snowless saturday

Well, the snow hasn’t hit yet — it has, however, been raining hardcore all day.

We keep our fingers crossed for snow over here though. Snow = winter working time for the Husband. We like it when it snows.

Word on the street we’ll have 4-7 inches before tomorrow night… with 30-40 mph wind gusts. Awesome.

To fill my day, I did a lot of baking.

 

Plus sandwich bread for me and cookies for the husband. (and) Yes, I’m a tease. Recipes to come! :)

Apparently I think once the snow hits, we will exist solely off of baked goods.

There was also a photo shoot with the most beautiful radish I have ever seen.

I think I took about 20 pictures of these guys. They’re absolutely gorgeous!

 

They helped round out a large salad topped with copious amounts of hummus for lunch.

This afternoon I’m not sure what I did besides bake… I baked a lot. I also got sucked into about three hours (THREE!!) of “America: The Story of Us” on the History Channel. Those shows are fascinating. I cannot even remember the last time any television show has had me under some kind of trance like that. The Husband falling under TV trance? That’s a different story. I must yell ‘JOHN!’ about twenty five times before he hears me.

Today, I told the Husband he had two options for dinner: soup or stuffed squash. He replied with soup was fine… and I made stuffed squash.

 

“Cheesy” Rice Stuffed Squash

  • 1 buttercup squash, halved and seeds scooped out
  • 1 cup cooked brown rice
  • 1 batch cheese sauce
  • 1 cup cooked broccoli
  • 1 tbsp. olive oil
  • salt and pepper to taste

Preheat your oven to 400 degrees. Halve your squash, scoop out the goop (yes, technical term) and rub with 1 tbsp. olive oil. Place flesh side up in a 9×13 dish, season with salt and pepper, and bake for 30 minutes uncovered.

Meanwhile, prepare your brown ice, cheese sauce, and broccoli. Mix all three together, taste, and season to liking (and try not to continue eating). After 30 minutes, fill your squash cavities with rice mixture, cover with foil, and bake for an additional 30 minutes.

After totally destroying mine, skin and all, I declared the Husband “wasted a perfectly good squash” because he couldn’t eat all the flesh. Pitiful. :)

For now, I’m going to go nurse this food baby the squash gave me and do 25 loads of laundry since our washing machine has been broken.

I’m a party animal.

We got a lot fo snow, but a lot of it melted! I like baking brownies/bars- less work than cookies:)

I LOVE the snow…it’s so pretty and it means lots of snowboarding! My favorite thing to bake is cookies mainly for the cookie dough. Those radishes are gorgeous, they remind me of a sunset.

I just moved from New Jersey to sunny San Diego, CA, so no snow for me this year and I’m not missing it at all (yet)! Although it is a bit strange having Christmas right around the corner and wearing short sleeves outside…
I didn’t realize you could eat the skin of squash! Can you eat the skin of all squash, or just certain types?

I absolutely love the snow! I would be a happy girl if it snowed now through March! We always bake bread when it snows.

Cookies. Any cookies. All cookies. I could bake them all day long everyday.

I like snow in theory. I hate being cold. If there could be snow at 70 degrees, I’d love it!

I normally just steam squash, but now I really want this rice stuffed squash!

i TOTALLy recommend putting cottage cheese in your squash! SO Good and super easy! and I LOVE to bake healthified versions of treats!

You’re a baking machine! Everything looks super tasty. And I’ve never seen such a pretty radish either, I didn’t even know they existed?! How is nutritional yeast? I’ve been interested to try but kind of scared.

Nutritional yeast is awesome - especially because I can’t do cheese. I was a little bit skeptical at first, but it really is great!

I really do quite adore this post :D That squash looks delicious! I normally cut my into cubes and bake it, either with cocoa powder, maple syrup and cinnamon, or wholegrain mustard/thyme/agave. Both are sooo good!
Baked goods wise, I’m all about the muffins. LOVE baking muffins.

Ooh the baked goods look yummy! What exactly are they? I love baking cookies more than anything else in the WORLD! Okay, slight exaggeration, but y’know! ;)
I’m not a fan of the snow at the moment! We’ve had so much which did like at first, but now its all turned to ice, and is making outdoor running impossible! :(

I baked allll day on Friday. I’d say my favorite thing to bake is anything with chocolate in it…because that just makes eating the batter so much better :)

oooh all those baked goods look delicious!

So ghee is “clarified butter” - my understanding is that it’s butter with the milk solids separated out - I think it just adds for a slightly different texture. Hope that helps (and that I’m correct!)

I enjoy snow when I don’t have to walk to class in it! It’s currently a blizzard where I live!!
My favorite way to eat squash is as spaghetti squash with thai peanut sauce and steamed kale.I lived off this combo all through fall quarter!!

I love baking quick breads and I have never lived in snow so I don’t really know that much about it! I only see it once every two years if even that! I’m dreaming of a white Christmas (keyword: DREAMING).

I loved “America: The Story of Us!” Thank goodness for DVR, I was able to watch them all in a row when they played it in a marathon one week :)

We had hardcore rain all day today, too! My bedroom ceiling was leaking… Not cool! No baking was done, but I did have a very productive day on my computer :)

Your baked goods look SO delicious, especially the date balls/truffles/whatever they are they look divine :P
Andddd, the stuffed squash! Yum…it’s been too long since I’ve had one. I love that it uses the nutritional yeast/hummus “cheese” sauce. It drives me nuts when recipes just call for fake/soy cheese lol.

I do not like the winter. At all. But to be honest, now that it’s winter break and I don’t actually HAVE to leave the house, there’s nothing I want more than a full day of snow and baking!
