Please let me take a moment to stop and tell you I had no idea how attached you all were to my “What I Ate Wednesday” posts. For a few weeks, I thought it had been getting old, so this Tuesday (when I usually take my pictures), I left my camera at home and didn’t take any pictures of my really boring food that was Tuesday.

When Wednesday rolled around, I got a few comments asking why I didn’t post a WIAW post. I got a few emails. Yikes, folks! I am forever sorry. Let me make it up to you today.

Breakfast – 5:45 AM

I have really been enjoying my chocolate protein oats lately. You caught me though – this is a recycled picture. I do not have any more cranberry sauce, although I did just get a bag of cranberries in my CSA box (which I’ll show you later!) this week. I also had my two cups of coffee to wake myself up (and warm myself up).

I was in such a good mood yesterday morning because it was the first time all week I didn’t wake up feeling like crap. Every other morning this week I have woken up with a raging headache and have been really warm without having a fever. It was weird. I have no clue if I was sick. I just rolled with it.

Lunch – 11:30 AM

Let’s all thank my mom for giving me some spinach on Wednesday night so I could make a salad for lunch. It was a delicious one, chock full of great toppings!

  • organic baby spinach
  • diced tomato
  • red onion
  • 1/2 avocado
  • 1/4 cup black beans
  • nutritional yeast
  • balsamic vinegar
  • Sabra hummus

On the side, I had Greek yogurt with strawberry slices and a ripe juicy orange –> oranges are SO good right now. You must buy some!

This lunch made me feel really good. I have been lacking in the greens and fruits department lately, especially in the fruits. I have been eating way too much sugar, as one could see on my 13 year old boy face right now.

Snack – 3:30 PM

On my way home from work, I ate the usual – raisins and almonds!

And when I got home, I was still kind of starving (okay, my stomach was definitely grumbling), so I ate a handful of Eat Your Vegetables chips dipped in hummus.

Which really fueled me well for my run outside – not. I had a huge knot in my stomach after that! Oh well, I pummeled through a 3.5 mile run in the cold cold weather, 25 mph winds and all! I don’t understand this stinkin’ Chicago weather. Yesterday it was 55 and rained 2 inches (which if it were snow, it would have been 20 inches!!!!). Today, it started out at 50 degrees and by the time I got out of work, it was 34. What the heck Chicago. Make up your mind.

Recipe to come – oh my gosh was this good.

I of course am going to end my night with a snack – I’m trying to decide between my two favorites, which I’m sure all of you could name before I count to three. Granola or a protein muffin. Decisions, decisions.

What is the one thing you’re looking forward to the most in the next week? = being at the beach in Aruba. Hopefully it will stop raining. We’ve had tons of rain. But I’d rather be here with rain than back home, not complaining!

Some people say variety is the spice of life. But when you find foods you love, they are definitely worth repeating… over and over and over:) I am looking forward to finally wrapping all of my Christmas presents and lounging in my santa snuggie by the Christmas tree.

I just though you didn’t eat for an entire day ;) ….kidding, I was thinking that we are all super busy and just are putting our time into the things that are important to us….. Christmas break is so close! Hooray! I love my kids and all but I am *so* ready for time away from them.

Oh, Jesus.
I’m travelling and staying at my uncle’s house, which means I’m not really eating much…
Which obviously means your meals look EXTRA-awesomesauce :)
Seriously, you HAVE to teach me how to make those oats. I try, I read the intructions, but the results are (almost) always unedible :/
Oh, and by the way - you’re still running Disney’s Half Marathon in January 7th, right?
I’ll e-mail it about… we’re having dinner at Cinderella’s Castle, but we have no plans for lunch!
