things i’m loving this summer

Yes, I am aware it is still spring, but outside it sure feels like summer! This weekend our temperatures were super high at 87 degrees each day. I love the heat, so I say bring it on. The humidity, however, can stay away from me.

I’ve been meaning to do a “what I’m loving” post for a while now and am finally getting around to putting one together.

Udi’s Plain Bagels — Seriously, delicious. I can’t say anything else. I’ve been buying a package a week from Trader Joe’s (they’re $4.99 which is pretty cheap as far as GF goes) and use them for sandwiches or for a nighttime snack with almond butter and bananas. I love them lightly toasted. Super chewy.

Iced Soy Mistos — It sounds a lot fancier than it is. It’s just an iced coffee with half soy. I finally figured out instead of telling them extra soy and having there not be enough, I finally decided to ask them if they do iced soy mistos. Of course they do! Starbuck’s does anything you ask if you walk in there sounding like you know what you’re talking about.

Alexia Sweet Potato Tater Tots — Okay, so they call them “bite sized puffs”, but whatever — they’re tater tots. I found these at Whole Foods the other day and basically squealed with delight. Tater tots? Made with sweet potatoes? Sign me up — for the rest of my life!

Whole Foods Sushi — Why oh why had I never had sushi from Whole Foods before? For $13, I was able to feel like I had picked up takeout from my favorite sushi restaurant. I picked up the snack sushi avocado roll and a vegetable roll with avocado, carrots, and cucumber which is coated in sesame seeds. I was a happy girl on Friday night.

Pineapple — Pineapple is on sale every time I go to the store lately — and for good reason! It’s been so juicy and delicious. I’m one of those crazy people who doesn’t find cutting up pineapple tedious or daunting. Give me a knife, and I’ll go to town! That sounded weird.

Fresh Flowers — Every spring and summer I can’t wait to buy flowers for the kitchen table. I really love buying flowers from Trader Joe’s. They last about two weeks and are super cheap. This week I nabbed some pink Gerber daisies to remind me of our wedding. Our wedding flowers were deep pink Gerber daisies and deep purple hydrangeas.

Amy’s Sonoma Veggie Burgers — I’m typically all about making veggie burgers from scratch, but I have been wanting to try these out! It’s not very often you find a gluten free veggie burger, so I was happy to find these! I’m definitely a fan.

These all look so good, especially that sushi….hello, avocado overload! Lately I am loving pomegranate- they’re a pain to cut open but once those arils are separated, they taste so delicious with plain yogurt!

I need to find those tots!! I’ve been losing fresh flowers too… They brighten up our apartment so much! I’ve been loving my jack rodger flip flops… They are super comfortable but still nice enough to wear to work!

I’ve been loving the warm weather too!

I tried those sweet potato tater tots before & I wasn’t the biggest fan… I thought they were almost a little too sweet. I only tried them that one time, so maybe I should give them another chance!

those puffs are like candy i could only have a few at a time, delishh tho! and costco has these veggies burgers that are good and gluten free just saw them the other day and same like u i always make mine but while its hot out im lazy lol

I love anything by Alexia. Their onion rings are pretty awesome although I don’t think they are GF.

I also love having fresh flowers in the house. It’s something I grew up with and a tradition I try to carry on in my own home. Doesn’t have to be anything fancy … just a small bouquet in the kitchen instantly makes the room a home :)

I’ve gotten back into country music lately. My appreciation for that genre has highs and lows, but I think the warm weather makes me enjoy it more. I’ve also been enjoying soccer. I saw the Champions League final on Saturday, and I’m looking forward to Euro Cup games in the near future.

I have been loving the cool morning work outs that I have been getting since Friday- now that I don’t have to be a school before the sun comes up! They are wonderful!!! …..I did some looking into the book that your pastor was referencing and it sounds AMAZING! I’m going to read it this summer!
Mmmmm, sweet potato thoughts dancing in my head- I’m going to need one for lunch now!

Sweet Potato anything steals my heart! I have been enjoying some hummus w/ veggies, oatmeal (haha–so silly), and some greek yogurt with fresh strawberries! But some pineapple sure does sound yummy too!

Iced soy misto! You have taken an extra step (chugs bitter iced coffee asks for extra soy) out of my summer routine. I thought about getting an iced misto before, but I was like that’s crazy. The point of a misto is the steamed milk, right? Thanks for figuring that out for me. :)

I have been buying myself fresh flowers from the store every single week and I absolutely LOVE it! Having fresh flowers every day to look at just makes me happy and totally worth the extra $10 each week. :)

yum! i just tried those veggie burgers yesterday and couldn’t agree more – they are awesome!

i’ve been loving PB & J on GF crackers lately. I don’t really like raspberries/raspberry flavored things, but for some reason I can’t get enough of this combo with raspberry jam lately!

Tater tots always remind me of living in rez in my first year of college… I seriously ate them every day! They never had a sweet potato kind though. I need to find those! :D

Lately I’m loving this buckwheat, oatmeal, and flax bread that I bought at a vegan/GF bakery. It’s so delicious!

Ohhhhhhhhhhhhh, girl. I’m with you on the sweet potato tots and the pineapple! Those tots are my FAVORITE frozen food item. [even more than ice cream. SERIOUSLY.]

and I may or may not have purchased three full pineapples in the past two weeks. and Nick doesn’t even LIKE pineapple, so I guess what I mean is I may or may not have CONSUMED three full pineapples in the past two weeks. ahem.

Whole Foods sushi is great! I often pick up one of their vegetarian varieties with brown or multigrain rice and it makes the perfect lunch or dinner.

Lately I’ve been seeing mangos on sale at WF for $1 each and I just cant get enough! My fav are the champagne mangos- tart and delicious!

I had Justin’s Maple Almond butter for the first time this weekend, and omg I am in love! I’ve never enjoyed almond butter because it is too dry. But Justin’s knows how to make it correctly. I’ve got a jar in my Amazon queue now :)

Sweet potato tots??! I had no idea these existed either. It’s taking everything within me not to get in the car right now and hunt these down. That sushi looks good, too.

I’m loving all of the local produce that comes with spring/summer, especially asparagus, spinach, artichokes and zucchini. And I’ve been putting lemons in everything.

I am loving mistos and Alexia’s tater tots! My husband likes their onion rings too. :-)

Lately I have been loving cereal (like Kashi shredded wheat!) with milk and Greek yogurt and adding nuts and chia seeds. With the warmer weather, I’ve been getting away from oatmeal.
