You want the dirty truth? I’ll give it to you straight.
The Dirty Truth: I played hooky from school today.
In fact, when I woke up this morning, my eyes were crusted over and when I could open them, they were bright red… EVERYWHERE! I immediately freaked out and contemplated calling in sick or not. I mulled it over while I was eating breakfast, but eventually decided it would be for the best. Working in a school, you don’t want to take any chances with any contagious infections. If I was to have pink eye, I would not want to spread it to my kiddos!
The Dirty Truth: I fell in love with Artisana Coconut Butter today. They sent me samples a while ago before my giveaway, remember? I’ve been holding out on using this package for the perfect time. Someone better keep me away from Whole Foods so I don’t blow my spending money on Coconut Butter.
The Dirty Truth: We had a tornado watch in Chicago until 11 a.m. this morning. It was a torrential downpour for the majority of the morning.
The Dirty Truth: I enjoyed lounging around in my slippers where it was nice and dry until the eye doctor was open.
The Dirty Truth: I have an infection in my eyes. The eye doctor says she doesn’t think it’s pink eye because my eyes are not that mucous’y (is that a word?), but I needed some drops. I can go back to school tomorrow… with my glasses on. No contacts until Friday when I go back. Uggggh.
The Dirty Truth: I took advantage of the fact I was not at work today and met Mommasita for an early lunch at Cooper’s Hawk. They have a fabulous gluten free menu, which is awesome for a gluten free mommy and daughter! They even brought us out bread to start! These are the rolls they make their gluten free sandwiches on, but I happily ate some of it! When I say some, I mean almost all by the way.
I also had the Chopped Napa Chicken Salad – minus the chicken… and cheese. But extra avocado please!
The Dirty Truth: My guest room looked like this when I got home today. In a fit of rage, I went looking for the Husband demanding what he had done.
Okay, I’m totally joking. We brought in all of our winter clothes the other day and well, things kind of got out of hand. A major organization overhaul was in store for me this afternoon.
After an hour of hard work, it was complete.
Yes, I am totally aware that we need to decorate this room still. We’re working on it, okay? I am also going to pretend like my laptop was in there for a reason other than to listen to Taylor Swift’s new CD on repeat.
The Dirty Truth: If I have free time, I spend money. It’s just the way my brain works. Day off of work unexpectedly? Go buy a lamp!
And a clock!
The Dirty Truth: After a late afternoon workout, I had a snack.
Okay, that really wasn’t the dirty truth. The dirty truth was that I had that x 3-4. I just can’t get enough hummus into my system…. that and pumpkin. Maybe someone should come up with a pumpkin hummus? You’re right. I took that too far… maybe.
The Dirty Truth: While I have seemingly perfected the gluten free bread loaf (see below), it blows my mind that I cannot make a whole wheat sandwich loaf in the bread machine. What gives?
After my bread cools, I always slice it, bag it, and stick it in the freezer! This helps to keep the gluten free breads fresh!
The Dirty Truth: After eating such a large snack so late in the afternoon, I wasn’t really hungry for dinner. Actually, I was… but for something in particular. An entire pan of roasted veggies. During consumption I kept thinking to myself, “Is it wrong that I am eating this entire pan all by myself?” To which I told myself to shut up, and finished it off.
By the way, I think I went back for a full plate after this. My belly is quite content… totally not full though (if you’re wondering “how?!?!”, I don’t know either) – snack time later!
The Dirty Truth: I tried a new food today: buckwheat! Which surprisingly isn’t wheat at all. It’s actually derived from a fruit. I also had no idea how to cook it. So I just winged it… and I can honestly say I have no idea what to tell you to do. But it turned out great!
I only cooked a little bit because I wasn’t sure if I would like it. The texture was really chewy, and it tasted pretty nutty. It actually tasted like I was eating a corn tortilla.
The Dirty Truth: After realizing it tasted like a corn tortilla, I freaked out and wondered it it was corn free. After a quick Google search, my fears were subsided.

If you have to stay home from school because of an illness, an eye infection is the way to go! Sounds like you have a fun day-shopping, dinner with mom-perfect!

A dirty truth - I added in my 6th meal right after dinner since we were eating later tonight than the norm!! Oh well so much for waiting 2-3 hours.

Ech, I hope your eye gets better! At least it’s not pink eye. Having pink eye once is one time to many. The only advantage to it is scaring people you work with away from you, so they don’t want you there anyway!

And if it makes you feel any better - I can’t make a (pretty)loaf of bread in my bread maker, either. It always tastes fine, but falls in the process. What gives?!

I spend money when I’m bored too. It’s the best way to get your mind off of anything.
And coconut butter = the best thing ever. I store it in the fridge so that it’s too hard for me to take random spoonfuls, because otherwise I’d eat all $16 worth of in about a week.
Totally agree about the coconut butter. The sample pack was such a tease. I may have licked it clean this morning - literally.

I love when restaurants have g-free stuff! I think that all places should offer some options, besides a salad!
Not so much a dirty truth, but one that might help you with one - it’s super easy to make coconut butter (and super cheap!). Just toss a few cups of dried, shredded coconut in the food processor and let it go for a while (10 minutes-ish). It’s not QUITE as smooth as store-bought, but at least I’ll be able to afford groceries

Okay, so the first time around, I totally read that first sentence incorrectly if you know what I mean. I was kind of offended until I got it.
Is it weird that I have a fear of getting an eye infection and having to wear my glasses to work? I guess I really prefer my face sans-eyewear. Go figure.

Dirty truth: during my fitness testing class yesterday I did a 30 second wingate test on the bike (pedal as fast as you can with 7.5% of your body weight as resistance) and my quad were like jello. I thought I was in great shape but that put me in my place for sure!
Dirty truth? I went out to breakfast this morning then ordered lunch to go before leaving. My food creative juices are not flowing this week

I’ve already been scheming the pumpkin hummus in my brain all day after I wrote that! I’m planning on concocting something this weekend.
