Great news lovies! I completed my 10 miles! In all actuality, it was 9.51, which I found out AFTER I ran it, but that pesky little half mile can bite me. :) I completed it in 1:27, which was approximately a 9 minute mile. I was very surprised at how relatively easy it was for me to complete it. Looks like I’m doing that half marathon in September! Sign me up!

My soggy shoes gave me horrible blisters, in case you were wondering. Around mile 6 or 7, my feet became really heavy because I wasn’t setting them down properly due to the pain from my blisters. I just kept thinking “pain is temporary” and tried not to think about it.

Right when I was done running, I got set out to make my post-run fuel. It was something I had been dreaming about the entire run! I made a banana scramble courtesy of Ashley (go check her out!). It was delicious.

I don’t think I had enough oats in mine because it wouldn’t set completely, and was kind of smushy. It sure didn’t bother me though! I had it on top of a piece of millet bread and strawberry preserves. I kind of modified what I put into the scramble as well. instead of peanut butter, I put some Cashmond (cashew/almond) butter in there. I also added raisins to the mix!

After I wolfed that down, my stomach was so full. It was such a filling snack. I then set out to make guacamole for the Jimmy Buffett concert I would be attending later in the day!

This is the same guacamole I have been making all week, just on a larger scale. In the bowl went:

  • 3.5 avocadoes, smashed (you’ll want it to have some chunks)
  • 2 roma tomatoes
  • 1/2 cup chopped purple onion
  • splash of lemon juice
  • salt, pepper, and crushed red pepper to taste

After a while, I wasn’t really hungry, but knew I had to keep on eating due to my long run in the morning. I turned over to leftovers to do their job!

I had a bowl of rice/veggies/hummus and a plate of some leftover tofu with ketchup.

It totally hit the spot, wasn’t too filling, and left me ready to eat the night away before Jimmy Buffett.

After lunch, I was craving something sweet, so I ate a fig.

We headed over to the Jimmy Buffett concert around 3, which is kind of late in Parrothead time to be getting to a concert. I didn’t mind though because it was HOT HOT HOT! When we got there, I got into a tiff with the parking attendant (correction: I yelled at the parking attendant for a couple of minutes) about how they weren’t parking very well and we would have no room to tailgate. I’m usually not that fiesty, but.. meh. I need some room!

My dad came prepared with his tiny propane grill which he snagged for $4 at Jewel a couple of years ago.

I got to work on the chips and guacamole. I think I ate about 1/2 of that tub of guacamole. A girl’s gotta do what a girl’s gotta do sometimes. The guacamole was a hit.

After a while, we were all boiling and needed to get up and walk around, so we explored a bit to see what kind of shenanigans people were up to. If you’ve never been to a Jimmy Buffett concert before, this is only a small taste of what goes on there. People are so crazy - it is hilarious to watch!

When we got back from exploring, my dad heated up our grill and started cooking! He thought of everything (except plates which we had to ask another tailgater for). He brought a warming station so he could put the potatoes and corn into while everything else was cooking.

I had a black bean burger lettuce wrap, some potatoes, and asparagus.

The potatoes are kind of hidden underneath there, but I went back for more!

After we cleaned up dinner, we played a game of bags before we went into the show. I rocked - but it might have something to do with the fact that the bags were really close together due to our lack of space. :)

The concert was a lot of fun, but my legs were super tired the entire time. I ended up sitting for a while because my poor legs just couldn’t take it! We sat in the parking lot for a while (I fell asleep - sorry husband), and finally made it home around 12:30. That is far too late for the two of us. We’re secretly like an old couple, who likes to go to bed at 10 p.m. every night regardless of the situation. Don’t judge - I like my sleep.

When I woke up this morning, I was a) mad that it was 6:30 and b) lacking in the appetite department.

I ate anyways, and decided my lack of appetite probably had something to do with the last two pieces of gluten free pizza and raisins/almonds I ate when we got home last night. I was STARVING when we got home - I needed something!

Regardless, I am enjoying the bowl below…

and drinking a heck ton of this coffee this morning to wake me up so I can make it at least through church before I want to take a nap!

Question: What is a tradition you and your family partake in every year? I would have to say that Jimmy Buffett is a family tradition - I have been going to those concerts with my parents since I was 14.
