It’s Wednesday! It’s Wednesday! It’s Wednesday! I have this love Wednesdays. For one thing, it’s not Tuesday.

Tuesdays are horrible — Tuesdays can bite me.

Tuesdays make the weekend seem so far away. And let’s face it, everything that can go wrong in the world, usually happens on Tuesdays.

Case in point —yesterday (Tuesday) Charlie decided it was time to wake up at 2:30 AM and wake up his momma. Am I dealing with a newborn or something? He’s getting punished and is off to his cage for the next few nights because of this experience. That’s not enough for you? How about the fact I then got out of bed at 4:30 to go work out and the woman who opens up in the morning wasn’t there. Yeah, pretty bad. OR we could also talk about how my house is infested with nasty carpenter ants and they somehow made their way into my pantry yesterday. SO. STINKING. GROSS. I’m still shuddering at the thought.

Okay, enough with this pity party I’m throwing for myself — because today is WEDNESDAY! Which means tomorrow is Thursday… and the day after is Friday! Every Wednesday after school, I always exclaim to my co-workers: “I always love my life so much more on Wednesday afternoons.” So true.

Another reason why I like Wednesdays? It may or may not have anything to do with the great TV lineup (The Middle and Modern Family — don’t judge me.) or with the fact that it’s What I Ate Wednesday!

Peas and Crayons

Breakfast — 5:30 AM

Breakfast was eaten a little earlier today since I had to get to school early. Not only was there a staff meeting, but my report cards were due at the end of the day and I was… uhh still grading papers. Somehow between 7:00 and 3:30 I managed to finish those babies, but it wasn’t easy.  But back to breakfast…


In the bowl:

  • 1/3 cup whipped banana oats made with water and coconut milk
  • 1 tbsp. chia seeds
  • 1 tsp. vanilla extract
  • cinnamon
  • raspberries
  • 1 tbsp. Vega shake and go chocolate
  • Jessica’s cherry almond granola
  • TJ’s creamy organic peanut butter

Snack — 9:30

 

Mid-morning, I broke into this crisp Pink Lady apple. I am trying to figure out how some people: 1) don’t eat breakfast or 2) can make it through the morning without a snack. It had already been four hours since I ate breakfast! This helped to hold me over until lunch (plus the 3 cups of water I chugged — thank goodness for a water fountain in my classroom).

Lunch — 11:30 AM

This was actually my lunch from yesterday, and I am glad that it kept. I went out for lunch yesterday, so I had this lunch still waiting for me in the fridge. I had a spinach salad topped with leftover chickpea broccoli and fig salad. I topped it all with some hummus and called it a day.

 
On the side, I had some Crunchmaster gluten free crackers. I was also going to have a pear, but it wasn’t that great, so I threw it away.

Snack — 3:15 and 4:15

After school, I met some friends for my last run before my 10 mile race on Saturday. Before I ran, I had one date and some almonds. When I was done with my run, I ate the rest. Apparently I’m bad at taking pictures of my food before I eat it because this bag was about 3/4 empty by the time I took a picture.

Dinner — 6:00 pm

When I got home, I didn’t have much time or energy to make dinner. Whenever I have nights like that, I go to a favorite… Mexican food! Because I make Mexican inspired meals so often, I always make sure I have a can of fire roasted tomatoes in the pantry, along with some kind of grain. Add your favorite protein (mine being Trader Joe’s traditional refried beans) and some veggies, and you’ve got yourself a great go-to meal.


On the plate: Mexican quinoa, fajita vegetables, refried beans

Dessert — 6:30 pm

Right after dinner, I had a date filled with peanut butter (crunchy). It was the perfect way to end my dinner.

Snack — TBA

I said it last week, and I’ll say it again — I cannot go to bed without eating a nighttime snack. I wake up hungry in the middle of the night. Tonight, I think I’m feeling a protein muffin made with peanut flour. I combine:

  • 1/4 cup peanut flour
  • 1/2 tsp baking soda
  • sprinkle of cinnamon
  • 1 flax egg
  • 2 tbsp unsweetened applesauce
  • 1 tsp. vanilla extract

Combine all in a microwave safe mug (after spraying with cooking spray) and microwave for 2 minutes on high.

I’m thinking some SO Delicious ice cream would top it perfectly this evening!

I seriously LOVE dates stuffed with PB. It’s like eating dough, except better. Congrats on the last big run. I did 6 on Monday to make sure I was still capable before my 10k next Monday! I lived but if you had asked me to do anymore than 6 I might have died. Best meal today? Definitely breakfast!

It sounds like I really need to try this date and pb thing! Oh and you reminded me of the time I came home from work starving, grabbed a handful of walnuts, threw some in my mouth and then looked down and saw ants crawling in my hand. Talk about still shuddering. Everything in our pantry is now nicely sealed and those shelves had a wonderful scrubbing, bleaching, everything. uuuuugh!

I am the exact same way! I HAVE to eat a snack before bed every single night. I don’t see any logical reason to stop this either.

I don’t understand how people can go without breakfast or a snack either!!! I am a teacher too…have a very similar eating schedule to you… but I tend to graze on fruits and veggies through out the day!

My kids eat at 11:10 - I kinda hate how early it is. I try to snack..and then eat my lunch during my prep which is later. Report cards? Are you almost done? We go til the 17th.

Yup! That is normal around here though.. a lot of school go until the next week. So strange how schedules are different across the country. When do you usually start?

I have no idea how people go without breakfast and a morning snack either… or a nightly snack for that matter. I’ve gotta have them all or I go crazy/chew off my arms.

Going breakfastless is some sort of torture! haha noone should put themselves through that, right? oh and I hate tuesdays with a passion! esp when it was “late clinic” day and I had to stay at work so late that I drove home in the dark and was so hungry I wanted to eat my arm for dinner… but I digress..

I’ve never tried a stuffed date before but my bf swears by them, he loves them. Your breakfast looks so yummy and I have no clue how people can go so long without snacking either. I get so hungry! Best thing I ate today was Gina’s breakfast cookie for breakfast, yum! :D

I love Wednesdays too! The weekend feels so much closer!

I want to try that protein muffin recipe. That looks good! I tried making one today but it was mostly egg whites and I just didn’t like the texture.

I also have NO idea how people survive without breakfast. I would be SO freaking cranky!

dates are so sweet on their own.. i don’t know if I could handle them with pb!
I just tried some white chocolate peanut butter from pb and co. It is, by far, the best thing I have eaten today or all week.

I have never had dates with pb!!! The best thing I ate today is hard to say. I am traveling for work and the food out has been sooooo flipping blah! I did have some great guacamole as a side dish for dinner this evening. That’s the extent of yummy food I cannot wait to get back home!

I don’t know how people go without breakfast either! My husband sometimes doesn’t eat it until 11 am and just drinks his ridiculous tar like coffee to get through the morning uugghhh

It’s not raw - just 1 cup quinoa cooked with 1 cup water, 1 can mexican tomatoes, and some spices! :)

So many delicious meals! Love that you eat so often!
Nothing beats oatmeal in the morning, and your bowls looks so filling! And your stuffed date! I haver finaly found fresh dates here, and stuffed dates are on top of my to-try list, cant wait :)

Ants. I shudder too. We had the same problem (in fact my entire pantry is STILL on my dining room table). I highly recommend calling an exterminator. $100 bucks later and I haven’t seen an ant since! Best $100 I’ve ever spent.

I love WIAW because that means it’s Thursday when I’m reading it and Thursday is soooo much closer to Friday!

I don’t know how people go without breakfast or a night time snack either. There is NO way I could go without eating all the way from dinner time until lunch time the next day! :P

The best thing I ate yesterday? Probably the carrot cake oatmeal with a slice of carrot cake in it that I made for my birthday breakfast!!!

I really like this addition (WIAW). Last week when I saw it, I was very inspired. I’ve been keeping a detailed food journal to try to figure out what makes me feel awful when I eat, and sometimes it seems like I can’t possibly eat anything “tasty” (typically this equals containing chocolate and/or sugar) and still have it be healthy and non-illness-causing. Seeing your day’s eatings in pictures shows me that food can be nutritious, complete, satisfying AND enjoyable.

I am also glad to know I’m not the only one who needs a bedtime snack to not be starving in the middle of the night! THANKS!

I don’t normally get hungry for a mid-morning snack or lunch until 2 o’clock! I always have super-loaded oat bowls. I usually get hungry around 4 no matter what though. I think my body is programmed to!

An ant-infested kitchen sounds awful! I’m sorry! If it makes you feel any better, I saw something huge crawling on my floor the other night and realized it was a centipede. I succeeded at killing it which never happens. Those things are fast!…and totally disgusting.

I don’t know how people don’t eat breakfast either! I would be starving by the time I got to work. I always get hungry around 10:00 and eat a small snack too.

Oh. my. goodness. That protein muffin was SO delicious! I made it as directed, cut it in half, and smeared 1/2 tbsp of crunchy peanut butter. It tasted like a peanut butter cookie turned into a soft biscuit. It more than hit the spot. I seriously couldn’t believe there’s no added sweetener. (except I made it, so I guess I believe it. haha)

I don’t know how people can go without eating breakfast either! I can barely wait an hour. And nighttime snacks are a must. I hate waking up in the middle of the night hungry.
