Hey Summer — it’s me, Chelsey.

I know we haven’t talked for a while. I can’t believe it’s been six whole months since you’ve been gone. I can’t even explain to you how much I have been missing you lately.

My life just hasn’t been the same without you around. I first enjoyed my time apart from you, but that got old pretty quickly. Then, I went through a period of time where I was sad and depressed. I really thought you were leaving me forever. I can’t even tell you how distraught that made me feel. But now, I know you’re coming back. I saved you a couple of drawers in my bedroom, just in case you were going to return this year.

I know you’ve probably been really busy since you’ve been gone, and I’m looking forward to you making time for me again. I also know you’ve been having quite the affair with the Southern Hemisphere. I want you to know in advance that it’s okay. I forgive you — except for those couple of months you spent getting hot and heavy with Australia. That is something I cannot forgive easily.

Luckily for you, I am easily bribed in the form of hot, dry weather.

Clear blue skies would also do it for me.

A slight breeze to ease my discomfort would surely be appreciated as well.

I’m so glad you’re coming back Summer. There’s so many things I look forward to when you’re around. I’ve been planning all the things we’re going to do together when you arrive.

We’re going to go bike riding. We’re going to go for long runs and work up a nice salty sweat. We’re going to sleep in and lounge around in bed. We’re going to eat ice cream until our insides are full of sugar. We’re even going to garden together — doesn’t that sound like fun? Don’t worry, I’ve already got our schedule color coded. Expect your phone alarm to go off on June 21 with the message “Make your way back to Chelsey’s house PRONTO!”

When you get here, I’m going to make you these burgers. I know you’re not a vegetarian, but I promise you’ll love them. Just don’t tell the Husband I’m cooking for you — he might get jealous.

Carrot Lentil Burgers (makes 4 burgers)

adapted from Oh She Glows

  • 3/4 cup prepared lentils
  • 3/4 cup chopped toasted pecans
  • 1 slice bread, toasted and processed into breadcrumbs
  • 1 carrot, finely grated
  • 1 flax egg (1 tbsp. flax mixed with 3 tbsp. warm water)
  • 3 cloves garlic, minced
  • 2 tbsp. water
  • 1 tsp. garlic powder
  • 1/2 tsp. pepper
  • 1/4 tsp. salt
  • dash of paprika

Directions: Begin by grating your carrot and mincing your garlic. Toast your bread and place in a high powered blender/processor with the carrot, garlic, lentils and pecans. Process until slightly smooth. Add the water, flax egg, and spices and process for a few more seconds. Take the mixture and separate into four equal patties. Line a cookie sheet with foil and spray with cooking spray. Bake patties for 20 minutes at 350 degrees Fahrenheit. Flip the patties, lower the heat to 330 degrees Fahrenheit and bake for another 20 minutes. Enjoy with your favorite burger toppings and condiments.

I love you, Summer. It’s a mere 67 days until we’re going to be reunited. I’ll be sure to wear my favorite sundress just for you.

You’ll also be glad to know by the time you arrive I’ll be regularly shaving my legs again.

If only the Husband were that lucky.
