I’ve decided I’m going to buy a treadmill and put it in the kitchen.
Do you think it’s too late to tell the Husband a treadmill is on my Christmas list? We’re t-12 days until Christmas, but I think one could be expedited over to the CEC household.
It actually, in fact, has absolutely nothing to do with the butter and chocolate that were lovingly put into these cookies.
It actually, in fact, has everything to do with my gym not opening up at 4:30 in the morning anymore. Okay, that’s a lie – technically, it never was supposed to open up at 4:30. It is really supposed to open up at 5:00. But, seeing as we have the best opener in the history of gym openers at my gym, she was willing to come an extra half hour for those of us who, you know, have to be done with their workout at 5:15 in the morning (and yes, there are other crazy people out there like me).
So here’s my dilemma – as of tomorrow, I lose out on my morning workout. This puts quite a damper on my excellent time management skills when it comes to exercising, working, blogging, and relaxing on my couch with my puppy in my lap. I’m sure you could imagine. I came up with a few solutions that might help me through this tough transition period. And by transition period, I mean sleeping an extra hour and not really fully realizing what I am missing out on. Bam.
One, I could still get up at 4:30 in the morning and cook to my heart’s desire for an hour before getting ready for work just to make sure you have recipes waiting in your reader. (uh.. no.) Two, I could exercise after school and spend less time with you all. (definitely not an option.) Three, I could install that treadmill into my kitchen so I have the ability to cook and run at the same time. (sounds like a fantastic idea to me!) Oh, and the treadmill would have to go in the kitchen because there is absolutely positively nowhere else for it to go unless I took over the Husband’s office – which of course, is always a possibility.
Seeing as none of those options are currently working for me, I decided on number four. Stop actually cooking things. Spend only 4 minutes making no bake cookies. Make them into hearts because I heart you and Love Grown’s Christmas cookie contest for Love Bloggers. Lick the spoon full of mint chocolaty mocha goodness and not share any with friends. Eat a cookie and decide later how in the heck I am going to manage my time from now on.
Yup, I just solved the world’s problem’s one cookie at a time.
Oh, and these definitely are not a health cookie. Thank me now – or later.
Mint Chocolate Mocha No Bake Cookies
Makes: 2 dozen
Difficulty: Easy
Total Time: ~10 minutes
- 1/2 cup turbinado sugar
- 2 tbsp. earth balance
- 1/2 cup mint chocolate soy milk
- 1/2 cup peanut butter
- 2 tbsp. coffee
- 2 tsp. vanilla extract
- 3 tbsp. cocoa powder
- 3/4 cup Love Grown Cocoa Goodness***
- 1 and 1/2 cup old fashioned gluten free oats
Directions: In a medium saucepan, combine all ingredients except for granola and oats. Stir frequently and bring to a boil. Allow liquid to boil for 1 minute and remove from heat. Stir in the granola and oats until coated. Using a rounded tablespoon, drop cookies onto wax paper. Allow time to set at room temperature or in the fridge. Enjoy!
**If you do not have any granola, you can substitute another 3/4 cup oats
Uh, I could still use that treadmill.

Ugh, the lack of daylight in the winter causes so many problems! I cooked dinner during lunch just to have the appropriate light to photograph it today if it makes you feel better. I swore I’d never be one of “those” bloggers and yep, that’s what I’ve become.

I feel your pain! I did get an elliptical with my first paycheck as a real teacher a couple of years back- totally don’t regret it (but I still want a treadmill too. Maybe I’ll have an at home gym before too long-HA! I want to have my cake and eat it too) Keep thinking of ways to make it work- I know you will.
PS- we love you, please don’t run outside at that hour. That would scare me. Okay, that’s all.

You’re never going to believe this but…I brought down a bag of that VERY LOVE GROWN granola with me to Aruba…and it’s unopened. And I love no-bake anything in this heat. My kitchen is ungodly hot down here.

A treadmill in the kitchen is genius, think of the multitasking! You solved my problems with this recipe, my oven died on Sunday and I haven’t had time to even start looking. This is my go to for cookie swaps this weekend!

Ugh that totally stinks about your gym! My gym doesn’t open until 5, which makes it impossible for me to workout, get home & shower/get ready, & leave for work by 6:40… it just won’t happen! I take advantage of working out in the AM over summer break, but unfortunately, I have to go in the evenings during the school year, even though I’m not happy about it!

I would literally be having a panic attack about the gym thing. I am a planner down to the core, and that would just shake me up! Are there any other gyms you can switch your membership to that open earlier? Maybe a 24 hour gym? (the problem with those is that most of them usually don’t have a pool. if you swim) Those cookies would definitly help my anxiety out though. going home and making after work!

I say go for the treadmill….There is NO room in my house for one either…so I do feel your pain. Where I live the gym does the same thing. The girl that opens is there so she just opens up for everyone at 4:30.

the mint chocolate soy milk was a seasonal item, but yes you can get some sort of chocolate soy milk there. As for the Love Grown, an easy way to order it is off Amazon!!!
