Sometimes I wish you could all be flies on the wall of my life. There are many reasons for this, but one of them is so you can see I am not as crazy as you think.
One thing you don’t realize is how incredibly weird Chicago weather has been this fall. I cannot even remember a fall like this before. Sure, there have been times where it has been in the 80’s through October and there are times where we have been deep within a foot of snow at this point in the year. But Mother Nature seriously needs to make up her mind about this little thing we like to call the temperature.
Is it hot?
Is it cold?
I’m never quite sure – which is why when I went to go work out this morning, I felt comfortable enough going outside to start my car in capris and a t-shirt. I mean, it was 65 degrees just the day before.
Much to my dismay, that was not the case when I went outside this morning. I was almost blown away with 25 mile per hour gusting winds whipping in my face. I almost crawled back in bed – I really did. However, the promise of a nice sweaty workout lulled me into the gym.
Long story short – it was 25 degrees outside today. Are you all able to do simple subtraction? There’s no borrowing/trading involved in this one…
65 – x = 25 OR 65 – 25 = x
25 + x = 65
I’m not even a math nerd, but that took it way too far. My math teacher father would be proud of me right now.
What does x equal my friends? 40 degrees. A 40 degree difference in the temperature from yesterday to today.
I had to pull out the stops on this one.
Okay, I pulled out the stops three days ago when I made this soup.
What I meant to say is I had to pull out the camera so you could think I actually cooked today.
Have you ever seen celeriac? It’s really ugly – quite possibly the ugliest root vegetable I’ve ever seen. But it tastes delicious. It has the consistency of a carrot, but the taste of celery. I am in love.
Roasted Celeriac and Carrot Soup
- 1 large celeriac, skins sliced off and diced into 1 inch cubes
- 2 carrots, diced into large pieces
- 3 cloves garlic
- 1 tbsp oil
Toss your veggies in the olive oil and line a baking sheet with foil. Grease the foil and make a single layer of the vegetables on the baking sheet. Roast at 350 degrees for 45 minutes, stirring every 10 or 15 minutes.
- 2 ribs celery, diced
- 1 carrot, diced
- 1 tbsp. olive oil
While your vegetables are roasting, sauté the celery and carrot in a small sauté pan for 5-10 minutes. I like my vegetables slightly crisp, so I cooked mine on the lower end of the time.
- 4 cups gluten free vegetable stock
- 1 tsp. cinnamon
- 1 tsp. pepper
Once the vegetables are done roasting, combine veggies, stock, and spices in a large Dutch oven. Simmer for 15 minutes. Then, transfer soup to a blender and blend until almost smooth (about 10-15 seconds). Transfer your newly blended soup back into the Dutch oven and add your sautéed carrots and celery.
The only other thing you must do is hide your soup from your co-workers so they don’t think you’re weird for: a) eating something that looks like baby food and b) eating one more orange food.
This soup was incredibly easy to make and will warm you from top to bottom.
Take that Mother Nature.

Our weather has been just as strange! It’s SO warm, and then the next day it’s freezing! We’ve had more warm than cold though… which is sad, I’m ready for snow!
My favorite way to warm up is lighting a fire in the basement and curling up with the boyfriend for a movie with hot chocolate
By heading to Starbucks for a hot Chai Tea Latte!

Our weather has been so unpredictable in NYC, too. Today and yesterday I have only needed a light coat; last week I was actually considering buying one of those balaclava types of masks because the wind was soooooooo cold on my cheeks!!!!!
Where do you come up with these ingredients/ recipes? I’ve never even heard of celeriac before! Did it come in your CSA bin or did you buy it at the store?

I had celeriac and had no idea what to do with it… so I researched a bit and came up with my own!
I love Fall in NYC. Scarves/boots/cozy cardigan weather is the BEST. Now winter is a whole different story. I live on soup, chili and COFFEE!
The weather here has been downright cold, and I hate it. I either go to the gym to sweat to get warm, or if I’ve already gone that day, I take a shower. I’ve been known to take a 2nd shower in one day just to warm up. Not the most eco-friendly, but it gets the job done!
haha - my husband would turn down the water heater to avoid that.
I’ve definitely never seen or heard of celeriac. Not much of a celery fan. Whenever I eat it with peanut butter I pretty much just end up using it like a spoon. That soup, however, might make me like celery.

In Alaska, there is snow on the ground and last week it got down to about 10 degrees, but today it was raining!

That weather sounds very fickle indeed! Melbourne is a little bit like that, even at the end of spring (summer starts dec 1st here), there’s no weather pattern at all, we’ll have an absolutely scorching day, and then the following morning it’ll rain really heavily, and stay like that for say three days straight, then just when you pack away your lighter layers and think it’s cold again it’ll change overnight and it’ll be a week of humidity….crazy! Sometimes the days even go from super hot first thing in the morning, to cold and thunder-storming at lunch, and then hot again in the afternoon.. so difficult to dress around!

Our weather has been awful, too. I never thought I’d say this, but I just want it to get cold and STAY cold for once! Like you guys, we’ve gone from 20s one day, back to 50s the next. It makes getting ready for winter so much more difficult…I get used to the cold, and then it’s back to hot…and I have to get myself ready for cold all over again!
And yes, as I write this it is 18* and windy out, while yesterday it was 55 and raining. ugh…

Ughhh, I HATE the cold winters in PA so I can’t imagine how chilly it must be in Chicago. The wind has be KILLER!!
Our weather has been pretty random too! But I think the cold weather is here to stay now, unfortunately.
I just constantly drink tea to try to stay warm. Also I bought some fleece-lined leggings for this winter so I’m hoping they’ll do the trick to keep my legs warm!

Fall? We’re in winter now! It just snowed a couple days ago and it’s so pretty outside right now. All white and wonderland-ish. I really wish we would get more snow though because I have this fear of it melting.
I’ve never heard of celeriac but I like how it sounds! Well, not the actual name. The name sounds a bit like a disability. What I like is that it’s like a carrot but tastes like celery.. that’s cool.

Celery is probably one of my least favorite vegetables and celeriac tasted a bit like it. Does the carrot mask the flavor?
not really - it has a pretty noticeable celery taste.
