I’m not going to lie – I’m pretty excited about getting to post on a Wednesday morning right now. Mainly because that means I got to sit on my couch on Tuesday night to write it. Pure bliss, I tell you – Pure bliss.

I’m ready to get down to business today. I missed WIAW last week, so I’m excited to get back into it this week. I must warn you ahead of time – my dinner looks disgusting, but it was gooooood.

Some more apple. I’ve been buying the pink ladies from Trader Joe’s, and they have been superb!  PS – That is a recycled picture!

Lunch – 11:30 AM

Tuesdays and Thursdays are “out to lunch days”, and we went to a place called Buona Beef. They have a gluten free flatbread there with this great Portobello sandwich. It has artichokes, and I love getting it whenever we go there. I always get a side salad with it.

Snack – 2:00 PM

Looks gross, right? Trust me on this one. I made a lentil sloppy joe recipe, and it was DELICIOUS! I’ll share more later, but I’m glad I finally made this. It’s only been in the back of my mind for years. YEARS!! On the side we had roasted cauliflower.

Snack – TBD

I am going to have one though! Last night (Monday night) was the first night I slept through in a long time, and I think it’s because I ate a snack. I hadn’t been wanting one after dinner, but I guess I have to eat one!

Now that I’m seeing this, I didn’t eat too many green things yesterday. Time to get in some greens today!

Sometimes the best food looks the least appealing- like Indian food! I love it but can never snap a decent pic.
I’m intrigued by the lentil joes! Do tell… :)

I’ve been loving pink lady apples lately too! I don’t get much of a lunch break at work so I have to snack while I’m teaching (so professional, right?), and apples are the easiest thing to grab!

I need to look out for that KIND bar flavor- yum! Best thing I ate yesterday was (in typical blogger fashion) was a salad with teriyaki chicken, feta, chickpeas, grilled vegetables and an amazing honey mustard dressing….it just really hit the spot!

Some of the best food looks a little icky! :) Roasted cauliflower is a shiz dizzle (not sure were that came from….I’ve been watching too much Fresh Prince of Bel Air clearly! :) )

Your lunch sounds amazing. I love when restaurants have vegetarian sandwich options that are something other than a veggie burger. Don’t get me wrong, I love veggie burgers, but I eat them a lot when I dine out.

Yes, your dinner doesn’t look the greatest ;) , but I love lentils so it sounds amazing. I cannot wait to see the recipe :) .

I just bought Pink Lady Apples from TJ’s and thought the same thing! Pink Lady are my favorite too so I’ve been loving them!

And that roasted cauliflower reminds me of our date from The Girl and The Goat which I think we need to repeat. OMG, that cauliflower dish….I die!!!

I love the KIND bars, althought I have never had the PB and strawberry, I bet its tasty! The best thing I had yesterday was homemade pizza!

I make lentil sloppy joes a lot, they’re SOOOOO good. If you haven’t yet you should try the lentil “meatloaf” recipe from Oh She Glows. SO good.

I really need to experiment with lentils one of these days… I’ve never even had them before! Crazy, right? That KIND bar sounds yummy – I’ve never tried that one before. Best thing I ate yesterday was probably my wrap for lunch. I can’t get enough of those things!

Those tri-color tortilla chips from Trader Joe’s are my favorite chips EVER. I’ve never tried their horseradish hummus, but I always get their Meditarranean White Bean Hummus…I could pretty much eat the entire tub of it in one sitting, it’s that good!

I grew up eating Manwich sloppy joes on soft, white hamburger buns, so I’m always a little bit wary about the lentil versions. I should probably get over my irrational sloppy joe fear and just try them already.

I’ve never tried lentil sloppy joe’s….we LOVE lentil tacos (even my carnivore husband), though, so we’ll give it a try. (No, your photo did not look gross! ☺)

Love your breakfast, I have that a lot too. When I’m craving eggs and fruit and peanut butter..love breakfast food! And I often find the same thing after I write a WIAW post…I’ll look through it and be like hmm, where are the veggies? haha guess I should eat more tomorrow!

Snobby joes! Woot! I’ve made those on a few occasions and they’re definitely ugly but good. And I don’t even think I can fall asleep without having a snack before bed, and if I miraculously manage that, you can bet that my stomach is waking me up at 2:36 AM and forcing me to blindly make my way to the kitchen to get a snack – true story.

Your Dinner sounds superb!! I always find the least visually pleasing items are definitely the best tasting. It’s annoying, but oh well;)
Honeycrisp and pink ladies are my favorite apples of all time. Yum.
Oh man, I seriously can’t go to bed without a night snack. I wake up waaay too hungry otherwise. It’s just not pretty for anyone.

Pink lady’s are the best apples, by far! Lentils are not a pretty food, but they are delicious. I made a batch not too long ago to have on hand. I’ve been mixing them into soup for the protein!

The best thing I had was a tie between a roasted chicken breast on top of barley and shitake mushrooms and an apple compote topped with homemade maple pecan ice cream for dessert. I got to enjoy this with my family last night before my surgery this morning(which went well- using the hospital wifi to catch up on blogs I follow). I’m the queen of looks disgusting but tastes like heaven haha. My brother confused a ground chicken black bean patty I made the other night for a burnt personal pizza. No big deal.

I’ve been wanting to try making lentil sloppy Joes too! I think I saw a recipe on Edible Perspective ages ago that I wanted to make!

The best thing I ate yesterday was lentil soup from my freezer. I made it months ago and forgot how good it was!
