So in reality, I ate all of this food before I went back to school, but I figured this week should have some sort of theme – because I’m a teacher, and we like themes? Perhaps.

Peas and Crayons

In case you’re new around these parts (if so, HI!), every Wednesday I like to participate in a blog event called “What I Ate Wednesday”, or in abbreviation “WIAW” – yeah, try sounding that one out.. it’s pretty fun. The lovely Jenn from Peas & Crayons hosts a blog party each and every week featuring what different bloggers are eating on Wednesdays. It’s a pretty fun event and it always gives me ideas for new meals!

So, what am I eating this Wednesday? (Or Monday, since this is actually when this all occurred!)

Breakfast – 6:00 AM


High Protein Chocolate Blueberry Oatmeal

Lunch – 11:30 AM

Lunch was a hodgepodge of foods. I had a piece of gluten free sandwich bread topped with hummus and green tomato slices. I also had leftover salsa & cheezey baked beans from a few days ago – I also sauteed up some swiss chard, eggplant, and mushrooms to go along with it. It was delish.

Snack – 2:30 PM

Apparently it was all about the blueberries and chocolate today today! I had a smoothie with:

  • 5 ice cubes
  • 1/2 banana
  • 2/3 cup blueberries
  • 1 scoop chocolate Sun Warrior
  • 1 cup milk


And about a whole melon – okay, maybe a half of a melon.. but it was a lot of melon.


Dinner – 7:30 PM

At this point, all I wanted was something easy, fast, and delicious. I came up with a salad with hummus, a sweet potato, and roasted broccoli. It got the job done.

Snack – 9:00 PM

Then to squash the munchies, I had a Jazz apple…

and some raisins with almonds to balance out the day!

wow that all looks delish! yum! i think the best thing i ate today was a huge bowl of kashi cereal and making a feta, raspberry and olive salad for lunch:)

The most delicious thing I ate yesterday was 1/2 a Snickers Ice Cream bar, and good news- they’re finally out of the house! ;)

And whenever I eat melon, I end up (almost) eating the whole thing, too!

My most delicious thing was a tofu egg salad - I’ve been a veganaise fiend these past few days and I made a faux mayo/mustard tofu salad with zucchini and squash instead of the traditional carrots and celery. It totally hit the spot!

mmm that sounds like a wonderful day of eats!!!! i LOVE your blog!! i am definitely a daily reader now :) that smoothie looks de-lish!! i will definitely try it soon!!! everyday is blueberry and chocolate day for me!!! what grade do you teach? my soon-to-be mother-in-law is a 2nd grade teacher :)

So far I had an awesome peach/banana/spinach smoothie for breakfast :)

I noticed that you didn’t show a morning snack…did the oatmeal keep you full for that long?? I can’t seem to go four hours without eating again!

The best thing I ate yesterday was leftover panzanella salad and parmesan basil tilipia I made for dinner the night before.

Both were super easy, light recipes, and both were outstanding!

the best thing I had was my chocolate frozen yogurt with thin mint pieces and peanut butter chips from Yogurtini! you can read about my layering technique on my blog… haha, practice makes perfect.

I haven’t eaten anything yet today, but I did bake some DELICIOUS smelling cookies. :D I’ll be eating those as soon as they aren’t 350 degrees.

Best eat lately?Hmm…I’ve been eating alot of this combo: Plain chobani, chocolate p. powder, flaxseed, almond butter and cinnamon. It’s wonderful.

I’ve been making that exact smoothie almost every day! Yummers. And I have absolutely NO control around melon. I’ve been walking around all summer with a watermelon baby ;)

That dinner looks perfect. I’ve been craving sweet potato like crazy after seeing it around the blogworld lately. Or maybe it’s just because Fall is coming :D And I think I went through about 3/4 of a cantaloupe yesterday. I thought my addiction with them had passed, but apparently not…

Oh school. So weird to not have to go back. I might miss school but I do not miss having to pack a lunch everyday. I’m loving your throw it together attitude. I swear those no-fuss meals are better than the ones you spend time slaving over.

Someone in my office made spicy feta dip…literally it’s feta blended with spices and lemon juice. It was addicting, I thought I was going to eat the whole bowl.

The best thing I ate today (so far) was the birthday cake fudge I made the other day!! SO delish!!
Also I’ve been a long time reader, and not so frequent commenter but I love your WIAWs. I always mean to participate but I always forget until about halfway through the day.

Hey Chelsey,
I’ve got an (embarrassing) thyroid question for you….I’ve been dealing with thyroid issues for the past couple years and it took forever for a doctor to figure it out. It turns out I also have something else that was causing my thyroid treatment to not be effective yet. One of the many things that has bothered me the most has been the weight gain. My question for you is when you went to a higher dose of thyroid and felt better, did you just lose the extra weight easily? I am trying to figure out what to expect when I start feeling bettr. Thanks :D

The best thing I ate today was a sandwich from the craziest bakery by the Toronto beach! It had the softest multigrain bread and was loaded with the freshest veggies and basil pesto spread! So delicious! Your oats look amazing!

I love eating nuts and dried fruit together! So chewy and crunchy! And so often times they are mixed in with other stuff but when you have them on their own its such a treat!!!

Aren’t jazz apples the BEST? I love them, but they’re expensive. Last time I bought some my son dropped the bag on the groud at the store and I was too embarrased to put them back, so I bought bruised Jazz apples. Ugh. They were still delicious! :)

That all looks delicious. So so so tasty :-) The best thing I’ve eaten today has been my morning vanilla sunwarrior, big banana, coconut milk and oats. All in porridge form. Divine…creamy, sweet, indulgent and healthy. :-D xyx
