I feel like beans get a really bad rep. While growing up, kids (and adults alike) have so many nasty jokes about beans which really makes people develop a negative connotation associated with them. I, for one, love beans – and always have! As a vegetarian, beans are incredibly essential to a balanced diet. They are full of vitamins and nutrients many people lose once going vegetarian.

The great thing about beans is if you don’t like one variety, that doesn’t mean you won’t like them all. They are sort of like the “meat” of a vegetarian diet. Just as an example, if you are a meat eater and don’t enjoy pork, that doesn’t mean you won’t like chicken! In the same way, if you don’t enjoy kidney beans, that doesn’t mean you won’t enjoy chickpeas (also known as garbanzo beans).

The thing I love about beans i how nutritionally dense they are – so full of protein and fiber! You can’t beat that. I put together a quick chart with some of my favorite beans showing you just how awesome the stats are!

**Cannellini or any kind of white bean variety is awesome for making any sort of vegan “cream” sauces!

I tend to buy canned beans, which when I actually type that, it makes no sense – dry beans are SO cost effective! Cooking dry beans is insanely easy; it just requires a little planning on your part! The directions are mainly the same for all types of beans, once you get the method down, you’ll be a bean makin’ machine!

When cooking dry beans, they tend to double and sometimes triple in size! For example, if you are cooking 1 cup of dry beans, you’ll end up with roughly 2-3 cups of cooked beans.

  1. Soak desired amount of beans in a bowl with enough water to allow the beans to double in size. Make sure you give your beans enough room to grow! Beans should be soaked for 8-12 * hours (or overnight).
  2. Rinse beans off and place in a pot of new water (again covering the beans with enough water to allow the beans to plump up even more while cooking).
  3. Bring water to a boil, reduce heat, and cover.
  4. Cook for 1 to 1-1/2 hours**, checking for tenderness.

*Lentils do not require soaking, but you can soak if desired.
**Soybeans require more cook time – around 3-4 hours.

Canned beans are far easier – and quicker too! Open, drain, rinse, and voila! You’re ready for business!

I had the hardest time choosing recipes to feature that include beans – I use them for everything! Side dishes, pasta dishes, veggie burger, in a cold salad – the possibilities are endless! Here are a few of my favorite bean recipes I have made:

All your recipes look great but I could go for those old school campfire beans…they look like my childhood on a platter b/c my grandma made great beans like those.

I love beans!!! Great basics post. Definitely need to work on using dried beans more often. I’ve fallen out of the habit.

I’m reading this in my kitchen as I just literally opened a can of black beans (I never buy dry ones either) for dinner :) It’s a “roast a bunch of veggies, throw some beans in there and top with cheeze sauce” kind of night. :)

I love chickpeas or black beans. Love chickpea curry and black bean burgers. I tried the dry beans once and failed miserably… they never got soft for some reason! It is way more cost effective so I should really attempt it again.

Beans are an awesome food in any diet. I love it and cook it every week. On step one, though, I rinse beans few times in the first hour of soaking. It’s easy, I do it while in the kitchen making dinner, etc. Then I add enough water and a tsp of salt. This way when cooked, beans will hold it’s shape better. This tip gave me one of the chefs I met few years ago. I’ve been preparing beans this way since.

I’m so with you on the bean love. My two favorite ways to eat them –
1. In your broccoli and chickpea salad – love that recipe!
2. For a super easy dinner I pan-fry garlic and chillies in olive oil, toss in a drained tin of butter beans or cannellini beans, sauté until hot, and throw in some baby spinach to wilt down at the end. And garnish with shaved Parmesan. Hells yeah.

Yum, that butternut squash with chickpeas looks amazing! I have a taco soup recipe that includes lots of beans that I love :-) I just have to make sure not to eat TOO much or my digestive system gets kind of mad ;-)

I always have 3 or 4 kinds of canned beans on hand for chili or salads (garbanzo). They’re quite delicious. However, I’ve never done the dried ones. Planning ahead is something I’m not the best at… lol

what do you think of black eyed peas? they are one i haven’t tried before.

Also, for someone who does not eat beans but would like to, what is the best way to ease them into the diet? Is a 1/2 cup serving too much at once (for all of them?). I think lentils are more gentle? I’m not used to beans and generally avoid them because of the “side effects”. But I want to eat more of them (I’m addicted to bread, so may as well add some beans to the mix :)

I’ve actually never had black eyed peas to be honest with you!

I think it would depend on person to person – maybe start with 1/4 cup a few times a week and gradually increase it from there? I’m obviously no expert, but I do know that if you increase your fiber significantly and dramatically, it could “slow things down” for a few days!

and yes, i was “that girl,” in 1998, who made the “chili” at wendy’s old fashioned hamburgers. because of that experience, i can wash canned beans better than anyone on the planet. and i am certain that i’ve just commanded your respect. ha! I used to dislike beans in anything, but then I tried garbanzo beans. I love the taste and texture of them and I put them in all of my salads and wraps! I am still NOT a fan of black beans!

yum, I loved your white bean pasta. We’ve had it a couple of times! I remember being really, really scared of beans as a kid. Even the first few months of me being vegan I didn’t touch them. But with a bit of creativity, I managed to hide them in recipes until I started liking them. Great post today, Chelsey!

I feel like I should be able to make beans in the crock pot, but I’m not sure how. Do you know? If I soaked overnight, then put on low all day would they overcook?

Ahhh…I love beans. So much.
Like you, I usually opt for the canned version. Why? I have no idea.

My favourite beans are red kidney beans. Love them in enchiladas and chili! Second favourite would have to be chickpeas of garbanzo beans….making classic hummus or pumpkin hummus is always yummy!!!

I love beans, especially baked beans on a jacket potato with cottage (or grated) cheese…such an easy, yet delicious, meal which is always a winner! Apparently they also count as 1 serving of our 5-a-day!

I’m really lazy and used canned instead of dried beans too. :P They’re already so cheap that I don’t really care about saving extra by buying dried. Plus, canned are just so much more convenient!

I love chickpeas and kidney beans in my mom’s minestrone soup recipe. I grew up eating it all the time so I guess I’ve always been a bean lover too. :D
