gluten free irish soda bread

At my blog, you’ll find all kinds of recipes including vegetable quiche, Portobello mushroom “steak”, polenta lasagna, veggie sushi, soups, sandwiches, pizzas, casseroles, my favorite childhood oatmeal raisin cookies, and much, much more. You’ll also find stories about me, my boys (Jadon-12 and Pryce-3), and my husband (a.k.a. Sweet Daddy).

Today I thought I’d share a recipe perfect for the upcoming St. Patrick’s Day. And, in keeping with Chelsey’s gluten free lifestyle, I made this recipe gluten free as well as vegan.

Irish Soda Bread

Adapted from a recipe in Something Extra

Serves 8

· 1 cup brown rice flour

· 2/3 cup unsweetened almond or soy milk

· 1 Tbsp. white vinegar or lemon juice

· 1/2 cup raisins

· 1/3 cup potato starch

· 1/3 cup tapioca flour

· 1/4 cup vegetable oil

· 1 Tbsp. sugar

· 2 tsp. xanthan gum

· 2 tsp. whole caraway seeds (optional)

· 1 tsp. sea salt

· 1 tsp. baking powder

· 1/2 tsp. baking soda

· 1/2 Tbsp. agar-agar flakes or 1/2 tsp. agar-agar powder

· 1 egg substitute (mixed with water according to package instructions)

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.

Add all ingredients to a large bowl and mix with a hand mixer.

Transfer to a lightly floured surface and knead several times. It’ll be sticky and seem too wet, but don’t worry. Shape into a round loaf and place on baking sheet, flattening slightly. Cut an X in the top with a knife.

Bake at 350 degrees F for 50 minutes.

Spread some Earth Balance on top and share with the little Leprechauns in your life.

I would like to - but I’ll use spinach to make it green because I refuse to use food dyes.

I love Irish Potatoes. It’s a sweet treat so I know they aren’t good for me, but since I only eat them once a year I figure it’s okay :)

How did you make the milk green? Food coloring? Spinach? :)

That Soda Bread looks DELICIOUS!!! I love that you added Raisins to it! Such a nice touch!

I read your post and I have to offer unsolicited advice:
3 tubs of hummus = hmm…$7-$9 dollars?
Three batches of hummus =hmm…$4?
Food for thought. You can even skip the tahini. I actually just gifted myself with a new tahini stash but it lasts forever.

The soda bread looks YUM! For your hubbs, I want to know how he “deals” (can’t think of a better word) with the fact that your diets are so different? Does he ever feel resentful or angry? Does it cause problems? Do your eating habits make him want to eat better/healthier too? Exactly how different are your eating habits, anyway?

this is what I was trying to get at put don’t know how to put it. How does he handle the fact that your diet is so different from everyone else’s? I really don’t mean this to sound rude at all cause believe me, to say my diet is different would be an understatement. I guess we’re more so in the same boat and since my brothers slash other males look at me like I have ten heads I was wondering how your Hubs handles/views it. In fact, my brother always asks, “Why do you order to weird?” Lovely.
