VIP in the Vegan Cafe

In case you were wondering, I’m pretty well known in the town I live in. I may even be a little bit of a celebrity.

Because of this, I get invited to cool events such as a Chamber of Commerce Business event featuring a new Vegan Cafe which will be opening soon.

Okay, I’m totally lying. The only reason I was let in the door is because my mom is in a business networking group in my town. Otherwise, the crazy girl with the camera would have never been let in.

In case you’re new around here, I have been dying to try the food at the Vegan Cafe for months now – ever since I heard one was opening up in my town. I don’t feel as if I live in a very “vegan friendly/raw” area, so when I heard about this, I’m pretty sure I squealed like a 10 year old and jumped up and down.

 

The cafe is opening in January, but for now, they opened up their almost finished cafe for a tasting, and you better bet I was counting down the days for this event.

I wish I had gotten some good pictures of the actual cafe, but the lighting was dim (it was a classy event, don’t you know – which is why I showed up in my puffy vest). Thankfully for you, once it opens, I will be there once a week (at least) so you’ll get pictures in the future.

I did my best to take pictures of the food, but the shadows are out of control.

Up first: Spinach Dip

While I should have taken pictures of the sign that told me what was in it, I know it was nut based (perhaps cashews) – whatever it was, it was delicious.

Up next: Raw Spaghetti and Marinara

 

The first thing I wondered was why my zucchini spaghetti has never looked like this. Note to self: invest in a spiralizer walk down the street to the Vegan Cafe. This was my mom’s all time favorite dish. The marinara sauce was incredible. It had a tomato and olive taste to it, and the “noodles” were better than any zucchini spaghetti I’ve ever eaten.

I was very upset not to have gotten a good picture of my favorite dish: the Pizza.

You can see it below in the horrendous photo on the bottom right hand corner of the plate.

 

The crust was made out of almonds and flax seeds (dehydrated, so it was still raw) and it was incredible. I had two pieces and almost went back for another piece so I could take a decent picture of it.

I also had a raw bagel with a spread on top, but for some reason Live Writer is not wanting it to be inserted into this post. Oh well, onward we go…

For dessert there were two options – and you better believe I had them both. First up was raw vegan fudge which I lost all ambitions and shoved it in my mouth before I even realized my camera was slapping me in the face reminding me to take pictures. Needless to say, it was amazing.

Last but not least, was the Carrot Cake.

I’ve had one other raw/vegan carrot cake before, but my mom and I decided this was better than the other one.  It tasted exactly like a carrot cake, but with a different texture.

I think the greatest thing about this Vegan Cafe is that it is part of the Thanks Jordan Foundation, a foundation dedicated to helping families who have children with cancer. Taken from their website, Thanks Jordan describes itself as following:

“Thanks Jordan is a foundation based on “Celebrating Life“. In doing this we help families of a child with cancer maintain as much normal activity and family life as humanly possible during their present and future battles.”

An amazing cause & amazing cafe. Until the cafe opens in January, I’ll be studying this:

And deciding what my first meal will be….

I’m thinking a raw bagel sandwich… nut cheese, avocado, spinach, and tomoatoes

 

Or, maybe Pumpkin Pie Soup with a Wrap….

And then maybe I’ll have a smoothie for dessert…

Or the carrot cake…

or the fudge….

Oh fudge, I’m going to have a hard time deciding. Good thing I’ve got a couple more weeks!

They’ll have to roll me out of that place.

All your food looks great! Idk if I live in a raw/vegan area because I’m not vegan… but I assume there’s plenty of places in Boston.

Mmmmm!
I think I would want to try that chocolate raspberry tart I see on the menu there. I can see why you are ecstatic, I would be too.

Very interesting pizza crust with almond and flax. Would love to try that sometime.

I’m not aware of any local vegan restaurants but I would definitely like to check a few out.

You are a celebrity in my eyes! I am so happy they opened that restaurant up in your area! All of the food sounds and looks to die for. We don’t really have any restaurants like that in Provo but there are a lot of great ones in Salt Lake. I love that you planned out your next meal there…I always do that at my favorite restaurants.

I would love this place! I think there is only one vegetarian restaurant here and it has a few raw things. I actually haven’t been yet. After perusing the menu online, I realized I could make all the raw things on the menu and I’d rather just make them myself and stay home. I’d love to visit a fancy raw place someday that specializes in raw food.

I too want a spiralizer - it would make such cool noodles.

Ooooh you’re so lucky to have a good vegan restaurant near you now! (I mean, soon.) I have plenty of vegan restaurants near my, of course, in NYC- but it is so hard to find a GOOD one! Especially one that is not too expensive, has good main meals AND good desserts! The impossible dream :) Lucky you!!!

One would think that in health-conscious Los Angeles we’d have more good vegetarian restaurants but honestly? Every single one I’ve tried has been hopeless. I may need to move to your neck of the woods!

There are a few vegan places where I live, but not as many as I would like to see ;) This place looks so cute!

Hi Chelsey!
I’ve been following your blog for a while now, but haven’t made a comment yet. Just wanted to say how much I look forward to your posts, and how HILARIOUS you are!! Seriously, you are a funny lady!
That cafe sounds amazing, I’m from Australia, and there’s not a lot of exclusively vegan places around (that I’ve found anyway!), and hardly any raw restaurants to choose from. Maybe being vegan/choosing to eat raw is more prevalent in the US? I”m not sure!
Anyway, thanks for another great post!

You’ve got to start every post with your little fibs! haha. Every time I think to myself “wow!” after the first lie, and then read the “Okay, I’m lying.” and think to myself “she did it again!”
The Vegan Cafe looks amazing - you’re so lucky to have that near you! We have not one solely vegan or even vegetarian place to dine. The most I can get if I go out is a “veggie delight” sandwich, actually. I complain about that a lot.

That spaghetti sounds good. I’ve yet to try zucchini “pasta” with marinara mainly out of fear but I’ve only heard good things. I think I need to get on the bandwagon soon.

That is so cool, I wish that our city would invest in a Vegan restaurant. I don’t think the appeal is too great here yet but hopefully someday.

We only have one vegan/vegetarian restaurant here, but unfortunately I haven’t been to it yet! I’m dying to check it out though.

We do! There is a place that is called Calafia in Palo Alto that has meat items and a whole Vege/Vegan menu on the flip side with AWESOME dishes.

Your pasta dish looks sooo good!

For some reason I’ve never been able to find a purely vegan restaurant nearby but there’s got to be one, I mean this is Colorado! I’m jealous of your vegan cafe even if it doesn’t open for another few months.

I’m pretty sure there are no vegan restaurants where I live, but I know there are in Portland which isn’t too far away.

Oh my gosh, that place looks SO good! I feel like I’m lucky enough to have some vegan restaurants near me, but a lot of them are very… um, “hipster”? It’s like vegan=nose ring & attitude problem… haha I guess it’s not THAT bad but I would love a “cute” little vegan restaurant. This place looks awesome!

And I really want a spiralizer. Those zucchini noodles just sealed the deal.

That made me smile to myself as I live in a tiny village in the Kent countryside and I bet if I mentioned a raw/vegan diet to most people, I’d just get weird looks!
My diet isn’t either of them but every raw and/or vegan dish I’ve made has been delicious - I love the sound of the courgette spaghetti and raw carrot cake :-)

There’s only one vegan/vegetarian place around here and it’s still 40 minutes away from me which makes me sad because it is amazing! The food there is phenomenal.

It all sounds so good! I’d love to try raw vegan food…can’t say I have before! I’m pretty sure there aren’t any places like that in Bloomington or Peoria but now I think I better investigate!

I love new vegan-friendly places. Living in Michigan, my options are very limited. The closest vegan cafe is about an hour away (I still drive there on occasion for dinner shh) :)

Great post! I can’t wait until they open. I really love Borrowed Earth Cafe as well, in Downers Grove.
