Did you know that it is okay to repeat meals? It’s true - I did it twice today with no regrets. Overnight oats a la mode were up first this morning. I can honestly say that they were as good if not BETTER than yesterday. Do you see all that syrupy goodness? It is definitely just the peach juice at its finest.

The other meal I repeated was “hello fall” butternut squash from last night. I am loving on this recipe in a big way. It made me so happy at lunch time.

could i have eaten any more orange with my lunch?

Did you know that I might turn orange from all the food I have been eating? Peaches, squash, carrots… I may have a tan year round if I keep it up.

Did you know… that your mood can affect others in a positive or negative way? I felt like Cesar Millan (the Dog Whisperer) today, except I was the Kid Whisperer. I was feeling really rushed and crazed this morning - guess who else was. My class! My mood totally affected the way their day was going. So mid-morning, I took a deep breath, got over the fact that I am not Superwoman (okay, really I am) and cannot get everything accomplished that I want to in one day. Once my mood calmed down, so did my class’. It made for a great afternoon.

Enough Said.

Creamy “Alfredo” Sauce

  • 1/2 cup hummus of choice
  • 1 tbsp lemon juice
  • 1/4 cup water
  • 2 cloves garlic, minced
  • black pepper, garlic, salt, and crushed red pepper to taste

Place all ingredients in a saucepan and whisk until smooth. Simmer unti heated through.

This dinner was much more labor intesive than it looks - mainly because I made two pastas (rice for me, wheat for him), roasted my own red pepper, and was making an apple crisp simultaneously (I’m going to leave you in the dark on that one until tomorrow). It was worth the sweat and dishes that piled up really quickly. It was delicious.

Alongside my pasta I made a simple salad. Artichoke, cucumber, tomato and onion - seasoned with balsamic, olive oil, pepper, and garlic.

Did you know.. that miracles really do happen every day? Tonight the husband listened to me. Laugh if you want, but I call this one small step for Chelsey and one giant leap for wives everywhere. I repeatedly told him over the summer that I would need more help once I went back to work. Tonight he did the dishes AND helped me vaccuum the hardwood floors. What. A. Guy!

Did you know… my laundry is capable of reproducing itself?

seriously?

I don’t know what happened - I go out of town for one weekend, and my housework piles up like you would not believe. ::sigh::

And yes, those are all clean… and yes, I just folded them (in case you were wondering if I usually put my dirty clothes on my couch Mom).

Did you know… that someday I will catch up on everyone else’s blogs? I’m not sure today will be the day… maybe tomorrow.

Two food facts that I had no idea about till now:

1. Eggplants are actually fruits, and classified botanically as berries.

2. Cherries are a member of the rose family.

Mmm that “alfredo” looks amazing!! I used to not like alfredo but I bet that kind wouldn’t hurt my stomach so I’d like it! And hmm… did you know the human head weighs 8 pounds?! (Jerry Maguire humor!)

That alfredo sauce looks ridiculously good and ridiculously easy.. I want to attempt it! There is a high possibility that it shall be making an appearance in my dinner tonight.

Did you know that sweet potatoes and yams are the same thing? Well, if you’re in America. Real yams look NOTHING like the “yams” we have here in Canada and the US.

Did you know, I’m making your alfredo sauce as soon as I can? Also, I made your cabbage slow cooker meal weeks ago and it was awesome!!! Totally forgot to blog about it but I will soon!

did you know that elephants are the only animals that can’t jump?? crazy!
i love love love making a version of that “alfredo” sauce. i use it for salad dressings, pasta, quinoa, and pretty much everything. because, you know, life is better when its covered in hummus. :)

I just found your recipe for the alfredo sauce and made some. I didn’t have any garlic, but used some “garlic & herb” spice I had. This turned out really good! It doesn’t taste like alfredo, but does have a “creamy” vibe. I might even be able to trick my boyfriend into eating this, lol! Thanks for the recipe!
