Things were looking suspicious when I walked through my door after school this afternoon. I was a little bit caught off guard. I strolled through the door with a smile on my face as I have a four day weekend from school, I had my last observation of the year with my principal, and I had pumpkin for breakfast (which means all is well with the world). The Husband had previously told me on the phone he was home, yet he was nowhere to be found. The truck was in the driveway, the dog was out back, and I could hear a saw in the distance.
This, ladies (and gents) could only mean one thing. The “Honey Do” list was getting shorter as I made my way through the house.
I’m praying to God it had nothing to do with my incessant nagging and whining about the tasks on the list and more to do with making me happy. I was happy all right.
A linen closet organizer was born today.
Have I mentioned my bathroom also serves as my laundry room? Be jealous of me in the winter when I stick my towel into the dryer before I take a shower.
Towels were folded and organized.
The decorative towel basket was even arranged according to color.
At this point, I thought I might be dreaming. Am I in the right house? Is this some kind of sick joke that’s being played on me?
Our master bedroom finally has closet doors.
For the last six months I have been staring at my clothes as I fall asleep — not picking out what I wanted to wear the next day, but stirring and knowing one day I was going to snap if those doors did not get hung.
Today, my friends… today was the day.
Needless to say, I was a happy camper. I found the Husband and promptly professed my love for him (in a way that said “I love you — even though you were going to do it eventually anyways”). Then, I decided I would give him whatever he wanted tonight.
When your husband does household tasks, you kind of have to just bite the bullet and take one for the team. That would only mean one thing around here.
Vegan Pot Pie Casserole (serves 4)
Filling
- 3 carrots, sliced
- 2 red potatoes, cubed
- 1 crown medium broccoli, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup frozen peas
- 2 and 1/4 cup vegetable broth
- 1/2 tsp. apple cider vinegar
- 1 tsp. garlic powder
- 1/2 tsp. dill
- 1/2 tsp. cumin
- 1/2 tsp. pepper
- 4 tbsp. nutritional yeast
- 1 tbsp. flour
Crust
- 1 and 1/2 cups gluten free flour
- 1 tsp. xanthan gum
- 1/2 tsp. baking soda
- 3/4 tsp. salt
- 1 cup almond milk
- 2 tbsp. oil
Directions: Begin by spraying a medium casserole dish (mine was 9×8) with cooking spray. Dice, chop, and cube all of your vegetables and add to the dish. Pour the vegetable broth over the vegetables and cook in the oven at 450 degrees for 25 minutes, uncovered.
While your vegetables are cooking, prepare your crust. Mix together your flour, salt, xanthan gum, and baking soda. Add milk and oil and stir until smooth.
After 25 minutes, your vegetables should beginning to get tender. Take the casserole dish out of the oven and add the remaining “filling” ingredients — nutritional yeast, 1 tbsp. flour, spices, and apple cider vinegar. Toss the vegetables with a large spoon to cover all of the vegetables with the mixture. Let sit for a few minutes before adding the crust.
Carefully pour and spread the crust over the vegetables. Cook for an additional 25 minutes on 450 degrees until crust is golden brown and the sauce is bubbling. Let the casserole sit for 5-10 minutes before cutting and serving.
I love pot pies — I always have, and I’m pretty sure the Husband loves them more than me. The only thing I hate about them is the ugly color they turn. Everything turns this crazy pea green color, and I’m not sure I like the way it looks. However, as ugly as pot pies really are, this was absolutely delicious. It had just the right amount of liquid to vegetables, and the crust was soft and chewy and really thick!
I almost put “serves 6” above the recipe, but honestly, there’s only enough for both of us to make a lunch out of this tomorrow. Either we were really hungry, it was really good, or you just can’t have 1 serving of pot pie. I’m going to go with all three.
The only thing I’m unsure of right now is who is in the lead with household tasks. I hope I am — I’ve hit my quota of “good wife deeds” for the night with this dinner.
