 1.5 cups. Sometimes I drink two. I don’t even know how this happened. I used to be a 1 cup girl — I guess running my household after getting married makes me more sleepy. I can only imagine how many cups I will drink after I have kids. Yikes.
The picture below makes me sad that it’s not light out when I eat breakfast every morning. It also makes me think that next time I will wipe the rim of my bowl off so you can see a prettier picture.
We got some great news this morning as our friends Courtney and Garrick got engaged last night! Garrick’s parents live in Colorado and they were out visiting them. I am so happy for the two of them — they are absolutely a perfect fit. I can’t wait for the wedding! Congrats Courtney and Garrick! We love you!
We headed off to church, and Mommasita was a very happy lady when she saw I brought her two pieces of my gluten free sandwich bread I made yesterday. I’m also glad I’m not the only one who has always been intimidated by yeast. It really was easy — I swear! I’m not one for long, complicated recipes, so if I make it, it’s pretty much fool proof.
After church today my stomach was hungry but we still had an hour or so before Sunday Dinner. I’ll be the first to admit that I hate calling lunch on Sundays “dinner”. It seems silly to me. I don’t like it. I do it for the husband who is Dutch.. and thought I was Dutch for the first six months we dated. It must be the blonde hair and blue eyes that did it for him.
While I cooked, I snacked on one of the cashew cookie Larabars Stacey sent me along with the giveaway packages. Don’t forget to enter HERE.
I then got to work on dinner. The husband was having oven baked BBQ chicken (which was on sale at WF yesterday!) and I got my heart set on baked bbq tofu.

I’ve seen Caitlin use this before, but I never knew it was GLUTEN FREE! Mommasita and I found it at WF yesterday and I honestly jumped up and down and shrieked cries of utter joy. We love barbeque sauce (her more so than me) and I have not had any since going gluten free last October!
I know some people get kind of intimidated with tofu (just like yeast, apparently!) but if you know how to prepare it properly, it is a piece of cake! Visit Emily or Caitlin’s site as they have great tutorials on how to drain and press the water out of the tofu. The following recipe doesn’t require the tofu to be 100% drained — there can still be some moisture in it since you will be baking it.
Bone Suckin’ Good BBQ Tofu
- Cut your tofu into 6 equal sized “slabs” and press the water out of it using either of the aforementioned blogger’s strategies.
- Cut each slab into 6 equal sized pieces and place on greased foil on a baking sheet (easy clean up)
- Brush each piece of tofu with Bone Suckin’ Good BBQ Sauce.
- Bake at 400 degrees for 20-25 minutes.
This was so stinkin’ good! I dipped the tofu into more bbq sauce as well. We had roasted broccoli, carrots, and onions on the side as well as baked potatoes. My potato really isn’t as big as it looks — it was pretty moderately sized.
I love roasted veggies — they make me so happy. I was never a fan of “mushy” vegetables so roasted veggies are my favorite way to eat them! The husband has always thought he didn’t like cooked carrots as well because of their consistency. He liked these though! They were crisp and crunchy. Delicious!
This afternoon was jam packed of housework. I cleaned this place from floor to ceiling and scrubbed the floors on my hands and knees. The only thing that stinks about having hardwood floors is that you can’t just run a vacuum and be done with it. I probably sweep the floors every other day, flat mop 1-2 per week, and actually scrub the floors once every other week. I should scrub the floors every week, but it’s a lot of work!
After I cleaned, I sat down to grade some papers. Then someone started calling my name from a cupboard above the sink. His name was Mr. Fig and we had been away from each other for far too long. We had kind of a risquÃ© photo shoot if you ask me.
I know, right? I also had some almonds.. then went back for some crackers… then went back for some raisins… then went back for some TJ’s dark chocolate nibs. I pretty much grazed through this afternoon which I absolutely hate doing. I love eating real meals!
I took a break from grading papers this afternoon to take a short power nap (the husband even covered me with a blanket.. how nice!) and to go over and deliver a cake to my niece who turned 9 today. When we got there, the kids were out playing. When they got home, they were upset because they were just starting to have a “camp out” in the woods with their friends. My brother in law kept telling them to knock it off because they could go back after cake. That was, until, Alyssa slipped up and told us how they were roasting hot dogs and s’mores with some neighborhood teenagers that my brother in law didn’t know. When he asked her what their names were and who they were, she replied…"Oh, just some kids.. you know Chris, Snake….” I’m sorry, what? SNAKE? Needless to say, they were not going back. 9 but going on 17 if you ask me. Poor sister and brother in law… I feel your pain.
The good thing about being around our little cousins and nieces and nephews is they make for the best birth control. Not that we don’t love all of them, but we love our nice quiet zone we’ve got going over here.
When we got back, I went straight back to grading papers, and I felt like I should really eat something. I wasn’t hungry at all, so I turned to some more veggies.
And then I really didn’t want them. I ate the broccoli, picked at the tomato & cucumber salad, but then just set it aside. I’m more of an intuitive eater on Sundays because of the larger lunch (or “dinner”.. whatever) we have around 12:30. I’m thinking a pumpkin muffin in the form of muffin crunch cereal is going to be happening soon. I’ve been craving it!
I didn’t finish everything I needed to do, but I did enough. Last weekend I graded everything and got through all of my work and come Tuesday, I was kind of bored. Tuesday and Wednesday are kind of subdued in the grading department, so it is kind of nice to have some leftover work to have for my plan periods.
Oh, by the way.. I laughed today because one of the “searches” for my blog on Google was “chelsey teacher in chicago blog healthy” — I love that search engine box. It cracks me up sometimes!
I’m off to go catch up with you all, eat a snack, and snuggle on the couch. Is it as cold by your as it is by me? My feet are freezing!
