There’s something magical about the first REAL snowfall of the season.

Every year, no matter what my feelings are about driving in snow, leaving my house in snow, or the downright coldness of snow, I always look forward to it.

In fact, I always wake up in the middle of the night – and if snow is forecasted, I’ll look out the window… just in case, hoping it has made its way to the ground.

I always feel like a child when I look out my back window and see my yard filled with the fresh white snow.

I often rush through life – and being snowed in is quite possibly the best thing for me.

It forces me to slow down, appreciate rest, and to live in the moment.

Of course, it also forces me to spend some quality time in the kitchen. 

You’ll be happy to know I finally switched it up in the kitchen today. Yesterday afternoon after school, I stopped by Whole Foods to pick up some baking supplies… just in case. :)

I also picked up my very first bottled of un-sulphured, organic molasses. With this, I bring you Pumpkin Spice Molasses Oatmeal – inspired by Holly’s cookies (which I am so making today).

Pumpkin Spice Molasses Oatmeal with Grilled Bananas

  • 1/3 cup gluten free oats
  • 1/3 cup almond milk
  • 1/2 cup water
  • 1/2 cup pumpkin
  • 1 tsp. vanilla
  • 1 tsp. molasses
  • 1/2 tsp. pumpkin pie spice

Topping:

  • 1/2 ripened banana, sliced down the middle (lengthwise)
  • 1 tsp. cinnamon
  • 1 tbsp. peanut butter

Gather your supplies – and take a photo of the lineup (and mention the cute picture of your husband and yourself hiding behind the ingredients).

Warily determine that it’s okay you bought a different kind of peanut butter – (verdict? Delicious.)

Bring your oats, milk, water, and vanilla to a rapid boil in a small sauce pan. Stir frequently and add your pumpkin, pumpkin pie spice, and molasses to the mix. Stir until pumpkin is incorporated.

Meanwhile, Preheat a greased skillet and place your banana slices facedown in the skillet, Sprinkle the first side with cinnamon. Let cook for 1-2 minutes, flip, and sprinkle other side with cinnamon. Cook an additional 1-2 minutes.

Plate it up!

I never knew how much I liked molasses – it gives the oatmeal a “gingerbread” feel, without adding too much sweetness.

I am so glad I found your blog. And I’m glad that you found ours too :) I am gluten free too (since 13 mo old), we got our first big snow today (we live in KY), AND your oatmeal sounds fabulous! So hello from a new friend :)

You sure have lived gluten free much longer than I have had to!! I wasn’t even aware that at the time when we were younger most people even knew about being gluten free. Go figure!

i love the snow! i was in it a few times in california and colorado!! i loved it! i even skiied, and built a snow man and went sleding which was all cool! hope you have fun (in the snow) i’m going to try molasses in my oats next time!!!!

I love playing in the snow, looking at it from inside where its warm, and skiing on it. But, I hate driving in it and shoveling it.

By my calculations, there are more pros than cons listed.

Can I come over for the cookie-baking fest?

Having teachers cancel class because of the snow is pretty good but what I really love about snow is how quiet and peaceful it makes the world seem :) My mom grew up in New Orleans and it snowed once the entire 30 years she lived there and… she had the chickenpox and was forced to stay inside! Luckily she moved to CO where there’s plenty of snow…okay maybe that isn’t always so lucky.

I always feel like a little kid when it snows the first time of the season. The snow reminds me of sledding, building snowmen, and getting rides behind my grandpa’s tractor. Everything seems magical. But I agree with you, driving in it is less than pleasant.

I’m pretty jealous of your snow…at least it’s seasonably chilly here so I’m not too upset! But as much as I love it I don’t like to drive in it. Or walk in it!!

I remember the first time I saw real snow falling was 2 years ago when I first moved to America. I was out on my lunch break and it started snowing! I ran back into my office and started telling everyone about it (in this really high-pitched, excited voice) and they all looked at me like I was crazy! Since then I’ve seen plenty of snow but I still get very excited when I see it falling :)

1. I so agree with the sow thing. I hate the coldness it brings…and how scary it is to drive in…but how can anybody deny how beautiful a nice snowfall is? And I love the peace and stillness it brings to the world – like you’re isolated in your own winter wonderland :)

Though, being a South Florida girl, I’m good with just the pictures.
Snow=not my thing. I just can’t do cold.

Just found your blog, love it girl!! I’ve actually been wondering how to add molasses to my oats for a while, so this just gave me some serrrrious inspiration. Really how can you go wrong when peanut butter and pumpkin is involved anyway. Can’t wait to try it out!
