Did you think I was done giving you presents this holiday season last week after the NuttZo giveaway?

You were so wrong.

What would you do if I told you that you had the opportunity to win some of my favorite products ever?

In fact, what would you do if I gave THREE of you the opportunity to win some of my favorite products ever?

That’s right — three of you (THREE) will be getting a special holiday treat from the folks over at Larabar!

A few weeks ago, Erica over at Larabar and I began talking about the possibility of hosting a holiday giveaway. Erica was bursting with excitement because the people at Larabar have been concocting special holiday recipes which they were ready for their customers to try!

There are a total of three parfaits which Larabar is featuring. All of the recipes were provided to me by Larabar.

1. Gluten Free Lemon Parfaits

1 package (8 oz) 1/3-less-fat cream cheese (Neufchatel), softened
3 tablespoons lemon curd
1/3 cup honey
2/3 cup whipping cream, whipped
2 bars (1.7 or 1.8 oz each) lemon bar or cashew cookie LARABAR®, crumbled
Lemon peel and mint leaves, if desired

1. In medium bowl, beat cream cheese, lemon curd and honey with electric mixer on medium speed until smooth and creamy. Fold in whipped cream.
2. In each of 6 (4-oz) parfait glasses, layer 1/4 cup cream cheese mixture, one-third crumbled bar and 1/4 cup cream cheese mixture. Garnish each with lemon peel and mint leaves.
3. Serve immediately.

2. Gluten Free Black Forest Parfaits

1 package (8 oz) 1/3-less-fat cream cheese (Neufchâtel), softened
3 oz semisweet baking chocolate, melted
1/3 cup honey
2/3 cup whipping cream, whipped
2 bars (1.7 oz each) cherry pie LARABAR®, crumbled
4 teaspoons sliced almonds, toasted
Fresh raspberries, if desired

1. In medium bowl, beat cream cheese, melted chocolate and honey with electric mixer on medium speed until smooth and creamy. Fold in whipped cream.
2. In each of 6 (4-oz) parfait glasses, layer 1/4 cup cream cheese mixture, one-third crumbled bar and 1/4 cup cream cheese mixture. Top each with 1 teaspoon toasted almonds. Garnish with fresh raspberries.
3. Serve immediately.

3. Gluten Free Pumpkin Parfaits

1 package (8 oz) soft tofu, drained
1 container (8 oz) plain tofu cream cheese
1/4 cup canned pumpkin (not pumpkin pie mix)
1/3 cup plus 4 teaspoons maple or maple syrup
3 bars (1.6 or 1.7 oz each) pecan pie LARABAR®, crumbled
1/3 cup chopped pecans, toasted

1. In medium bowl, beat tofu, tofu cream cheese, pumpkin, and 1/3 cup of the maple syrup with electric mixer on medium speed until blended.
2. In each of 8 (4-oz) parfait glasses, layer 2 tablespoons tofu mixture, 1/3 of a crumbled bar and 2 tablespoons tofu mixture. Top each with 1/2 teaspoon maple syrup and 1 teaspoon toasted pecans.
3. Serve immediately.

LARABAR is my favorite snack EVER! When we went to Mexico last month I think I took a stash of like 20 with me, they took up a big portion of my carry on!
I would want to try the gluten free lemon parfait! It sounds delicious!

I would DEFINITELY try the Gluten Free Lemon Parfait! Except I would use vegan cream cheese :) I LOVE the Lemon Bar Larabars so much. I would also try the pumpkin one..actually, all three!

Oh I really want to try the Gluten Free Pumpkin Parfaits! However, I do love Cashew cookie (my favorite also) and Cherry pie. Ooooh too hard to choose, but the Pumpkin Parfait did win me over since all I’ve been craving this season is pumpkin. Bad thing about this time of year is that I have to elbow people to get to the canned pumpkin ;)

I have to admit, a Gluten Free Pumpkin Parfait sounds AMAZING! I have recently developed a love for pumkin and have to eat mostly gluten free so this sounds quite yummy :)

Oooooooooooooooh!
I’ve never tried Larabars (not available here in the UK :-( ) but I’ve had some home-made versions which are amazing so these recipes look A.Mazing… the one that grabs me is the top one; lemon cheesecake is delicious and the thought of a Larabar one… :-)
