summer beet and chickpea salad

Well, I think I did pretty darn well for the first night of my “no grocery challenge” — if I do say so myself.


The whole “no grocery” thing has been going well. I’ve learned a few things in the last two days.

1. It’s okay to hide the last banana from your husband in the fruit bin if you want to have banana oats until Friday.

2. It’s also okay to steal a roll of paper towels from your mom as you’re running out the garage door after being her messenger (Guilty. Sorry Mommasita.)

3. I miss almond milk. Like — really miss almond milk. Imagine me having the shakes and having delusional images of Almond Breeze dancing in front of me, just taunting me with their creamy deliciousness.

But, throughout it all — I have survived. And this time after eating beets, I didn’t even think I was dying. It was quite a miracle, if I do say so myself.

I also have to tell you that the Husband would not have touched this with a ten foot pole even if I tried to get him to eat it. He has this weird thing about colors of his food. They must be tan, brown, beige, or gray… sometimes green, but not always. The stark red of the beets mixed with the yellow of the Mmm Sauce was more than enough to make him back away and beg me to go grocery shopping.


However, I will persevere — and continue to feed him frozen pizzas because I’m a horrible wife.

Because wifey over here has two more beets she needs to cook up.

This dish is really simple — it was on the stove and on the table in about thirty minutes — less if you’re using a different kind of rice (which you shouldn’t — if you only have to cook rice for 10 minutes, nutrients have been stripped away. Go big or go home.).

  

Summer Beet and Chickpea Salad (serves 2-3 main dishes)

  • 1 cup uncooked brown rice
  • 1 can chickpeas, drained and rinsed
  • 1 large (or 2 small) beets and beet greens
  • 1/2 onion, diced
  • 3 cloves garlic, minced
  • 5-6 fresh basil leaves
  • 1 tbsp. olive oil
  • salt, pepper, and garlic to taste

Directions: You will first need to cook your rice according to the package directions. My rice takes about 35-40 minutes to make, so this needs to be done first. While the rice is simmering over low heat, begin to dice your vegetables. I cut up my onions and garlic first, followed by my beets — just because beets are so messy when you cut them up. Set your beet greens aside for later use.

Heat 1 tbsp. olive oil in a large sauté pan and add your onions and garlic. Stir frequently for 2-3 minutes and add your beets. Add approximately 2-3 tbsp. water to the pan, cover, and lower your heat to medium (5-6 on the stove reading). Stir every few minutes until the beets are tender (about 15 minutes). Once the beets are finished, add your chickpeas and cover again to heat through. Make sure your beet greens are washed thoroughly (no one likes sand in their dinner) and add them until wilted.

Serve this on top of rice or by itself and top with some Mmm sauce! This beet salad would also be great cold on a warm summer day!


This made a lot more than I was anticipating — which is why I ate it again for lunch today, and I might be eating some more of it for dinner.

Look at you getting all creative without going to the grocery. Funny that this makes your husband back away when it makes me want to run right over to eat some.
When Joey’s on his own he definitely eats a lot different than me (i.e. no breakfast, fast food, lots of meat and candy), but he’s such a good sport and will eat anything I make as well as cook anything I chose. It’s certainly one of the things I love most about him.

I always cook my beets in the oven and it takes so dang long. I guess I need to try cooking them on the stove. I bookmarked this one!

When I am not around or cook something Hunni doesn’t like he reverts to his bachelor days. He eats plain pasta, cereal and toast. So boring but it’s what he wants.

So funny - My Husband didn’t really have “bachelor days”. He went right from mom and dad straight to me (it’s not that weird, we’re only 23). He can do scrambled eggs… and… scrambled eggs.

Lol I hide the last pieces of fruit/candy/cookies/muffins/everything from my family too… it’s all about survival of the sneakiest ;) And beets don’t sit too well with my stomach, so I kinda tend to avoid them… although I used to love having them raw in salads.

I don’t eat meat and my boyfriend does. We cook vegetarian together though, and he is always welcome to add some meat on the side, but rarely does!

I always hated beets in the past, but am starting to actually like them :-)

I’m a vegetarian and my boyfriend is most definitely not a vegetarian. Thankfully, he does like to eat healthy. Some times he’ll eat an entirely vegetarian meal, other times he adds meat to his portion. Being that I do the cooking, he generally will eat what I make unless its something like tofu, BEETS, fake meat, etc. He won’t go near any of those.

My boyfriend eats way healthier than I do. It’s actually been a great influence on me! However, sometimes it’s annoying because I feel “guilty” for eating desserts or something processed. But then I just get over it haha.

I eat VERY differently than my family; ALL of them. I require a large amount of vegetables while they all require large amounts of meat. The husband is getting used to all of my eating habits after a whole year of marriage. I’m lucky that they don’t judge, they just accept and want me to be happy. Gosh, they are THE BEST!

My family eats MUCH different than me, but I’m slowly starting to wear off on them. They now ADORE oatmeal (with nut butter!!) and my mom and I LOVE roasted veggies :D

My family and significant other all eat meat. This is something that I haven’t been doing recently. When I make trips back home I take a lot of my own foods for back up if I need it. When making meals I usually make something that can be eaten as a side dish or a main dish so that he can have some sort of meat along with it.

my family cannot fathom a meal without meat so they look at my meals of beans and sweet potatoes as strange strange things….but they accept it and let me cook at my free will as long as i dont mess with their unfortunately mainly processed diet

For the most part my husband and I eat the same. Although tonight, I cooked hot dogs for him bc like you I’m trying to use up the rest of my fresh spinach. I made a spinach salad “concoction” for myself.

I only started to like beets recently and decided to plant them in my garden so I can enjoy them more this summer! This reicpe will be on my “to make” list for sure!

I love Mmm sauce, we tried it for the first time last night on lettuce wraps, and my hubby even loved it! Then today I used it on a turkey BLT sandwich (vs hummus) and it made the sandwich.

My family definitely eats differently than me! Other than my mom, my family members gag at the thought of green monsters, oatmeal, etc. They would stay FAR away from this beet and chickpea salad, but I’d eat it right up!

My family actually eats pretty healthy. Sometimes they will have a big hunk of steak, which I’m not into, but there are always lots of fruits and vegetables. Having a healthy diet is increasingly more important to my parents as they get older to combat any health problems. I’m actually really lucky to have a family who shares similar food values as I do.

This meal looks so delicious! I have to agree about items 1,2, and 3 at the beginning of the post. I’ve stashed away bananas, etc. in hiding places from Billy. I sometimes bring my favorite almond butter with me when I leave the house. ISSUES. And Billy and I have both been known to “borrow” household items from our parents. :) Billy and I eat differently, though, for the most part…fresh fruit is usually what gets us so I’m always sure to have plenty in the house!

I love the combination of chickpeas and beetroot! Have them in my lunch nearly everyday. Hummus on rice crackers with beetroot slices on top - delicious!

This looks fabulous! I can’t wait to try it! I’m sure the colors are a bit frightening to most! When I cook dinner for Andrew and I, he will mostly eat the same thing but there may be more or a different kind of meat or cheese involved in his portion. He is pretty open to trying things which is really great!

Chelsey, my dear, if you have rice you can make rice milk!
My fave way to eat beets is to roast them dry in the toaster oven and then eat them on top of some greens. Everyone in my famski eats differently than I do, though most days I’ll make something for my brother and/or my mom so they can get more fruits and veggies in. It’s usually a smoothie. So much effort it’s not even funny. I’m too kind ;)
Ditto and tru dat about the 10-min rice thing. Instant anything scares me.

This looks amazing, but it’s definitely a dish I would have to make for myself too. My dad and sister are pretty picky about what vegetables they will eat. Plus they don’t consider something a meal unless it has meat in it. :P It’s been hard living back at home this summer when we have such different eating habits!

It looks delicious and I’d never have thought of using beets since its a veggie I love, but don’t eat a lot (like it on my salads from time to time). My family eats pretty different from me. I had black bean burgers with soy chips for Easter dinner, they had hamburgers with sasuage.

The dilemma with me and the husband is he’ll make a suggestion for dinner and I may not like it, but then he’ll not make it for himself! This is where I insist that we don’t always have to eat the same meals. Maybe he would just rather have me prepare something even if it’s not 1st on his list lol

I think I might echo your husband’s feelings on food color. I just can’t get into beets and their alarminly red color. However the rest of the meal looks good…especially Mama Pea’s mmmm sauce.

I love pickled beets! I’ve only ever had them pickled, or just plain steamed. I hate the steamed ones, lol.

My family thinks a lot of what I eat is really weird and gross. Which is understandable for “normal” people, I guess. They also cannot fathom the idea of actually liking vegetables. But the worst is when I make “healthy” baked goods… I’m the only one that ever ends up eating them!

I love beets but don’t eat them all too often. I’ve never cut them up in pieces and cooked them in a pan like you did so I’ll have to give this a try.

My husband usually eats what I earcook, but something I’ll make him something extra like a side of pasta.
