Let’s play a little game….

Raise your hand if …. you think your alarm clock beeping at 5:30 a.m. is the most annoying sound in the world? (Raises hand)

Raise your hand if…. you forgot how draining WORKING actually was? (Raises hand)

Raise your hand if…. you missed your extremely leisurely breakfasts? (Raises hand)

Okay, so that’s enough of this game, but as you can see, getting back into school mode is really difficult for me. I enjoyed getting up over the summer, enjoying my breakfast, blogging, and drinking coffee for about an HOUR every morning. ::sigh:: Some things are just too good to be true.

Just a sidenote, thanks for your feedback on the photos. It was about half and half, but I am starting to play around with editing my photos to make them look better. I’ve got a lot of work to do! :)

Another sidenote: I signed up for my half marathon for September 12!

It was the opening day in my district today, which means meetings all day.

I packed a Larabar for some mid-morning nourishment. I am glad I brought it too! I was famished by the time 10 a.m. came around.

A bunch of my colleagues went out for lunch, but I had a lunch already in the fridge from Wednesday, so I decided to stay back, get some work done, and not spend any money.

were you ever the "student of the week"? This is my take on it, since I have a beach theme. Each student gets a chance to be the "star surfer". I'm up first!

Lunch was delicious.. and extremely satisfying. It consisted of leftover quinoa casserole….

i think beet juice looks AWESOME. The color is amazing.

and a few green grapes (seedless!) snagged from the teacher’s lounge.

Now, I must caution you.. if you eat beets and are wearing white pants (or white anything) BE CAREFUL! Luckily my reputation as “Messy Chelsey” didn’t make an appearance, but seriously… those babies could be dangerous!

I was a bad blogger this afternoon. I had meetings until 3, and by the time I left, my stomach was honestly eating itself. Before I gnawed off my arm, I wolfed down slowly enjoyed at a pace in which my food would digest comfortably an apple and carrots. Too bad that wasn’t enough. What I would have given for some almonds at that point!!!!

The husband was very surprised when I called on the way home and said, “you’re on your own for dinner”. If I could have seen his face when I said this, I’m sure it would have been a jaw dropping “but what am i supposed to do then?” face. That boy needs to learn how to cook…. just a little. I didn’t make ithome until after 5, still had to run/lift, and just did not feel like cooking. He joyously made a pizza, but when I got home, I was in need of some serious greens. I was CRAVING the biggest salad known to man!

Honestly, don’t be fooled, this bowl is huge. I think it held about 5-6 cups of salad. It was baby spinach, cucumber, a whole tomato, aovcado, red pepper, and honey mustard dressing. I also had brussel sprouts but didn’t take a picture of them (again, half were gone before I even thought about it). I’m glad I don’t have a papparazzi crew following me and snapping pictures of me while I eat because this was not pretty. The end result was total domination.

I told the husband I need to start meal planning so I can be a more effecient grocery shopper and meal maker on days like today. So….. I would like YOU to make my menu next week! Please leave me your favorite dish (which can be made into a vegan/gluten free dish if modified) and I will pick a couple to feature on my blog next week! I love all things veggie… bring on the greens.

I try my best to meal-plan- I’ve done a few posts on it. It really helps you save money and be far less stressed about dinner time- especially when you’re back to working full time!

Since you’ve already made my epic eggplant, I vote you try out the Creamy Basil Cashew Pesto I just posted. It’s, in a word, sublime!

Meal planning is so convenient because there’s no decision making, you already know what to make ahead of time!

I suggest barley or quinoa stuffed red peppers or tomatoes. There’s quite a bit of mix and matching you can do to suite just the way you like it!!

I definitely need to try freezing my Larabars! I’ve had them in the microwave, but never frozen!

I -need- my leisurely mornings. The earliest I have to leave the house when school starts is about 7:20, so I make sure to wake up extra early so I can take my sweet time :D That being said, I really hate the sound of an alarm clock waking me up, so I guess I’m pretty lucky in that I wake up naturally around 5:30 or 6.

I used to meal plan a lot, but then I discovered that I oftentimes didn’t feel like eating what I planned on eating, so I stopped and just try to go with the flow now. I might have to go back to planning when school starts again though, to make things less hectic.

My husband can’t cook a single thing except a boiled egg. If I told him he was on his own for dinner he’d go into a panic and call his mom. Then I’d really be in trouble. :)

i wish we would meal plan..we always talk about it..but we never do it. darn that. yeah…i’m totally going to miss the summer too!!!! :(
how bout some bean tacos made with corn tortillas, some sorta yummy beans, LOTs of…avocado :) , mango salsa..sry that’s just what i had for dinner (with turkey) and i want the world to know it was amazing. you could maybe even grill the taco..ooo..wonder what that would do!?!?!
i saw spegheti made with spegheti squash and lentils for the ”meat” once.
if i think of anything or find anything exciting…i’ll let ya know!

I remember student of the week! Hehe. It was always so much fun, because the teacher announced it with a bunch of fanfare and we got stickers and candy. :D

Basic stir-fries with tofu and brown rice are good. I also like combinations of beans/chickpeas with sauteed kale and rice, or quinoa. And steamed veggies with hummus is quick and easy, too. Roasted (or microwaved) sweet potatoes with a side of veggies. Or, loaded baked potatoes, with chili on top or something. :D Hope I helped!

I’ve seen a lot of great soups on blogs lately….Minestrone soup, Apple Curry Soup, and I’ve had a real hankering for chili (even though that’s not really a soup..) lately, so maybe one of those? All of them are prob. suited to a crock pot :D

I always meal plan….it keeps me in line at the grocery store haha

I’ve totally been enjoying my leisurely mornings this summer too. I’m not looking forward to going back to university and having 8:30 classes again! But I guess I can’t complain compared to your 5:30 waking time. That must be brutal!

I wish I put more effort into meal planning too. I would love to make creative dinners, but when it gets to dinner time I’m so hungry that I just want to throw everything in a pan and make a stir fry.

Groan, I hate meal planning but it’s so helpful later in the week when you don’t want to spend time thinking up something to make. Stirfrys are my go to meals, you toss anything and everything in and it never fails to come out good! Also anything that combines veggies and millet, quinoa or rice is good in my book!

That beet juice is lover-ly and you’re making me think I should give beets a chance again! It’s been forever…..
So I think you and I are a couple hours from each other (maybe a little less). I’m near Fox Lake, which is about an hour north of Chicago. Would be fun to meet up sometime, though! Maybe we should try to throw together a local(ish) blogger meetup. Would be a blast!

I try my best to meal plan, but it ever goes as far as 3 days in advance…lol.

Big salads are yummy! So nutritious and filling ;)
