I had every intentions of making stuffed peppers for dinner today. Really, I did.
Making the peppers was my plan yesterday, but then I got home and well, I didn’t want to cook. It was sad, really. I enjoy cooking. I always want to cook. Put me in a kitchen and I’ll whip us up something good. (Really, I will – you can come for dinner any time you please. Yes Mom, I mean you too.)
Then, today, a glorious thing happened – I was craving some kitchen time. I needed it – I wanted it – it had to happen or else I would spontaneously combust. So after school on my drive home, I was daintily (because “chomping” doesn’t sound lady-like) eating some raisins and almonds when I was getting antsy to put on my apron and cook those stuffed peppers.
But you see, when I got home, I had a lovely package waiting on my doorstep. Those peppers had to wait.
Ellen and I did a blogger swap this week, and she sent me all kinds of local Michigan goodies as well as a super sweet note.
I was spoon deep in this chocolate cherry peanut butter from Naturally Nutty when I realized I was sabotaging my dreams of those peppers. While this decadent nut butter far surpassed the nut butter of my dreams (seriously there are more cherries in there than I thought possible), this peanut butter would have to wait (for about 30 more seconds – really.).
So back to those peppers. I pulled back my hair with a bobby pin, pushed up my sleeves, and got to work. Just in time for someone to call and tell me he wouldn’t be home for dinner.
Charlie works so hard sometimes that he doesn’t make it home to sit down and have a hot meal with me. Silly Charlie – it’s okay though. Charlie is a hard working guy and is spread pretty thin in the summer months. The joys of being a landscaper.
I then proceeded to have an inner battle with myself for about 10 minutes. Should I make the peppers? Should I save the peppers for another night? Would Charlie (okay, you caught me – it was the Husband) want me to continue with my dinner plans without him?
Which is when I threw all caution to the wind and decided I was important enough to cook a wholesome and delicious dinner – even if by myself.
So that’s what I did.
I think it’s important not to make excuses for cooking. Yes, we are all busy. Yes, convenience foods are well… convenient. But at the end of the day, your body is the only one you’ve got – so you better treat it well with fanfreakingtastic foods that can be on the table in less than an hour.
This recipe has a lot of down time, which means while it was cooking, I was able to do chores around the house. Make the bed (at 5:00? I know… I know…), wash the dishes, play with the dog, make lunches for tomorrow, inspect the kitchen to make sure there are no more ants (there aren’t – Thank God.). By the time my dinner was ready, I was relaxed, in my pajamas, and ready to eat. Thankfully I saved all my excuses to explain why the dishes are still sitting in the sink.
Lentil Stuffed Peppers (serves one)
- 1 large (REALLY large) green pepper, halved and deseeded
- 1/4 cup basmati rice, dry
- 3/4 cup water
- 1/2 cup Trader Joe’s steamed lentils (or any 1/2 cup of prepared lentils)
- 2 cloves garlic, minced
- 1/4 cup onion, diced
- 1 tbsp. olive oil
- 1/2 cup diced tomatoes, drained
- 1/2 cup tomato sauce**
- 1 tbsp. tomato paste
- 1 tsp. garlic powder
- 1 tbsp. basil
- 1 tsp. oregano
- salt and pepper to taste
**to make the tomato sauce, I used the other half of the diced tomato can and pureed it until smooth – one less thing to buy!
Directions: Begin by combining the dry rice and water in a small saucepan and bringing to a boil. Once the water is boiling, turn the heat down to low and cover. This will need to cook for approximately 30 minutes before turning off.
While your rice is cooking, preheat your oven to 350 degrees. Halve and deseed your pepper and line a baking pan with foil and cooking spray. Pop those peppers into the oven for 30 minutes.
In another small pan, heat the olive oil over medium high heat and add your two cloves of garlic (you could probably make it three – you are eating alone tonight) and onion. Stir frequently and cook for ~5 minutes or until translucent. Add your tomato sauce, diced tomatoes and spices and simmer for 10-15 minutes.
By this time, your rice should be about done. Fluff the rice with a fork and add your prepared lentils and sauce, with about 1/4 cup sauce reserved. Stir until the rice and lentils are coated evenly with the tomato sauce. Pull the peppers out of the oven and crank up the heat to 400 degrees. Stuff the peppers with the rice and lentil mixture and top with the additional tomato sauce. Cook for an additional 10-15 minutes or until the peppers begin to char.
You know what? I’m glad I didn’t just pour myself a bowl of granola and call it a night. Mostly due to the fact that bowls of granola don’t make for the best blog posts and because I feel satisfied and good about my dinner choice tonight.
I may or may not feel more satisfied than I would have because I ate a zillion more TJ’s lentils cold while I was making this too. Say it with me: best lentils in zee world!
And now that I have made a healthy choice, I believe I’m going to go eat about 320320392 more servings of that peanut butter. Because that’s what wives do when their husbands aren’t around. Just me?
The only regret I have is not making the Husband’s portion – these babies were good.
Question: Do you cook for yourself the same way you would cook for a crowd?

I love the idea of using lentils in stuffed peppers. I use couscous instead of rice but that would be a great substitute for ground turkey! Now that I’m thinking of going full-time vegetarian God knows I need ideas
Well jessica, I have TONS of ideas for you! Let me know if you need/want help coming up with some things for a veg lifestyle!
Those sound so good!
Definitely not. I would take MUCH more time cooking for guests than I do for myself. I’d make a plan and mayyybe even have all of the ingredients I needed on hand..
I do make fancy food for myself sometimes though. Its fun!
You’re right - I would have been more stressed out if I were cooking for a crowd.
I usually do more experimenting when I am only cooking for myself-that way if it isn’t good I’m not disappointing anyone else. lol. If I come up with something good I will repeat it for a crowd!
I am bookmarking this! I have totally been looking for a GREAT stuffed pepper recipe..and think I just found it
This looks really good, my mom used to make stuffed pepper a lot! Been forever since I had one!!
Love blogger swaps! I did one once, its fun! U got some great goodies!!
last pic, with the fork called 006.
NICE! the lighting, the green placemats, the orientation and composition…nice job girl.
and the recipes isn’t half bad either
oh i’d love for you to cook for me. i’d do the dishes even!
Thank you! I always feel so special when you mention my photography!
I used to eat stuffed peppers a lot growing up - but haven’t found a great vegetarian recipe for them. I’ll have to give these a try!
Chelsey,
Have you shopped for organic from Timber Creek Farms? If so, which box do you recommend? Let me and my wonderful wife Brenda know….we are interested in obtaining quality organic produce.
billmcq
Hi Bill - I haven’t personally tried TImber Creek Farms, but I do know that the produce they use at the Vegan Cafe in Lockport is from Timber Creek, and it is absolutely amazing produce. I would reccomend it!
My wife Brenda and i attended a Preparing Raw Food class by Chef Linda the other night and it was very informative. They passed on the info about Timber Creek Farms of Yorkville.
I love stuffed peppers, especially with Ragu sauce. The best way, in my opinion, to cook them is in a slow cooker. I like the peppers to get super soft. YUM!
I especially like this post because I ONLY ever cook for me, so thanks on behalf of all the single clean eating ladies out there.
All the single ladies (all the single ladies)! Put your hands up! SOrry, I got a little Beyonce crazy.
I basically laugh out loud to your entire post because I can relate all too well to every step here… (boyfriend not husband though)
I was just talking to a coworker today about stuffed peppers! This recipe looks great…so flavorful!
I cook healthified meals for myself, but I know if I were to feed a crowd, something would have to give. The dish would still be healthy but I’d have to consider my audience and the collective taste palette.
I love stuffed peppers! You just reminded me that I need to make them again soon. Your version looks fantastic-love that you used lentils!
I think, sadly, the only time I’d prepare a good meal just for myself is if someone else bailed on me and the meal was already in my mind/in the works. When my hubby works evenings, he gets free dinners at work, so I never usually make good meals for me…that should change. Let’s start a movement! Like tonight, he was working, so I had leftover black bean burgers…but, don’t get me wrong, they were amazing (leftovers and all…)
I usually just make a huge salad and baked sweet potato and call it a day!
I generally cook a lot but lately I’ve def been feeling a little lazy about doing meals with more prep. I still like to eat fresh healthy food, but there’s been a lot of the same salads going on in my house!
I am hoping to get back on track with my more creative meals!
The peppers look lovely and you’re right, peanut butter will always be there for you
Can you believe I’ve yet to make stuffed peppers? I know! Who am I?! Yours sound (and look!) absolutely delicious though. Can I come over for dinner?
Yes you can!
Amazing package!! I’m dying to try Naturally Nutty!! Swoon <3
I’m up for a blogger exchange if you are!
I definitely take it down a few notches when it’s just me. Which is why I repeat a lot of meals. But it’s ok. When I get tired of something I just phase to something new.
I love stuffed peppers. However, I’m horrifically impatient- so I’ve rarely gotten them to “perfectness”.
I was starving when I got home from the gym today and alllllmost shoved whatever I could find into my mouth (fiance was at class until late), but I composed myself and wound up making an amazing dinner! I made eatliverun.com’s Indian Dal (lentils!) with brown basmati rice (with some sparkling wine). This was one of the tastiest things I’ve made in a long time and it felt nice to sit down to a delicious dinner even though I was by myself.
Oh gosh, I do that all the time! Looks like we were on the same wavelength with the lentils and rice!
I am the only vegetarian in my family- and even as someone who cooks alone and for one, taking the extra time to prepare a whole-foods dinner is SO WORTH IT, whether it is for one for for ten. I always feel ten times better when I am not rushed and convince myself that that is what I need to do.
Mmmm I love these kinds of recipes! anything stuffed, especially peppery stuff is soooo goood.
It has been way too long since I have made stuffed peppers, and yours look so good! I have a bunch of lentils in my cupboard I bought for a recipe (which did not turn out well at all!) and have no idea what to make with them! Definitely bookmarking this!
Great! Let me know how you like it!
Okay.. even though I KNOW this wasn’t the main point of the post… can we please back track and talk about that chocolate cherry PB ?! It’s like someone has been eavesdropping on my dreams…
It’s seriously better than my dreams.
I love stuffed peppers! My boyfriend is a cop so I spend a lot of time alone because of all of the crazy shifts he works! Meals for one fit perfectly into my life!
Yeah those police officers do work crazy hours! Kudos to him!
Because of my lack of a sweet tooth, I have to cook differently for others. My sister has a sweet tooth, so I use to to test recipes.
These stuffed peppers look wonderful! I hear you on the kitchen thing, too; some nights I’ll just want “time off,” but then the baking/cooking bug will bite, and bite hard.
Those peppers look delicious! I always cook for just me! haha Sometimes my boyfriend will come finish up my leftovers, but I would say 85% of the time, I’m the only one eating my food. (Makes for great lunches!)
I agree! I was going to make more, but I still had leftover Mexican for lunch today!
I loved stuffing veggies and these look delicious!
When I cook for myself I am more likely to just throw random things together, but when I cook for others I usually do safe recipes or at least use a recipe.
Not usually, I tend to make quick, easy meals if I am cooking for just myself - and usually from random food in the fridge that needs to be eaten. But when I cook for me and the husband I stick to planned meals and recipes.
Mmm, I’m totally intrigued by that cherry peanut butter. Also, I love stuffed peppers, I’ve never tried them with lentils - looks yummy!
I cook way different for others than I do for myself. I put a lot more effort into meals if I know someone else will be enjoying it, too.
You should put an effort into it even if you’re the only one enjoying it! You deserve it!
Those lentils are a-mazing! They do look a little questionable when you squeeze them out of the package, though:)
ahaha - you’re so right!
Kudos for making the right decision! With delicious alternatives around (my those cherries sound tasty) I have often snacked my way to fulness and had to throw my dinner plans to the compost, often wishing I hadn’t.
Really, I don’t usually like green peppers - I generally favor their red and yellow counterparts - but I will definitely try this stuffed recipe. It’s something I’ve never tried but always wanted to. Baby steps!
I only like green peppers this way!
My family and I make stuffed peppers, except we call them porcupine meatballs! It’s basically the carnivore substitute for stuffed peppers. It’s ground beef, rice, stuffed into green peppers
Happy Friday!! It’s almost Memorial Day Weekend, Wahoo!!!
I used to always request stuffed peppers when I was little!
I need to do this more often! If I’m only cooking dinner for myself - I rarely ever make something that involves work. But you’re right - I should make a nice meal even if I’m eating alone!
So glad that everything got there okay!
Naturally Nutty is such a great company and makes tons of great flavors! I especially love that there’s hemp and flax seed in them all so they’re even better for you! All GF and many of them vegan. If only I weren’t vegan, than I would totally live off the Butter Toffee flavor.
OMG naturally nutty chocolate cherry pb is the BEST!! I love that stuff. Now I have to go out and buy another jar today because I haven’t had it for months.
It’s hard for me to spend time making dinner if I’m just eating by myself. I should spend the time though because otherwise I just end up snacking all night.
I definitely cook differently when the hubbie is not around.
I usually go for a salad and an omelet or cereal, or smoothie, which would not cut it if he was around.
Oh wow, this looks absolutely delish!
I hope you have a great weekend:)
If I have the time, I love to go all out on a meal that I’m just cooking for myself. It’s so satisfying! Of course sometimes when I don’t feel like cooking, I’ll just raid the kitchen, plop a bunch of stuff in a bowl with lettuce and call it a meal.
These looks amazing! Love that you used lentils in the stuffing.
I don’t usually cook for myself the way I’d cook for a crowd because I actually have really simple taste! My favorite things to eat are roasted vegetables, salads, and some kind of carbs like quinoa or brown rice:) Those lentil stuffed peppers look amazing!
My favorites as well! I’m looking forward to my tofu, sweet potato, and roasted broccoli tonight since the Husband will be away!
those look amazing!! your pictures look sooo good!!! it’s an eye feast just looking at them!!!! i always cook differently when i make things for others..i’m not a really sweet person for example…and i know other people like more salt..so i always use more salt when cooking for the family.
When its just me I don’t ever really cook for myself. I admit. I will grab some Subway or a previously frozen something from the freezer. Or make a sandwich, eggs, etc. I still try to eat a balanced meal over mindlessly snacking…but I wouldn’t call it cooking. If I could whip up things like you though I would!
Oh My Muppets this is like a meal come true for me!! I am SO making this on Saturday!! I’ve got my wild Saturday night all planned out now
And woah chocolate cherry peanut butter?! I am SO gonna have to recreate that!! Hehe I feel you on the nut butter servings- I may have eaten 320320392 servings of PB&Co WCW
I LOVE Naturally Nutty pb!!!!!!!!!! Like, love. When I visit my fam in mich this summer I plan on stocking up
and this recipe looks seriously awesome. I love that you cooked for one, and I completely agree that it’s worth taking the time to cook-even if it’s just you!
Ahhh, I am dying to try that Naturally Nutty cherry flavor! I just bought the butter toffee and it is soooooo good. I wish there was a Great Harvest close by so I could stock up!
I love those TJs lentils! Best things ever! Those peppers look absolutely awesome, I’m glad you decided that dinner was a go! I will absolutely be making these when I get home from Italy
What a lovely idea! Great looking peppers too!
I love stuffed peppers and yours look delicious! I’ve only had meat & rice stuffed ones so I’m curious to try yours!
I’ve been meaning to try making stuffed peppers but never get around to it. My boyfriend has decided that he now doesn’t like peppers so this will have to be a meal for one
I definitely don’t cook for myself the way I cook for others. I just kinda throw something on a plate, shovel it in, and I’m done with it.
I havent had green peppers in like forever, but this really made me want them! Looks delicious!
And Chocolate Peanut Butter with Cherries!?!? Oh, why do I live in Norway? That sounds soo amazing!! Hope youll enjoy it
oh oh oh ive such a mad craving for these now.. gahh!!! wait that nut sounds amazing! lucky you!
Wahhoo for stuffed peppers! One of my favorite dinners (after Mexican, of course). How did you get involved with that blogger swap?? I’d love to do something like that!
EMail me!
I love the idea of combining rice with lentils! I definitely want to try this.
And, I can totally relate to the thought process you went through - especially when I’m eating alone it can be hard for me to find motivation to cook, but sometimes I find it’s the best time to try a new meal that my boyfriend wouldn’t really like! And if it comes out a disaster or takes a lot longer than I expect, I don’t feel bad.
Exactly! I think the husband would have said.. “uhh where’s the meat?”
Hi - new reader here! I love your blog and style, it’s very fun. But I had to comment about how excited I am to try those stuffed peppers! I loved stuffed peppers, but haven’t made them in months because the recipe I used didn’t fit into my new-healthy-lifestyle. I’m really excited to try a re-vamped healthy version of a personal favorite. Thanks for sharing!
Hi Amanda! Thanks for reading - I hope I haven’t scared you off.
Hope you like them!
Good gosh, Trader Joe’s steamed lentils are the best thing ever!! I can hardly control myself around them… okay, I can’t control myself. I’ve been incorporating them into more recipes, this is a great idea! Trying it this weekend
Unless a black bean burger with a blob of hummus on top is suitable for a crowd, then no I don’t cook the same. Luckily, I don’t ever have to cook for a crowd and Joey’s not picky. I’ve been meaning to make stuffed pepper, thanks for further motivating me to do it already!
YUMMMM, those look so GOODDD!!
Mmm the peppers look deeelicious! But what I’m really drooling over is that peanut butter…oh myyy
I just did a search on bloglovin and found your site. I’m glad I didi! These look great! I can’t wait to try them. my aunt has cancer had, and in finishing chemo, anyway she has a health aid from ethiopia and she brings injara, and lentils for lunch almost everyday, and I tell you they are so good. She brings me this spice from her country and you put that in the lentils, so now i’m so curious about lentils and want to cook with them all the time!
These look fantastic Chelsey! I am in love with that first pic! I really need to experiment more with lentils…they are so filling!
I don’t really give much thought to cooking for one vs cooking for a crowd. Since I live alone, I make pretty much whatever! The only trouble I run into is finding good casserole recipes that are easy to half so that I don’t end up with 6+ servings for leftovers! Haha!
These are in the oven i got heavy handed with the oregano…..can smell is all over the house haha. Hopefully its still good.
Okay i made these! they are super yummy!
Looks so yummy! We are trying vegetarian 2-3x per week and I will have to try this one!
Thanks for sharing these, they look really good!! I am not a vegetarian, but enjoy eating meatless a few times per week, whenever possible (my husband is a true carnivore at heart).
And I definitely do not cook for myself the same way that I cook for a crowd. For whatever reason, I feel much more motivated to cook for a crowd. When it’s just me I almost feel like “oh, what’s the point…” when I know that that isn’t really the case. Oh well! Something to improve upon!
I love “for one” recipes! Thanks so much! It makes my life easier.
Hi. I didn’t follow your recipe to the letter, but I used the same ingredients and these peppers were awesome! I am enjoying your blog and learning new ways to try old recipes, and even finding a few new ones. I want to eat more vegetarian meals. Over the past year and a half I have made a lot of strides and ideas like the ones I find here for great vegetarian meals helps a lot. Thanks.
Thanks for the great feedback, Tim! I’m glad you enjoyed the recipe!
