I. Don’t. Like. To. Be. Rushed.

There. I said it!  Rushing other people? I’m a champ at that. But, if you get in my way and try to hurry me along, you may have the same reaction as getting in the middle of my love for pumpkin.

It all started when I was in the middle of making my breakfast. The husband came up to me with that pesky little loan application in hand and told me I had to fill it out immediately. I’m sorry, what? I’m in the middle of making my breakfast. You best get away from me.

Without fail, I was filling out that loan application for the next 10 minutes. Yes, that 10 minutes predicted the rest of my day. Am I kidding? Absolutely not.

When I finally got to sit down for breakfast, my previously warm and gooey peaches were just lukewarm. Although when I look at this picture, I pretend they were piping hot, only I know the sad truth.

 

The husband ate breakfast with me today — that is something we like to avoid. We’re not the kind of couple that pretends we enjoy spending every second of the day together because well, we don’t. We especially do not enjoy talking to each other in the morning. Don’t even tell me you and your significant other enjoy speaking to each other when you’re groggy, tired, and in need of a cup of coffee. I won’t believe you — you will definitely be lying to me. After work? After sleeping in on Saturdays? Sure, I’ll take it. 5:45 AM on a Wednesday? That’s a no go.

So, it was only natural for me to be in very congested traffic this morning. There was no weaving in an out of cars for this girl — there was, however, a photography fairy in my car who enjoyed my frustration (photography fairy = me. But, I was trying to get around the Momma getting mad at me. My eyes ARE on the road!).

 

This morning before school I had a meeting which meant I did not have proper time to get ready for my day of teaching. What’s that you say? I was rushed? Why yes, yes I was! Being rushed in the morning before a day of teaching does not make for a good day of work. I felt frazzled all morning, especially because Wednesdays are my day where I have the least amount of plan time. My kids were especially chatty today and when I approached them about it, one of my kids told me to tell them “zip your lip onion dip” whenever they got that way. I had to laugh at that. Of course, I didn’t say that though.

Lunch was more Loaded Cabbage Souphowever, it was prettier in this picture from last night.

 

I also had a whole carrot — seriously, if this doesn’t scream “I didn’t have time to pack my lunch”, I don’t know what does. Who am I, Bugs Bunny? Goodness gracious.

 

This carrot was enjoyed with some Simple Garlic Hummus.

This afternoon was a little bit better in the being rushed department. I finally breathed at 3 pm when the day was over. I gathered my thoughts, made some sub plans because I am taking the afternoon off tomorrow (this was previously planned, not happening as a result of today — ha!), and ate a delicious and huge honeycrisp apple.

 

On the way home I ate some raisins and almonds. I tried to find an old picture of some, but then got lazy and stopped.

When I got home, I just wanted to take my time.. with everything.

 

I started taking pictures, planned dinner, and was having such a good time not being rushed.

 

Until I saw this guy.

I don’t know what it is about my house, but I swear spiders reproduce themselves by the 100’s. Yes, that spider was huge. Yes, I screamed like a little girl and got the heebie jeebies.

I grabbed a plastic cup, trapped the bugger, and quickly threw him outside. It took a lot of courage on my part. I hate (did I say HATE?) spiders.

After that, I went back to my relaxing evening. I set out to make Angela’s Maple Butternut Squash and Apple Casserole — well, minus the apple. Because I only have one left and I want it for lunch tomorrow.

 

I had high hopes for this casserole and it completely delivered.

This was absolutely to die for — I pretty much doused it in cinnamon. The husband liked it too!

I was especially happy that there are about 2 more meals left over for me to have!

 

On the side, I had a really boring green salad. I spieced it up with some artichoke spread and a homemade balsamic vinaigrette (forgot to picture — sorry!)

  

For the rest of the night, I am not doing anything. I’m sitting my behind down on the couch, watching mindless hilarious television, and eating snacks. Because that’s what I do when I want to be relaxed and not rushed. What a ridiculous day…. Karma sucks.
