One of the hardest parts of going gluten free 1.5 years ago was giving up the idea of ever going out to dinner and being “normal” again. Special menus, special requests, special visits from the chef, special trips my food had to take back to the kitchen for being made incorrectly — well, it doesn’t make me feel “special”. It makes me feel like a burden. It makes me feel picky. It makes me want to rip my hair out and tell everyone, “it’s okay — I just come out to eat for the experience” when in the back of my mind I know it’s because of the food.
And gosh darn it, don’t you dare put that bread on my table because I will give you an evil glare because I want it so bad (I joke here people — kind of).
I used to judge a restaurant based on how good their bread was. Going to a restaurant that didn’t serve bread before the entrees came was not an option in my book. I was all about the bread. How ironic I turned out gluten intolerant. Funny how the world works, right?
I grew up going out to dinner at least two times per week, and I am not ashamed to tell you that Olive Garden was top on my list. In fact, almost every week after piano lessons, my mom would take my brother and sister there for dinner. It wasn’t until I got older that I really began to realize what a great deal their soup, salads, and breadsticks were.
Really? If I come here for lunch, I only have to pay $5.95? Sign me up… for life! (at a fixed rate please)
You can imagine my dismay when I figured out I could not eat their beloved minestrone soup and garlicky breadsticks any longer. I think I mourned the longest over this rather than any other of my dietary changes. Before I was a vegetarian, there was a select few items on their menu I could eat. Now I’m down to a house salad and broccoli topped with marinara.
Mmmmm someone’s going to have to roll me outta there (insert sarcasm here).
So today — TODAY, I set out with a mission to create my most loved meal in the comfort of my own home wearing my velour track pants and ISU sweatshirt that has seen its last day.
Mission accomplished.
I would be lying if I told you I recreated this soup from the depths of my soul. One of my co-workers thought of me (yay!) when her and her husband made this mock Olive Garden minestrone soup one day last week. I came into work with a beautiful recipe sitting on my desk. I love it when people are nice. I also am nice, so consider this as me putting the recipe on your desk as well.

So there was soup — and there was also those breadsticks (I totally just typed breaststicks — ha!). Once again, no credit for the recipe here either. Sometimes a girl just wants to follow a recipe — kind of. I used this recipe but made a few changes:
- 1/2 sorghum flour & 1/2 GF all purpose flour
- omitted the parmesan cheese
- regular active dry yeast
I’m pretty sure I’m going to get a phone call from my mom in approximately 5 seconds demanding why I didn’t invite her over for dinner. Don’t worry mommasita — there’s leftovers. I’ll bring you some on Wednesday.
I’m feeling kind of special now.
No wise crack jokes about me being “special” either, got it?

Last year, I had to start restricting sodium, since I live in the city, I eat out a lot, so I am constantly feeling like I have to avoid so many of my favorite foods or beg for favors from the chef! I feel ya girl!
I admire you for managing to have a gluten free lifestyle - I can’t even begin to imagine how tough that must be!
Well being vegan, most of my stuff is special in some way :p I think my aunt is the worst though - she’s a hardcore vegetarian who will not eat tomatoes or garlic! Kiiinda limits things

I’ve definitely done my fair share of special ordering. Just curious-when you were younger, did you notice any negative effects from eating gluten?
Not at all. I seriously had a stomach of steel growing up and don’t remember ever having stomachaches. I did get a lot of migraine headaches though which is one thing that happens when I eat gluten.
I ALWAYS special order off the menu. I actually get offended if any restaurant has a problem with my requests and refuse to go anywhere that puts up a fight. Seriously, you are a restaurant. Your goal is to make food that makes people happy. That’s it!

I often special order at restaurants. There are a lot of foods I don’t trust at restaurants, so I try to keep it simple.
This soup looks waaaay better than the OG version.
I have a question.
Did you go gluten free by choice or do you have celiacs? I know some people that are technically not allergic to gluten, but they do it as a lifestyle choice.
Either way, I love the blog! My ex-g/f had celiacs and I actually really enjoyed the meals that we made.
I’ve never been tested for Celiac, but I am definitely gluten intolerant. If I eat it, I will have GI problems for days (!!!!), a migraine headache, joint stiffness, a rash on my legs, among a whole bunch of less desireable symptoms!

That meal looks fabulous! That was so nice of your co-worker to think of you like that! I normally order things “specially” like, dressing on the side. Grilled, not breaded. Steamed, not sauteed. I feel like a burden, too. But I’m not going to go pay to eat something that’s going to make me feel sick afterwards!

I’m prediabetic so I often have to find out how certain things are being made. Although-I must admit they are getting a lot better in restaurants about meeting the needs of people who eat differently.
I have to special order everything off a menu. Being allergic to casein…I have to make sure nothing has butter, cheese, sour cream, or casein it (sometimes veggie burgers have casein it them, weird huh?) I feel your pain and your olive garden looks delicious! Even better than the real thing!
I recently have been noticing that my stomach isn’t tolerating foods the way it normally has. My GI doctor just said it was IBS and sent me on my way. I was thinking of cutting out gluten to see if my stomach was feeling better but I was wondering if there are any kinds of oats or cereals that u eat that are gluten free. I can’t even imagine having to give up oats
It makes me angry that they label everything as “IBS” and dont actually figure out what’s going on! Um of course my bowels are irritated - can we please figure out what’s making them that way?

Me too! My best friend’s doctor passed off her GI problems for years as IBS and wouldn’t even entertain the thought of it being anything else. It took her finally saying enough was enough, went to the emerg. one night when it was really bad so she could get tests and found out it was Crohns! She could have been on med’s a lot sooner and feeling a lot better if it wasn’t just labeled as IBS at the beginning.
This is amazing. Endless minestrone and breadsticks from Olive Garden are THE BEST! Good call on recreating.
I’m newly vegan and know how you feel about going out to eat. I hate that people need to accommodate my needs. It makes me appreciate restaurants that offer vegan options.

I’m pretty sure Olive Grden Bread Sticks have crack in them…but I am so glad you found a better way! Did you slather them in olive oil and vegan butter? That would surely hit home.
But they look so good who needs them? PS- Carrabas Italian Grill do they have them near you? They have a special gluten free menu. Hoorah! Who knew that sometimes when you go out the “steamed veggies” are actually served with a seasoning containing gluten?
No fears. I am sure given the rise in gluten awareness the gluten-free menus will be more widely available.
But yes, It is about experience, avoiding chain restaurants and going to where the chefs love a challenge and a chance to do different and..heck…have a salad and then when you get home have your main course.

YES! This actually played a big role in me choosing to eat meat again (after being veg for 14 years). I was sick of being “special” aka a pain in the arse!

They were good! Littler and more dense than the Olive Garden version, but that is to be expected with GF baked goods.

I special order quite often. Most places are happy to do it, but I’ve gotten more than my share of funny looks too (mostly from my tablemates)
Girl I can totally relate! Having a nut allergy makes it SO hard to eat out sometimes.
I can almost NEVER order off the dessert menu and there are some restaurants that I have to just avoid all together, such as Thai restaurants.
Making our own food is always the best solution though! I’m sure your minestrone and breadsticks are even better than Olive Garden’s!
Mmmmm, those breadsticks sound really good!! Have you tried the GF pasta at Olive Garden? It’s not on their regular menu, I think you have to ask for the “garden fare” menu to see it, but it’s basically just GF spaghetti noodles, so you can substitute them for any of the pasta dishes and just have them add the sauce of your choice, I’ve had them a couple of times and they were actually pretty good! But I do miss the garlicky buttery delicious bread

oh gosh I just recently went to olive garden and showed up to the restaraunt completely famished (not good when they serve unlimited amounts of bread)….so I pretty much ate close to 20 bread sticks before scarfing down an entree and splitting three desserts with a friend..the bad thing is when we got up to leave I was eyeing the couple of bread sticks that were still left in the basket!!!! they are so good and so addicting!

Oh I special order all the time haha. Even if you weren’t GF, it’s REALLY hard to find veg-friendly options that aren’t totally smothered in cheese. I’m okay with some, but I do not need half a block of cheddar to make up for the fact that I don’t eat meat. Some of the best meals I’ve eaten out have come from multiple sides!
I totally agree. It seems that all veg options when I go out to eat (ie: weddings, etc) are all pastas tat are heavy on the cheese. That’s not going to work for me.
It’s so great that you were able to make a replica of your favorite eat out meal! I do it ALL the time, even of my favorite gluten free products that I refuse to pay an outrageous amount for. This soup looks amazing!

You can’t imagine the look of dismay and confusion on the servers face when I ordered my meal “sin arroz” (no white rice) in Peru! But how could it be a meal without the rice?
The worst is when you make a special order and they get it wrong.
We are pretty positive my 8 year old has a gluten intolerance and just waiting for the ped’s appointment later this week to decide if we are going to get him tested for Celiac or not. *celiac disease/gluten intolerance runs in the family* I’m kind of nervous because the husband and i have decided that if he does have a gluten intolerance, we are all going gluten free.
Oh no! Keep me posted on what happens. I think that it would be so helpful for a child to have an entire family who goes GF if an intolerance was found out about. I can just imagine how many tears would be shed because “he got to have it and I couldn’t!”
awh…i can’t imagine having to go gluten-free. it would be tough! it’s admirable that you have come up with so many ways to adjust your diet! one of my best friends has to eat gluten free, too. i always try to make sure i have good snacks on hand for her! enjoy life foods has been a godsend!

How did you discover you were allergic to gluten? I know a lot of people are and they just don’t know it. I have had digestive problems for as long as I can remember and I’m sure it has something to do with an allergy to food but I don’t know what it is (and I like food too much to go to a GI and figure it out haha) Anyways, I was curious how you figured it out….

I used to be able to put away a serious amount of OG breadsticks. Okay, it wasn’t just the breadsticks that I was putting away. Such a cute idea to recreate a healthy/gluten-free/vegetarian version of an OG meal. I thought about remaking a healthy/veggie version of their gnocchi soup but it sounded labor intensive and I’m not all that sure my cooking skills are up to the test. One day, maybe.
I am very schedule oriented as well. I like the consistency and routine and I think it keeps me on a healthy path.

I know exactly what you mean; I actually prefer my GF diet to the one I had before my coeliac diagnosis but always feel like the awkward one when I’m eating out. It’s just a bit irritating having to either go and talk to staff first or choose, and then choose again - and again!
