I know I threw you all off with the double duty posting today. For this, I am sorry. However, I know I am not sorry for posting the Roasted Toasted Dilly Chickpeas recipe. Because well, they’re delicious.
I made it out of bed this morning at 4:30 — blah. I slept horribly last night. I wasn’t really that tired when I went to sleep, which never turns out well. Unless I am completely 100% exhausted, I should just stay up until I am tired. I vaguely remember yelling at the husband for waking me up when he came to bed — although I was apparently sprawled across the entire bed. And somehow, throughout the course of the night, the Husband ended up with my pillow and I ended up with no pillow.
Nothing a good workout and a bowl of oats couldn’t fix!
That apple looks delicious right? It blew. No, seriously… I’m thinking about gong back to the farmer’s market to yell at the girl who told me they were crisp. I’m sorry, but they were the least crisp apples I have ever eaten. Thanks lady.
When I got to school today, I found the funniest sign had been put into our parking lot.
I have a few problems with this sign.
1) Of course children are breathing. Who was assuming they weren’t?
2) Are adults breathing not important enough to make the sign?
For my morning snack today, I busted out another Nuts Online sample…
Dried Fruit Cocktail! I was really intrigued with this. It certainly was colorful!
And I also had the most fun trying to decide which fruits I was eating. It was really good, but kind of reminded me of a snack you could feed a toddler. So, if there are any mommies out there, this would be great for your kids! I can also see myself wanting to put it on top of oats for some extra crunch or in cereal at night for my snack. Overall, I really enjoyed it. Stay tuned for some more Nuts Online action at the end of this post!
Lunch was leftover Veganized Mac ‘n Cheese — it surely did not disappoint again.
I also had the rest of that really bad apple. It definitely was not picture worthy. I’m pretty sure the whole I was eating it, I was thinking, “Why am I eating this?” However, I did eat it, so I digress.
Remember how I was ranting about my contacts? I’m pretty sure my contacts were not the issue. Yes, my contacts have been ripping more than usual, but I’m pretty sure I have a scratch on my cornea. I could not even keep my right eye open today. It was tearing up and was so bloodshot that a few of my students even pointed it out to me. The second I got home, I took them out, checked for rips (none), and put on my glasses. Almost instantly, the pain stopped. I think the contacts are irritating my eye/the tear more. I was going to go to the eye doctor, but I figured all he would tell me is to keep my contacts out for a few days to let my eye heal. I don’t need to waste an hour of my life for him to tell me that. I am mad though — I think we all know how I feel about wearing my glasses.
I also had to go make a special purchase after school today….
Don’t even hate me for loving Taylor Swift. I am such a teeny bopper when it comes to her music — I love it. With that being said, if you feel the need to redirect yourself to a different blog at this time, I totally understand.
When it came to dinnertime, the picture below really made me hate how dark it gets outside at 6:00 now.
Which is why I love the ability to lighten photos on the computer! Much better.
A huge salad topped with Angela’s Better than Bottled Balsamic and a heaping pile of hummus!
I also made a huge pot of veggie soup for dinner tonight. There’s really no science to my soup making when it comes to veggie soup. My method is as followed:
- Heat Dutch oven with a tbsp or two of olive oil.
- Throw onions and garlic into the pot to sautee.
- Pour in veggie broth when it’s translucent
- Add remaining veggies & grains/protein(whatever veggies you have on hand will do). Tonight’s mix was:
- carrots, broccoli, red pepper, brussels sprouts, mushrooms, lentils - Season, simmer, enjoy!
Be prepared to see a lot of soup in my future. I basically exist off of it in the winter time. Although today it was 80 degrees? What is up with this weather Chicago? I love big pots of soup because it makes for easy lunches during the week!

I am really interested in trying those chocolate covered sunflower seeds. I love chocolate covered peanuts/almonds. Never thought of seeds….I forsee an order in the future!
Eek. your eye issue made me cringe. If it’s still bothering you tomorrow I’d consider popping into your eye doc. They can give you some steroid drops that will make your eye feel better quickly. I had the same issue last fall and it turned out to be a corneal ulcer…which can lead to blindness if you let it go

And I don’t mind Taylor Swift so much. I’m just a little annoyed of how on her newer commercials she’s basically just bragging about how she’s exploiting all her past relationships.
If only her tunes weren’t so damn catchy…

I HATE wearing my glasses but my contacts drive me crazy too. And when the weather is dry I can barely see because my contacts get so dry. Naturally this is a problem since I basically live in a desert! I hope your eyes feel better today!

I loved Taylor Swifts previous album. My co-worker got us tickets to her concert last year and I didn’t know most of Taylor’s songs so she made me a CD and I was hooked. I memorized each song and sang the whole concert with her.
Surprised guest that night at the Staples Center was John Meyer. He sang a duet with her and he sang the part “I’m not a princess….” lol.
