I’m not going to lie – I’m pretty excited about getting to post on a Wednesday morning right now. Mainly because that means I got to sit on my couch on Tuesday night to write it. Pure bliss, I tell you – Pure bliss.
I’m ready to get down to business today. I missed WIAW last week, so I’m excited to get back into it this week. I must warn you ahead of time – my dinner looks disgusting, but it was gooooood.
Breakfast – 6:00 AM
2 eggs, scrambled
udi’s gluten free bread with pb & banana slices
Snack – 9:15 AM
Some more apple. I’ve been buying the pink ladies from Trader Joe’s, and they have been superb! PS – That is a recycled picture!
Lunch – 11:30 AM
Tuesdays and Thursdays are “out to lunch days”, and we went to a place called Buona Beef. They have a gluten free flatbread there with this great Portobello sandwich. It has artichokes, and I love getting it whenever we go there. I always get a side salad with it.
Snack – 2:00 PM
Peanut butter and strawberry KIND bar – so good!
Snack – 4:15 PM
I was still hungry when I got home, so I snacked on a few chips and hummus.
Dinner – 6:00 PM
Looks gross, right? Trust me on this one. I made a lentil sloppy joe recipe, and it was DELICIOUS! I’ll share more later, but I’m glad I finally made this. It’s only been in the back of my mind for years. YEARS!! On the side we had roasted cauliflower.
Snack – TBD
I am going to have one though! Last night (Monday night) was the first night I slept through in a long time, and I think it’s because I ate a snack. I hadn’t been wanting one after dinner, but I guess I have to eat one!
Now that I’m seeing this, I didn’t eat too many green things yesterday. Time to get in some greens today!
