Peas and Crayons

Can I just stop to say that I’m pretty sure that Jenn from Peas and Crayons is absolutely genius for coming up with What I Ate Wednesdays? Talk about blog exposure 101! I have been seriously impressed each week with how big this trend has become across the blogosphere. Not to mention I have loved reading (most) of the entries to get ideas for my meals in the future.

Today’s (er.. yesterday) were pretty typical of my daily diet. Some veggies, some fats, some carbs – all the good stuff balanced into 3 meals and 2 snacks. I like balance.. much more than I like stomachaches.

Breakfast – 5:45 AM

It’s starting to get cold in the morning now, which is making me want hot oats (just a little bit) for breakfast. I haven’t taken the plunge yet though – it’s still overnight oats for me.


And I cannot tell a lie – that wasn’t my breakfast either. It is way too dark in the morning for me to now take a decent picture of breakfast. Looks like I need to be making a light box in the near future! In my bowl this morning, I had:

  • 1 serving voluminous overnight oats
  • 1/2 scoop chocolate Sun Warrior
  • 1 tsp. raw cacao nibs (best idea ever!)
  • 2 tsp. unsweetened shredded coconut
  • lots of cinnamon
  • 1 tbsp. MaraNatha peanut butter (meh… I miss my TJ’s)

(insert Starbuck’s iced coffee here – I’m down to 3x a week now. I call that progress.)

Lunch – 11:45 AM

Lunch was actually kind of crazy. I usually plan on going out for lunch with some co-workers on Tuesdays, and I didn’t bring a lunch. Usually I’ll bring one just in case they go somewhere that I can’t get a good meal at. Of course, today I didn’t – and today is the day they all wanted to go to Portillo’s to get lunch. I would say I could get a good salad there, but I am not able to eat any of their dressings. So, I ran out and got the salad bar from Jason’s Deli.

I one upped it from last week’s picture – this week you get an empty box. Sorry – it was good.

Snack – 3:45 PM

On the way home, I was about 3/4 of he way done wolfing down my raisins and almonds when I realized I really am horrible at WIAW. Good thing there was a stoplight coming up, or else you wouldn’t have even gotten this picture.

Dinner – 6:00 PM

Dinner was uh-mazing for two reasons. One, we had a guest! I saw my mom this afternoon because she was babysitting my niece and nephew (they live down the street) until my brother in law and sister got home. I knew she would be getting done right when we were sitting down for dinner, so I invited her over. She has missed my cooking since I moved out last year, so I figured it was the least I could do.

The second reason dinner was great? Um, the food was awesome. I made a variation of Emily’s Black Bean an Butternut Squash Enchiladas – instead of butternut though, I used acorn because that is what I had on hand. It was a super easy recipe and I wanted to swim in the enchilada sauce. On the side, I sautéed up a zucchini and onion. You know I didn’t stop at just one either!


It was a fast and easy recipe – and delicious too! I really recommend you making it!

Dinner ended on a high note when my mom helped me clean the kitchen (for the second time) – I felt super spoiled! Thanks momma!

Snack – TBD

But it will (or did at this point I suppose) happen – no doubt about it! Just like there’s no doubt about how much I will laugh at watching SuperBad on TV right now (or last night – this is killing me!).

I really want to try those enchiladas taht Emily made. I’m thinking this weekend when I have some more time…
Best thing I ate yesterday? Probably a tomato + zucchini + basil salad. Sounds boring but they were garden fresh tomatoes and SO tasty!

Yummy! Dinner looks wonderful. The best thing I ate yesterday was my Tiffos Rancheros. I just love how easy (and cheap!) Mexican inspired dishes are!

I love WIAW! This is my third week doing it. It’s fun seeing what a typical day of eats is for everybody and I get a big bump in traffic from it!

I just bookmarked that enchilada recipe! I’m so glad you liked it. Also, I built a lightbox and it’s pretty neat, but I think I’m going to save up for some real photography lighting. The winters in New England are dark except for the precise hours I spend at school, so my photography will majorly suffer if I don’t!

Oh my heck, I HAVE to make those enchiladas!! Best thing I ate this week, so far, was my zucchini (grown in my garden!), mushroom, tomato (grown in my garden!), spinach saute! Yum!

I guess I need to get on the WIAW bandwagon - i’m just so forgetfull when it comes to taking pictures of my food.
Best thing I ate yesterday was a myriad of mexican food - I went to a recipe swap and the theme was Mexican. Lots of beans, rice, and chicken.

Mmm, those enchiladas are so good looking. I would miss your cooking if you lived with me (and then moved out) too. The best thing I ate yesterday was some pizza bread I made - in fact, the whole loaf is almost gone!

Those enchiladas sound so good! The best thing I have ate the past couple of days was definitely breakfast! PB & J protein oats! Yes please! :) I love when I have time to eat breakfast at home and cook up a batch of stovetop oats.

And Oh yeah, I eat Hot oats every morning with hand chopped almonds some kind of berry or mixed berries and a bunch of cinnamon TBSP of flax, almond milk, and either honey, stevia, vanilla extract or nothing…. Yesterday I made apple chips that were yummy but turned out more like raisins. The day before that I concocted a zucchini, oatmeal ,dark choc. chunk, banana, applesauce cookies SO GOOD!! I added 0 sugar and only a half cup of coconut oil :) Thanks for letting me share and teaching me about overnight oats.. Making those tonight!

PS: Nearly forgot. Best thing I ate today? Grilled salmon wit big salad and lots of veggies…it's my favourite thing! And a banana with Trader Joes almond butter - that stuff is crack in a jar. That sticks to the room of your mouth. And tastes amazing! :-D

I think a warm pita and hummus my husband and I shared for a snack! It was so good and hit the spot perfectly! I’m like you and am always so hungry I start eating and realize I should have snapped a pic after its too late! I loved the empty box pic!

Call me boring, but the best thing I ate so far today was a handful of Enjoy Life double chocolate crunch granola. I’ve been wanting to try this stuff foreeeeeeever but haven’t been able to find it in a store around here, and today I got a surprise in the mail. Eeeee so good. I’m on a cereal kick right now, and it managed to hit all the right spots. Loooove love love.

hi chelsea,
i was just wondering, do you ever have a snack in between breakfast and lunch?
even when i have a big serving of oats for breaky, i am hungry 3 hours later! i was wondering what it is in your oats that give them such staying power for 6 hours- or if you have a snack or something.
would love to put something in my oats that perhaps i am missing that would keep me fuller longer!

About half of the time I get hungry in between breakfast and lunch so I’ll have a snack. Sometimes though, I’m so busy that I forget! Some snacks that I usually have mid morning have protein in them - like greek yogurt or nuts!

I’ve been wondering for the longest time how to make overnight oats. I’m a cooked oats kind of girl but sometimes in a pinch, I’d like oats but don’t have the time. Or it is too hot to think about using the stove for a long time. I’ve been looking around for an overnight oats recipe that would give me the volume of cooked oats but still be cooked overnight. Would you share the recipe and insight for how you make yours? Thanks!!

That enchilada looks so delicious! I need to branch out and try more recipes. The problem is that I always forget to save the recipes that I find on blogs. It’s a good thing that I have a new Pinterest addiction! Consider yourself pinned!
