Hi Clean Eating Chelsey readers! My name is Ashley, and I blog over at Cooking for John.
John is my fiancé, and my blog is all about healthy recipes and restaurants we enjoy. I am fairly new to blogging; I just started on Memorial Day Weekend, but have been reading healthy living blogs like Chelsey’s for years!
Two years ago, in the spring of 2009, I was student teaching at an elementary school, and feeling exhausted! At first I thought it was because of my long days, with virtually no down time, but my exhaustion turned to dizziness and light-headedness, and I knew it was time for a doctors appointment. I met with my holistic doctor a few weeks later. My mom is also one of his patients, so he decided to test me for hypothyroidism, wheat sensitivity, and dairy sensitivity, since she had been recently diagnosed with all three. Lo and behold, I tested positive for everything.
At first I was angry. I felt as if my body was revolting; after all I ate so well! I had gone vegetarian a few years before, and had recently begun reading healthy living blogs. I was making sure I was eating enough protein, iron, everything that vegetarians need to be “worried” about- and then I end up having wheat sensitivity!
After my appointment, I eliminated wheat from my diet- which was hard for me. You don’t realize how much of something you eat until you have to give it up!
I had already cut out dairy, and was attempting to eat vegan at the time.
I went to the health food stores and bought gluten free bread, which was disgusting. It was a frozen brick, which crumbled apart when thawed, and was a far cry from my beloved Ezekiel Sprouted bread. I’ll tell you what- gluten free products have come leaps and bounds in the past few years! I gave up on the bread and decided I would just do without. Soon after, I discovered Food For Life’s Brown Rice Tortillas, which are delicious. Sandwiches now came in wrap form for me, but I was okay with it. I was feeling better, less gassy (TMI?), more energy, my body was much happier. I had also started to take a thyroid hormone, which helped me as well. I know Chelsey recently posted about her hypothyroidism, which makes me wonder if there is some connection between gluten intolerance and hypothyroidism.
Gluten is sneaky, and is hiding in tons of foods! I did a bit of research a few months in, and realized soy sauce has wheat in it. What gives? I switched to tamari, which tastes the same, but without the wheat. I learned that mostly all liquors and beers had gluten in them. Beer bothers my stomach, but liquor seems to be okay for me.
Dropping gluten was rough in the beginning, but I am so glad that I found out what was wrong and am able to eat to please my body. The blog world has been a fantastic source of information for gluten free living, I don’t know what I would have done without it!
Here is a list of some of favorite gluten free products. For you GF people out there, what are some of your faves? I’ve heard Udi’s makes fantastic products, but since they all contain egg I’ve never tried them.

· King Arthur Gluten Free Bread Mix
Sweet Treats
· So Delicious Cookie Dough Ice Cream
· Mary’s Gone Cookies- all flavors!
· Mama Pea’s Gluten Free Peanut Butter and Chocolate Chip Dough Balls
Noodles
· Ancient Harvest Quinoa Noodles- all varieties
· Explore Asian Organic Black Bean Spaghetti (this has more chew to it than actual spaghetti, but I love it with a peanut sauce!)
Proteins
· Tofu!
· Tempeh- I buy Lightlife brand. Some varieties contain gluten, so be sure to check the ingredient!
Snacks
· Clif Bars- my favorite are actually the the Z Bars, the kids version! J
· Cascadian Farms granola bars (CEC edit: These bars are not certified GF because they have oats in them. Oats are naturally gluten free, but frequently become cross contaminated. Some may be able to tolerate these bars, while others may not.)
· Nature’s Path Koala Crisp cereal
· Nature’s Path Crunchy Vanilla Sunrise Cereal

I actually buy Rudi’s gluten free english muffins and LOVE them.
Ezekial sprouted is by far my favorite bread though.
I have heard great things about the brown rice tortillas and even know I am not allergic really want to try them. Thanks for posting the list, I have noticed as well there are TONS more gluten free products, which I think is great.

I try to be gluten free as possible and its amazing how many things contain wheat. Luckily, there are some great products on the market

I have actually had the same symptoms, and I try to eat really healthy. I haven’t thought about being sensitive to these same things, but I will have to try cutting them out of my diet.
I can so relate to the bad GF breads! My doctor tested me out on a GF diet a few years ago and when I tried to make a sandwich with some GF bread, it totally just crumbled in my hands!
I’m glad there are better products out there nowadays!
I’ll have to try the tortillas! All the ones I’ve come across fall apart.
Where do you find a holistic doctor? It sounds like something I’d be interested in. Is he your primary care physician?
I also go to a holistic doctor - google “holistic doctors” in your area and some will probably come up!

My mom began going to our Dr. first, and suggested I see him. He is my primary care physician, but luckily I don’t have to see him very often! Must be those magical holistic healing powers.

I haven’t used it, but have seen commercials. It’s a site where consumers review services from health professionals to plumbers. Worth a shot!
I hate to tell you but Sami’s Bakery is full of gluten!!!! Just found out. I love, love, love that bread but it kept making me sick and it has alot of wheat in it and that’s what makes it so good, of course! sorry! (I haven’t found a bread that even comes close to that yummy bread)
Hi! The buns I bought look to be gluten free to me, the ingredient list is: Millet Flour, Brown Rice Flour, Water, Aluminum Free Baking Powder, Sea Salt, Organic Ground Flax, Cultured Brown Rice, and Ascorbic Acid.
Perhaps their breads have gluten in them?
It does say it is produced in a facility with wheat products, and there may be traces. That could definitely be problematic, I never noticed that!
I like a lot of foods that are naturally gluten free (even though I’m not GF)….but a lot of the more processed gf foods I can’t stand! I am sorry but those brown rice tortillas taste like cardboard to me LOL! I bought them once and they completely feel apart on my after I thawed them out….not fun! But otherwise, a lot of gf stuff is pretty tasty!!!
I love Food For Life’s brown rice bread and Trader Joe’s bread. I also like my flourless pb reese’s cookies, which you can find on my recipe page. Glutino pretzels are AMAZING, but extremely pricy so I only find them in cupboard every few months. I also love brown rice pasta. Tastes just the same!
I love Mary’s Crackers! They are so good! And sunshine veggie burgers are my favorite brand of veggie burgers!
Are clifbars really gf? I didn’t think they were, I’m so curious now!
You’re right, regular Clif Bars have Barley malt in them, so they aren’t gluten free. But the Z-Bars, while not certified GF, don’t contain and gluten ingredients.
I’m gluten-free and love Two Moms in the Raw products. Their blueberry granola and chia bars are great for breakfast or anytime snacks. I used to eat Larabars, but now I make my own! When I want something savory, Mary’s Crackers are great with hummus.
Chelsey, do u take Synthroid or Armour? I was recently told I’m severly hypothyroid and I’m gluten free as well. I find I do much better gluten free. I’m afraid to go on anything for throid cause I’m underweight and having a hard time gaining and I’m so scared it will speed up my metabolism.
Hi Amy! I actually take synthroid. I was nervous last year when I started to take it last year because I was underweight as well. My doctor did not understand how I could be hypo and be underweight as usually people are overweight! I’ve actually gained weight since regulating it and feel so so soooo much better since starting it. Although I wish I didn’t have to be on it (and don’t want to be on it for the rest of my life) but I would be lying if I said I didn’t feel al huge difference because I do.
Thats so good to hear Chelsea because my doctor is sendoing me to an endocrinologist Tuesday because my hairs falling out bad and he said it could be due to the thyroid or being underweight. I’m glad to hear u didn’t lose weight on it.

Chelsea did u lose tons of hair before u got on the thyroid meds? Mine is so bad and I’m hoping the meds will help that.
No, I hadn’t lost any hair, but I have heard of people who did!
I didn’t lose any hair either, thank goodness because I don’t have much to spare!
I’m also hypothyroid, gluten-sensitive and dairy-sensitive! It’s nice to know that I’m not the only one.
I second the recommendation for Ancient Harvest Quinoa Pasta — even my gluten-eating boyfriend loves it. I also recommend Bob’s Red Mill Gluten-Free Cornbread Mix. I’ve noticed that Bob’s Red Mill products tend to be hit-or-miss, but this one’s a winner. I’ve been successful using applesauce as an egg substitute with this mix, but I’m sure other egg substitutes would work as well. I especially recommend adding some fresh corn kernels to the mix. It just tastes better!
