GO GO GO GO GO!

November 4, 2010

My gas tank is about running on E right now. It’s sad news because I still have about 10 thousand things to do tonight, including making the husband’s lunch (which he complained this morning that “his lunch had no fruit in it yesterday”. I don’t even know him anymore.).

So, this is going to be quick & to the point unless my brain takes me in another direction while I’m writing.

Breakfast = standard. Do I even have to tell you what’s in it anymore? I want you to guess. What did I have for breakfast? :)

My Thursday morning = crazy, as always. During our library lesson time, the librarian did a lesson on internet safety for my kids. I was so surprised at the things they are allowed to do (unsupervised internet, computers in rooms, unlimited pictures & texting — umm my kids are going to think I’m the lamest when I have them because that’s so not happening!)

I have been making a conscious effort to try and get more protein into my diet lately (well, starting today) in more forms other than hummus & nuts. So, I packed along one of the Vega Shake & Go packets to quick throw in a cup of water (which is what the package directions says to do).

Ew. Seriously, I am not a fan of this stuff just with water. It needs to be mixed into a smoothie for me to enjoy it. However, I’m probably just going to force it down until I begin to kind of tolerate it because that’s 11 grams of protein & I need it!

As part of my lunch today, I had a fugi apple & packed some Nutmeric to go along with it.

Another “ew” — this is a savory spread — not to be used with sweet fruit.

This is how I felt about the entire situation.

Luckily, I had packed a sweet potato, chopped veggies & hummus as well.

And it was a good thing my sweet potato tasted okay with my Nutmeric.

Can someone explain to me why my hummus tasted good with my apple instead of my sweet potato & why my nutmeric tasted good with my sweet potato instead of my apple? Craziness.

After school, I hightailed my behind out of there to run home & prep a dinner for my mom & me. I was going over there to get my hair done & promised her a dinner.

I made a quinoa casserole, inspired by Caitlin — the only thing I changed was instead of the broccoli I had cauliflower & zucchini. I also had flax eggs instead of real eggs. I added some Mexican spices as well. The result? Delicious.

I would tell you that I have enough energy to get the pictures of my dinner off of my phone but that’s a total lie. I’m zonked & really don’t want to put forth the effort. Deal with it.

I also had to take my niece & nephew along with me as my sister & BIL had parent/teacher conferences tonight. I love them to death, but I am always ready for bed when they go home!

Another good piece of news? My first CSA box came today! It was full of carrots, bok choy (yesssss!!!), apples, napa cabbage, greens, & acorn squash. I am PUMMPPPPEEED! Expect to see Bok Choy tomorrow for sure.

I’m on a roll & I can’t stop now — gotta go!

I know exactly what you mean about running on E, this week has been crazy for me too. I feel like my to do list is growing by the second!

But tomorrow is Friday, thank goodness :)

Well technically I am just in the middle of my day right now…crazy time zones!
I am sitting in my little office trying not to freeze.
I am facilitating speaking tests with my kiddies today, which makes my day quite easy. It is quite fun listening to them and their cute responses.
Can’t complain, it’s a great job!

I love that your husband complained about no fruit… you are a good example to him!! Your quinoa casserole looks so good! Bummer about the vega shake!! I need to vary my protein too!! Are you going to have a chance to relax this weekend! You need a break women:) My day was amazing because we are that much closer to Friday boo-ya! Seriously weekends, nights and holidays are one of the best parts about being a teacher!!! Have a great night!! My day was great…a little work at starbucks which brightens my mood with the holiday cheer in there now, a walk on the beach and dinner at the ‘rents house!

Holy yum that quinoa casserole looks delish!

That’s so fun that you got your first CSA delivery. I just made a bok choy soup from my produce delivery and it was super yummy. Here it is if you wanna try it out: http://gethealthywithheather.wordpress.com/2010/10/30/chinese-beef-and-bok-choy-noodle-soup/

You could substitute out the beef for beans and chicken broth for vegetable broth… I bet it would still taste great!

Yum! I’m actually going to make a stir fry with it tonight, but I have the largest head of napa cabbage, so maybe that could be used in the soup!

I felt the same way when I tried Amazing Grass for the first time, I just mixed it with water. I choked it down, but it was much better in smoothie form!

Was the nutmeric a mistake or did you intentionally pack the nutmeric to go with the Fuji?? I am not sure if you have ever tried this, but I have found that cream cheese and apples are an amazing combination. If you ever try it, let me know!! :)

I’m going to be running on empty by tomorrow when I have to write a 4 hour exam after writing one today. Ugh! I’m just looking forward to my night out at the bar afterward!

Hi Chelsea…
How about for more protein you start doing more with that nutrtional yeast (I am in love with that stuff) and also pick up some Bragg Amino Acids…which is like a subtle soy sauce flavor with a hint of maple…delish. They are both so healthy and Chelsea diet-friendly and they have a wee bit of protein. It’s not much but every little bit helps.

Maybe one day you wil hear hubbie complain “Chelsea…my breakfast has no flax in it!”

Bok choy is the bomb!! I love how crunchy the stem part is and how green and vibrant the leaves are :) Hope you get some needed R&R over the weekend!
