stuffed peppers for one

I had every intentions of making stuffed peppers for dinner today. Really, I did.


Making the peppers was my plan yesterday, but then I got home and well, I didn’t want to cook. It was sad, really. I enjoy cooking. I always want to cook. Put me in a kitchen and I’ll whip us up something good. (Really, I will – you can come for dinner any time you please. Yes Mom, I mean  you too.)

Then, today, a glorious thing happened – I was craving some kitchen time. I needed it – I wanted it – it had to happen or else I would spontaneously combust. So after school on my drive home, I was daintily (because “chomping” doesn’t sound lady-like) eating some raisins and almonds when I was getting antsy to put on my apron and cook those stuffed peppers.

But you see, when I got home, I had a lovely package waiting on my doorstep. Those peppers had to wait.
 

Ellen and I did a blogger swap this week, and she sent me all kinds of local Michigan goodies as well as a super sweet note.

I was spoon deep in this chocolate cherry peanut butter from Naturally Nutty when I realized I was sabotaging my dreams of those peppers. While this decadent nut butter far surpassed the nut butter of my dreams (seriously there are more cherries in there than I thought possible), this peanut butter would have to wait (for about 30 more seconds – really.).


So back to those peppers. I pulled back my hair with a bobby pin, pushed up my sleeves, and got to work. Just in time for someone to call and tell me he wouldn’t be home for dinner.

Charlie works so hard sometimes that he doesn’t make it home to sit down and have a hot meal with me. Silly Charlie – it’s okay though. Charlie is a hard working guy and is spread pretty thin in the summer months. The joys of being a landscaper.

I then proceeded to have an inner battle with myself for about 10 minutes. Should I make the peppers? Should I save the peppers for another night? Would Charlie (okay, you caught me – it was the Husband) want me to continue with my dinner plans without him?

Which is when I threw all caution to the wind and decided I was important enough to cook a wholesome and delicious dinner – even if by myself.

So that’s what I did.

I think it’s important not to make excuses for cooking. Yes, we are all busy. Yes, convenience foods are well… convenient. But at the end of the day, your body is the only one you’ve got – so you better treat it well with fanfreakingtastic foods that can be on the table in less than an hour.

This recipe has a lot of down time, which means while it was cooking, I was able to do chores around the house. Make the bed (at 5:00? I know… I know…), wash the dishes, play with the dog, make lunches for tomorrow, inspect the kitchen to make sure there are no more ants (there aren’t – Thank God.). By the time my dinner was ready, I was relaxed, in my pajamas, and ready to eat. Thankfully I saved all my excuses to explain why the dishes are still sitting in the sink.

Lentil Stuffed Peppers (serves one)

  • 1 large (REALLY large) green pepper, halved and deseeded
  • 1/4 cup basmati rice, dry
  • 3/4 cup water
  • 1/2 cup Trader Joe’s steamed lentils (or any 1/2 cup of prepared lentils)
  • 2 cloves garlic, minced
  • 1/4 cup onion, diced
  • 1 tbsp. olive oil
  • 1/2 cup diced tomatoes, drained
  • 1/2 cup tomato sauce**
  • 1 tbsp. tomato paste
  • 1 tsp. garlic powder
  • 1 tbsp. basil
  • 1 tsp. oregano
  • salt and pepper to taste

**to make the tomato sauce, I used the other half of the diced tomato can and pureed it until smooth – one less thing to buy!

Directions: Begin by combining the dry rice and water in a small saucepan and bringing to a boil. Once the water is boiling, turn the heat down to low and cover. This will need to cook for approximately 30 minutes before turning off.

While your rice is cooking, preheat your oven to 350 degrees. Halve and deseed your pepper and line a baking pan with foil and cooking spray. Pop those peppers into the oven for 30 minutes.

In another small pan, heat the olive oil over medium high heat and add your two cloves of garlic (you could probably make it three – you are eating alone tonight) and onion. Stir frequently and cook for ~5 minutes or until translucent. Add your tomato sauce, diced tomatoes and spices and simmer for 10-15 minutes.

By this time, your rice should be about done. Fluff the rice with a fork and add your prepared lentils and sauce, with about 1/4 cup sauce reserved. Stir until the rice and lentils are coated evenly with the tomato sauce. Pull the peppers out of the oven and crank up the heat to 400 degrees. Stuff the peppers with the rice and lentil mixture and top with the additional tomato sauce. Cook for an additional 10-15 minutes or until the peppers begin to char.

 

You know what? I’m glad I didn’t just pour myself a bowl of granola and call it a night. Mostly due to the fact that bowls of granola don’t make for the best blog posts and because I feel satisfied and good about my dinner choice tonight.

 

I may or may not feel more satisfied than I would have because I ate a zillion more TJ’s lentils cold while I was making this too. Say it with me: best lentils in zee world!

And now that  I have made a healthy choice, I believe I’m going to go eat about 320320392 more servings of that peanut butter. Because that’s what wives do when their husbands aren’t around. Just me?

The only regret I have is not making the Husband’s portion – these babies were good.

I love the idea of using lentils in stuffed peppers. I use couscous instead of rice but that would be a great substitute for ground turkey! Now that I’m thinking of going full-time vegetarian God knows I need ideas :)

Definitely not. I would take MUCH more time cooking for guests than I do for myself. I’d make a plan and mayyybe even have all of the ingredients I needed on hand.. :)
I do make fancy food for myself sometimes though. Its fun!

I usually do more experimenting when I am only cooking for myself-that way if it isn’t good I’m not disappointing anyone else. lol. If I come up with something good I will repeat it for a crowd! :)

Hi Bill - I haven’t personally tried TImber Creek Farms, but I do know that the produce they use at the Vegan Cafe in Lockport is from Timber Creek, and it is absolutely amazing produce. I would reccomend it!

I love stuffed peppers, especially with Ragu sauce. The best way, in my opinion, to cook them is in a slow cooker. I like the peppers to get super soft. YUM!

I was just talking to a coworker today about stuffed peppers! This recipe looks great…so flavorful!

I cook healthified meals for myself, but I know if I were to feed a crowd, something would have to give. The dish would still be healthy but I’d have to consider my audience and the collective taste palette.

I think, sadly, the only time I’d prepare a good meal just for myself is if someone else bailed on me and the meal was already in my mind/in the works. When my hubby works evenings, he gets free dinners at work, so I never usually make good meals for me…that should change. Let’s start a movement! Like tonight, he was working, so I had leftover black bean burgers…but, don’t get me wrong, they were amazing (leftovers and all…)

I generally cook a lot but lately I’ve def been feeling a little lazy about doing meals with more prep. I still like to eat fresh healthy food, but there’s been a lot of the same salads going on in my house!

I am hoping to get back on track with my more creative meals! :P

I definitely take it down a few notches when it’s just me. Which is why I repeat a lot of meals. But it’s ok. When I get tired of something I just phase to something new. :)

I love stuffed peppers. However, I’m horrifically impatient- so I’ve rarely gotten them to “perfectness”.

I was starving when I got home from the gym today and alllllmost shoved whatever I could find into my mouth (fiance was at class until late), but I composed myself and wound up making an amazing dinner! I made eatliverun.com’s Indian Dal (lentils!) with brown basmati rice (with some sparkling wine). This was one of the tastiest things I’ve made in a long time and it felt nice to sit down to a delicious dinner even though I was by myself.

I am the only vegetarian in my family- and even as someone who cooks alone and for one, taking the extra time to prepare a whole-foods dinner is SO WORTH IT, whether it is for one for for ten. I always feel ten times better when I am not rushed and convince myself that that is what I need to do.

Kudos for making the right decision! With delicious alternatives around (my those cherries sound tasty) I have often snacked my way to fulness and had to throw my dinner plans to the compost, often wishing I hadn’t.

Really, I don’t usually like green peppers - I generally favor their red and yellow counterparts - but I will definitely try this stuffed recipe. It’s something I’ve never tried but always wanted to. Baby steps!

My family and I make stuffed peppers, except we call them porcupine meatballs! It’s basically the carnivore substitute for stuffed peppers. It’s ground beef, rice, stuffed into green peppers :) Happy Friday!! It’s almost Memorial Day Weekend, Wahoo!!!

Naturally Nutty is such a great company and makes tons of great flavors! I especially love that there’s hemp and flax seed in them all so they’re even better for you! All GF and many of them vegan. If only I weren’t vegan, than I would totally live off the Butter Toffee flavor.

It’s hard for me to spend time making dinner if I’m just eating by myself. I should spend the time though because otherwise I just end up snacking all night.

If I have the time, I love to go all out on a meal that I’m just cooking for myself. It’s so satisfying! Of course sometimes when I don’t feel like cooking, I’ll just raid the kitchen, plop a bunch of stuff in a bowl with lettuce and call it a meal. :P

I don’t usually cook for myself the way I’d cook for a crowd because I actually have really simple taste! My favorite things to eat are roasted vegetables, salads, and some kind of carbs like quinoa or brown rice:) Those lentil stuffed peppers look amazing!

When its just me I don’t ever really cook for myself. I admit. I will grab some Subway or a previously frozen something from the freezer. Or make a sandwich, eggs, etc. I still try to eat a balanced meal over mindlessly snacking…but I wouldn’t call it cooking. If I could whip up things like you though I would!

And, I can totally relate to the thought process you went through - especially when I’m eating alone it can be hard for me to find motivation to cook, but sometimes I find it’s the best time to try a new meal that my boyfriend wouldn’t really like! And if it comes out a disaster or takes a lot longer than I expect, I don’t feel bad.

I just did a search on bloglovin and found your site. I’m glad I didi! These look great! I can’t wait to try them. my aunt has cancer had, and in finishing chemo, anyway she has a health aid from ethiopia and she brings injara, and lentils for lunch almost everyday, and I tell you they are so good. She brings me this spice from her country and you put that in the lentils, so now i’m so curious about lentils and want to cook with them all the time!

I don’t really give much thought to cooking for one vs cooking for a crowd. Since I live alone, I make pretty much whatever! The only trouble I run into is finding good casserole recipes that are easy to half so that I don’t end up with 6+ servings for leftovers! Haha!

Thanks for sharing these, they look really good!! I am not a vegetarian, but enjoy eating meatless a few times per week, whenever possible (my husband is a true carnivore at heart).

And I definitely do not cook for myself the same way that I cook for a crowd. For whatever reason, I feel much more motivated to cook for a crowd. When it’s just me I almost feel like “oh, what’s the point…” when I know that that isn’t really the case. Oh well! Something to improve upon!

Hi. I didn’t follow your recipe to the letter, but I used the same ingredients and these peppers were awesome! I am enjoying your blog and learning new ways to try old recipes, and even finding a few new ones. I want to eat more vegetarian meals. Over the past year and a half I have made a lot of strides and ideas like the ones I find here for great vegetarian meals helps a lot. Thanks.
