I love Wednesdays — I really do. I love Wednesdays even more when it means at the end of the day that I only have 2 more days of school left. Wait, no — I take that back. I have 1.5 days left. Love those last day half-days.
Let’s get started, shall we?
Alarm clock blared at 4:25 to go for my run. I didn’t like my alarm clock at that moment. Thankfully, breakfast was waiting for me when I returned.
Breakfast — 6:00 AM
Oh yes — the bowl of oats. It never gets old. And now with berry season upon us, it never disappoints.
- Katie’s voluminous oats trick (with whipped banana)
- 1/2 scoop chocolate Sunwarrior
- cinnamon
- fresh blueberries
- shredded coconut
- Trader Joe’s organic creamy peanut butter
Snack — 9:30
Did you expect anything else? Apples are easy to eat when I’m trying to teach. Don’t mind the fact I have recycled that photo for the last three weeks.
Lunch — 11:30 am
I had a salad the size of my head (seriously, this picture doesn’t do it justice). In the salad was baby spinach, tomato, cucumber, red onion, and leftover eggplant and potatoes. It was topped with balsamic and hummus — aka, the best combination in the world.
On the side, I had a serving of Trader Joe’s greek yogurt with strawberries, cinnamon, and a few Enjoy Life mega chunks (giveaway ends TONIGHT!)
My snack could not have come sooner. I would have eaten it earlier, but I’m not allowed to have any kinds of nuts in my classroom. I have a student who would have an anaphylactic allergic reaction if he came in contact with them. Therefore, my nuts have to stay in the teachers lounge. When I left school, I ate raisins and almonds — and once again, did not take a picture. I’m horrible.
Dinner — 6:15 pm
No, I did not eat Charlie for dinner! We went on a nice long walk before dinner since there were workers spreading mulch in the backyard. I didn’t want Charlie to think it was playtime with the poor guys, so we went on a looong and hot walk.
For dinner, I had kind of a random quinoa bowl. In the bowl:
- 1 cup cooked quinoa
- 1/2 cup white kidney beans
- sautéed eggplant, green peppers, onion, and garlic
After this picture was taken, I doused it with nutritional yeast and hummus. The hummus got all melty and delicious. I kind of want more.
Snack — TBA
I’m feeling a bowl of granola tonight. Maybe two.
I hope you’re starting to see why I don’t post what I eat every day — the only thing holding me back from eating Mexican food tonight was that I ate that LAST Wednesday. Repetitive much?

Three cheers for summer berries! The best thing I had today: golden raspberries. We got some in our CSA produce box yesterday, and they’re just wonderful. I had never seen a yellow raspberry before.

Your oats look amazing!! I think I gave up too quickly on Katie’s voluminous oats, for some reason I just wasn’t digging the next day texture. Do you reheat it or eat it chilled? Love the shredded coconuts on top, yum

Mmmm… eggplant! It’s been too long since I’ve had any. I have two Ichiban eggplant plants in my garden, with blossoms - so maybe I will have some soon!

I basically ate breakfast all day, so it’s hard to pick a favorite meal… so I guess I’ll go with a snack. Chocolate muffin yogurt mess
I would definitely be okay with eating breakfast 3x per day.

it is still the best of today….
I laugh at the pictures of lunch at school, only because my kids think “Mrs. H. you are seriously going to eat that?!!?” My response “Yes! And it’s delish!” (shhhh, don’t tell them I started a sentence with and….)
My kids thankfully don’t eat with me!!
Best thing I ate today.. is my current dessert.. chocolate withPB flour paste and bananas. No better combo

Seriously the best thing I’ve ate today (you’ll hate this!) is scrambled eggs, with a slice of cheese, some cilantro and sriracha…it was uhh-mazing! I still have a LOT of day left here on Maui though, so I’m sure I can top that since I’ve got some Nutella calling my name:)

I need to suck it up and try cold oats. The idea makes me cringe, but I feel like I shouldn’t knock it ’til I try it.
the best thing i ate…welll…the best thing i did was go for a boat ride at sunset with skylar in aruba. that trumped all food. for sure

I’ve eaten strawberries with breakfast, lunch and dinner. I love that berries are in season again!

The best thing I ate today was black bean and salsa soup from the Happy Herbivore. So easy and so delicious and mexican too

I’m so happy about berry season, they really do make a world of difference in bowls of oats and yogurt!
Mmm your bowl of oats looks amazing. It’d make me run an extra mile to know that was waiting for me! Ah peanut allergies. I had a few students with them, so my cooperating teacher and I had them locked in a cabinet in the back.
My lunch! Spinach, cherry tomato, cucumber, scrambled egg and hummus salad! The best salads are the huge random ones! One the side whole wheat toast with mashed avocado! I love salads right now

I agree! The Husband sat down to eat and asked “What is this?” (his bowl had more random ingredients from leftovers) and I told him that was what happens when we have a bunch of stuff just sitting in the fridge about to be thrown out! He wasn’t disappointed!

My heart weeps for anyone with a nut allergy. It’s just tragic. The best thing I ate today was VOOs topped with everything under the sun. I think it was so good mostly because I didn’t eat a snack before my run and was hungryyyy!

Ahhh I love WIAW because I really truly enjoy seeing what people eat all day long. How does the Greek yog make you feel?! I was thinking of trying some out again, except it really truly grosses me out..we’ll have to see how that goes.

i could seriously live off of mexican food, well that and desserts. that ginormous oats bowl looks amazing as well, and since i keep seeing this ‘steroitic oatmeal trick’ everywhere i have to try it out! and berries are always a tasty topping.

The best thing I ate today was a bunch of cantaloupe and some roasted chickpeas with Mama Pea’s Crackin’ Cauliflower recipe…mmmm!

Best thing….hmmm…actually, the NuGo bar thing I just ate. It was yummy and soo chocolatey! Plus, it feels good to eat solid real food again, after 4 days on an illness induced liquid diet!
Yessss you’re almost done!! I’ve heard so much about kids being allergic to nuts and them being banned from classrooms, but as a kid I never remember people being allergic to them. I really do wonder if more and more kids are getting allergies from all the sanitization and stuff we always do…in any case, it’s sad you can’t eat nuts in your own classroom!!
I don’t remember peanut allergies when I was younger either - I’m not sure why the sudden influx of them has happened over the last 10 years or so!

I love WIAWs! Its so helpful for me to see everything that people eat in a day and it makes me realize that I’m really not eating enough to fuel myself properly. The freedom all you guys have with your food choices is amazing; I need to learn to relax and do that too. Oh, and waking up at 4:25 AM to RUN?! Now that is REALLY amazing! The earliest I’ve ever woken up to work out was 4:45… and that only happened once, haha!
And believe me, yesterday was not even enough - I looked at it and said.. “wow, I need to eat more tomorrow!”
