Last night I went to bed really excited.

I was going to try out a new recipe this morning.

I scoured the internet high and low to find a perfect pancake recipe to use my newly acquired coconut flour with. Let’s just say I had a little trouble falling asleep last night.

(note: I am not going to tell you what recipe I used. Sorry.)

This morning, I was more than ready to get up when Charlie came to my bedside.For once, I didn’t mind. I bounded out of bed** like a kid on Christmas morning, happily ready to start working on my breakfast.

*I tend to exaggerate

Last night, I thought, “Oh pancakes would be nice in the morning.”

Now that it was the morning, I really wanted pancakes. Like — REALLY wanted them. Those pancakes were the only thing on my mind.

I had all my materials set up in my kitchen. My recipe was laid out where I could easily see it. I had my (very) little working space accessible so I could create this wonderfully anticipated breakfast.

When I follow recipes to a T, I double — no, triple — check everything to make sure I am doing everything right. Some call me anal — I call myself careful. There’s no room for error when it comes to Saturday morning pancakes.

All of my ingredients were in my mixing bowl ready to be whisked into pure pancake batter bliss. After I whisked, I thought something looked a little… off. But, I just brushed it off and kept going thinking I might just be delusional at 6:00 on a Saturday morning.

I turned my burner on high and heated my skillet until a droplet of water sizzled on the pan.

It was time.

I was so excited.

The batter was so thick.

There was a LOT of batter.

Pancake Saturday was going to be awesome — epic even!

I made perfectly portioned pancake batter blobs (yeah, not the best word, right?) on my skillet and started to wait for those magical bubbles to appear. Those bubbles that mean it is time for pancake flipping to occur, which is the most crucial step in any pancake making endeavor, if you want my opinion.

Well, I waited.

And I waited.

I waited some more.

I’m talking like five minutes here, folks. Now, if you’ve ever cooked pancakes before, you know this is not normal. If you’ve never cooked pancakes before, I’m going to tell you — this is not normal.

Um… pancake bubbles? Where are you? Don’t you want to get flipped with my really cool bendable spatula?

You’ll be happy to know my pancakes did not answer me  — that would have made for a great story though. Talking pancakes, who woulda thunk?

I thought to myself, well.. maybe these pancakes are different. Maybe these pancakes don’t get pancake bubbles. It was a valid thought — so I went for it. I flipped those pancakes like I’ve never flipped pancakes before.

I say this because my pancake batter was basically mush.

No velvety fluffy crust had appeared on the bottom of my pancakes.

My heart sank. I knew pancake Saturday was going to be a bust.

But I thought to myself — well, maybe if I let them cook for a little bit longer, they’ll get crusty enough to kind of look like pancakes. So, I waited.. and I flipped. No dice. I waited, and I flipped again.

That was a negative.

My patience was growing weary. No one in their right mind waits for pancakes to cook for twenty minutes — unless you’re me and you really want pancakes.

And I reaaaally wanted pancakes.

At this point, I was starting to see double. My hunger pangs were so intense I was doubling over in pain. Things were a little fuzzy. **

**exaggerating again.

So, I threw in the towel on that batch of pancakes.

Ohh no, I’m so sorry about the pancake fail! Itt’s highly hiiiighly unlikely it was, but I really hope it wasn’t one of my recipes :P
I made a cake one from a blog recipe - flattest thing EVER, and I made cupcakes once which were AWFUL! I tend to stick to folks I know will be good :) *ahem, Dreena, Isa, and OSG Angela :p

Ahh. Failures happen in my kitchen all the time, BUT.. I love that way you handled it.. MAKING OATMEAL! Totally something I would have done as well!

Wow, those look… delicious? Unfortunately I have had a few failures in the kitchen… especially starting to experiment with vegan & gluten free recipes. I wish I would have taken a picture of everything that failed so I can look back and remember them all haha - although I would probably get depressed with the amount of ingredients that were wasted… Hopefully you didn’t use up too much of your coconut flour!

Nuts! I hate when that happens to pancakes. I used to fail at making muffins, they would stick, burn, never rise, or taste awful. Then I become a-okay at them :D it helps when u have a good recipe….or actually follow the recipe ;)

Aw, I’m so sorry about your pancakes! It sucks when you want to eat something soo bad and then it doesn’t happen. I always try to make really simple things because I’m not really sure what to do in the kitchen haha…every time my mom tried to teach me when I was younger I told her I didn’t want to learn. Stupid stupid stupid….well, I’m learning slowly, and when I go home my mom and I are going to be making lots of stuff this summer..I’m sure I’ll have many recipe fails!

Yes, I’ve had my fair share of recipe failures. And yes, they’re always when I really, really REALLY want said item. Sorry about your pancake misfortune :[ I’ve found all coconut flour in pancakes never really sets…more like eating coconut cream with a little bit of crust on the outside. It’s not bad, per-say - but doesn’t compare to a normal pancake! I always keep that in mind when I do anything with coconut flour. It’s quite finicky!

Oh noes! I never experiment with new recipes in the morning, because if they go wrong, I can’t deal with the hunger beast that results - I always play it safe and stick with the tried and true.

But I’ve tried to use coconut flour in pancakes before, and they turned out wonky as well. They just would. not. cook… and it ended up basically being mush… I think it’s just something about coconut flour.

The pancakes I made for father’s day didn’t get the bubbles either….but I think it was bec the batter was thick. They did turn out though quickly. I would have been so disappointed too. At least your oatmeal looks delicious as always. :)

I’m so sorry to hear that! Do you think it’s just because the coconut flour doesn’t work in pancakes? I’ve definitely had my fair share of recipe busts. It can be sooooo frustrating and disappointing. I’m glad your oatmeal worked out, though!

LOVEEEE pancakes! My boyfriend hates him…it was almost a dealbreaker. Not really, but I do love them, I just love him that little bit more! But now you have pancakes to look forward to on another morning, and oatmeal is still delicious!

Anyone who doenst have them isnt spending enough time in the kitchen :)

And I am sorry about your pancakes…I was just leaving a comment on CCKaties post today that I suck at making them..the batter is either too thick or too thin and I am left with burnt paper thin crisps or thick logs that never fully cook.

Awww I’m sorry they didn’t turn out. Sometimes I’ve seen pancake recipes with no baking soda or baking powder and like, what the heck?? how would that work?? If I have a recipe failure I just eat it anyway cause usually it looks awful and tastes, well, not horrible. :) Once I made macaroni and cheese that ended up like soup in a baking dish but I let it set 5 minutes and then it was the best mac n cheese ever!!!!! :) :)

Aw sorry to hear about your pancakes. I attempted a loaf cake this afternoon with carob powder and added too much. It was great until the after taste hit. Bleh.

haha! This is why I stopped following recipes - More times than not, they fail me. I think I’m cursed :) At least if I fail when taking creative liberties, It’s somewhat expected (less disappointment) - But when I fail following a recipe, I get so angry (and mostly at the book itself, ha - because it could never be me just messing it up ;) )

I almost NEVER follow recipes exactly, which is why I’ve had a ton of baking flops. When at first you don’t succeed, make oatmeal.

According to my husband, I had lots of recipe fails before I started my blog. He swears it’s caused me to become a much better cook. Personally, I think he says this b/c he’s spent the better part of five months on the road for work. But I’ll take the compliment.
So sorry your pancakes didn’t turn out, but at least there is always oatmeal! :)

haha I would take the compliment and run with it. We’ve had many recipe fails for dinner over here - however, the Husband is good about it. He shuts up and eats it, but does tell me where I could improve, which is nice at the same time.

I fail all of the time at making food. My husband is the actual cook of the family. BUT I am getting better. I actually had a successful coconut flour recipe that I posted this morning. It was awesome! I am thinking about making it into pancakes tomorrow! I hope it turns out :)

I’ve learned that coconut flour=not the best GF flour for pancakes! I usually always use pamela’s GF baking and pancake mix for mine and it is awesome!
I’ve had many a baking fail. My most recent one was adding too much xantham gum to some muffins, it was an icky slimy mess :/

Awww poor pancakes :( I have had sad pancakes before but now I got it down. I used bobs red mill gluten free multi purpose, some peanut flour, and baking powder to make my fav pancake mix but it took time to figure out my proportions. Don’t give up, pancakes are sooo worth it :)

Sorry you didn’t get to enjoy the pancakes! I know how disappointing that can be. I once tried to make Alfredo sauce for my honey when we were first dating. It did not go well…this was before I knew about grating your own Parmesan cheese. The Kraft stuff in a can just clumped up and was awful!!! Luckily he forgave me and we just went to an Italian restaurant nearby. However, he is always a little weary now when I mention that I’m making Alfredo sauce, even though I’ve almost perfected it :)

That must have been so disappointing! I hate it when my heart is set on something and it doesn’t work out. Coconut pancakes would have been so delicious. Did the recipe call for baking powder??

I’ve had a few recipe failures before… these carrot spice muffins I tried to make last summer come to mind. I tried to healthify them, but they ended up coming out of the oven like little rocks. And they didn’t taste any better than they looked. :P

oh no, Chels, this simply won’t do. We are taking care of this coconut flour pancake recipe issue because they are my favorite and you need to enjoy them as much as I do.

Did you use eggs in your recipe? Usually that’s the *key* factor because it acts as a binder. According to some rando website:

“As a rule, you need to add approximately 6 eggs for every ½ cup of coconut flour you use in your recipe and will need to increase liquids because the fiber greatly absorbs liquid. Eggs will take the place of the gluten found in wheat, and help the fiber to stick together.”

I made chocolate chip cookies last weekend (a rather simple recipe… or so you’d think) They were RIDICULOUSLY flat and ugly.. but still tasted decent… and that’s all that matters, right?

I hate it when one recipe I was looking extremely forward to eating is a major fail!!! One time I tried to make an angel food cake a.k.a devil cake, and I put it the oven only to see smoke coming out of it a mere 5 minutes in! The batter seeped through the microscopic cracks in the pan, which has never happened before, and completely destroyed my oven!
Oatmeal looks delish though! :)

I suck at anything that is supposed to be easy. Yes, that’s right. I said suck. This alone drive the husband nuts. I can’t do boxed or prepackaged things, I burn them and do all sorts of things wrong. So the poor guy has to eat homemade things all the time. Poor him, I know.

I hate recipe fails! Especially when it uses a ton of ingredients, ugh. But it happens to everyone - nearly everything I’ve made this week has been a bust: super-dense bread, crumbly (!!) brownies, raw-in-the-middle pineapple cake… you’re looking pretty successful in comparison!

I’ve noticed that whenever I use coconut flour in a pancake recipe, the cakes tend to turn out “floppier” than normal ones, but I kind of like the way they taste like a baked coconut cream. That being said, I hope the recipe you tried wasn’t mine. If it was, so sorry to disappoint. :(

Awwww man! There’s not much worse than being SUPER excited for a recipe, only to have it turn out like crap. What a bummer :(

I got nervous for a second that it could be my recipe, but then I realized I was safe with the whole gluten thing. ;)
