This shortened week is honestly flying by. While I’m a little tired from my long weekend with Tina, I can’t complain!

Another Wednesday, another What I Ate Wednesday. Thanks Jenn for hosting!


Spooky Snacks and Healthy Halloween Treats


Breakfast 6:00 AM

1 egg + a ton of egg whites
roasted broccoli
ketchup and nutritional yeast

1/2 udi’s gluten free bagel
shmear of pumpkin
1-2 tbsp. peanut butter
1/2 banana

iced coffee

Lunch  11:15 AM

roasted potato broccoli and white bean soup
apple (the biggest one in the world)


Snack 3:30 PM

raisins and almonds
adora disk

Dinner 6:45 PM

mock chipotle bowl:

cilantro lime rice
refried beans
fajita vegetables

Snack will be something delicious like granola or a spoonful of peanut butter!

I’m most glad that you didn’t comment negatively about your coffee!! :)
I also love the schmear of pumpkin definition. I put a “dollop” of pumpkin in my dinner pancakes tonight. Really, I think it’s more helpful to say that then “2 rounded tbsp” — it gives you freedom to make a mix that you’ll truly enjoy!!

I’ve picked up on your raisins and almonds habit – and I keep mine in the fridge, too! They’re so addicting, and filling, and nutritious, and YUMMY!

That Starbucks looks so good! We don’t have Starbucks in Denmark (I honestly don’t know how I survive!!), but I am going to London in a month and seeing your Starbucks makes me look even more forward to my vacation!! Can’t wait to be drinking coffee from Starbucks all day long :)

I had mine as a snack with a pumpkin bar before my flight and loved every bite. And SO making that soup soon.

When I first read the title, I thought it said “college style” and then I was like… whaaaat? But then I remembered you’re going to school now (how’s that going, btw?) aaaaaand then I read more carefully and felt like a dope ;)

That soup looks amazing!! The weather just started getting icky, so I’ll have to start making soup asap!
I can’t stop eating apples lately, especially honeycrisp. They are SO good this time of year!
