clean no bake dough balls

Happy Thursday everyone! I had a late night last night and another one today, so I thought I would let you all enjoy a guest post from Brittany — she is sharing a delicious looking snack! I’ll definitely be pulling my food processor out sometime soon to make these!

Hi CEC Readers! My name is Brittany and I blog about clean eating and fitness over at littlebshealthyhabits.com.

I’m your normal, everyday 24 year old with a boyfriend, and new puppy (ironically named Charley) and a job, trying to find where exactly it is I fit in. I’m currently a Marketing Coordinator and although I thank my lucky stars each day that I have a job, I know this is not where I am supposed to be. Over the past year I have developed a love for all things health and fitness related and have truly found my passion. I started my blog as a way to document my new lifestyle and  it now serves as a knowledge base for clean recipes and fitness, and the interaction I have with my readers continues to fuel my passion even more.

I hope that I can continue to inspire and motivate people to live healthier lives by pursuing my goals of breaking into the health and fitness industry, one way or another. Before I go, I’ll leave you with a recipe that I thought was perfect for CEC readers since it is vegan, gluten and lactose free, and well, just downright amazing! These no bake dough balls were inspired by this recipe but I made a few adjustments to make them even cleaner, so go ahead and eat as many as you’d like!

Clean No Bake Dough Balls

Ingredients:

1/3 cup walnuts

1/3 cup almonds

1/3 cup gluten free oats

1/2 tsp cinnamon (Or more if you’re a cinna-holic like me)

1/8 tsp sea salt

1/4 cup sugar free maple syrup

2 tsp vanilla extract

2 tsp unsweetened cocoa powder

1 packet Truvia

Directions:

1. Place all ingredients in food processor and pulse until you have a dough-like consistency.

2. Using hands, roll dough into small balls (I got 6 out of this recipe but feel free to make a double batch if you want more). Warning: your hands will be sticky afterwards!

3. Place dough balls in refrigerator for an hour to harden before serving.

4. Hide them from your boyfriend so that they are not gone when you get home from work the next day. Story of my life!

I love making these balls to have on hand for quick snacking. I haven’t made any in awhile but that should change.

I am addicted to these, but mine don’t have cocoa, they have 70% dark choc chips, no truvia, and I use agave instead of syrup. They are SO good and I only let myself have one day or I would eat the entire batch. In fact, I had my last one yesterday so thanks for reminding me to make more!

These look really good. I’ll be making them minus the chocolate because I’m not the biggest chocolate fan in the world. *gasp* Yes, I know…who doesn’t like chocolate? ;)

How do you get clean sugar-free maple syrup? I thought all sugar-free syrup was sweetened with artificial sweetener. Please let me know if there is a clean product out there because I’d love to try it!!
