When purchasing gluten free bread, I always go to Rudi’s. Their products are soft, don’t crumble, and are almost the size of regular bread unlike other companies out there. If you’ve never had gluten free bread before, the slices are like ridiculously small – like, half the size of slices of bread you probably get in your glutinous packages. It’s heinous!

So anyways, back to what I was saying – my mom introduced me to Rudi’s many moons ago (read: like last year) and when I don’t have time to make my own, I buy Rudi’s.

I just realized today that with my working all week and bringing my niece and nephew into the city on Friday for some holiday fun, I probably am not going to have time to whip up a loaf of bread to use to make my Christmas stuffing and breadcrumbs.

After being afraid of it for most of my life, I finally discovered that Bread Pudding is a great way to use up extra bread…even OLD bread! The possibilities are endless - savory or sweet! And Bread Pudding can be breakfast, lunch, dinner or dessert.

Honestly - we don’t have bread in the house much anymore since I’ve gone gluten-free! The hubby always wants to make ranch toast with leftover bread though — basically like french toast. I just like regular toast & PBJs :)

When I have leftover gluten-free bread I do process it into breadcrumbs and freeze them - great for making veggie burgers later on! But I also like to dip bread in soup and it doesn’t have to be super fresh for that - or toast it! Yummm…

I love bread. Seriously, it is my favorite food on earth. Then I went gluten free, and I had to break up with bread because all the gf breads I tried were terrible. I’ve never tried Udi’s though, so maybe there is hope. If I were to eat bread, my favorite way is toasted with peanut butter and honey. Or havarti cheese and a glass of wine.

Rudi’s is my all-time GF bread and they stopped selling it at our local Costco recently!!!!!! I cannot find it anywhere else and all other GF bread I’ve tried is awful!

I liked it for having the occasional peanutbutter and jelly sandwhich-oh how I miss those since I went GF a few years ago.

I love Angela’s recipe from Oh She Glows of a cashew butter and blueberry jam grilled sandwich. Its the perfect twist from the traditional pb&j (not that I don’t love that too!) Bread is a fantastic staple to make anything from veggie burgers (it helps hold them together), to bread pudding. Even just eating it on its own is great.

Yup - if I can’t make my own bread or rolls, I always make Rudi’s my go to choice. It is sooo good and not loaded with junk. Their multigrain rolls are probably the only processed food that ever ends up in my shipping cart.

Hi Chelsey, I find this question so hard to answer (indecisive much?) You betcha. Well, I guess I’ll go with the all tried and true toast because you can top it with whatever your little heart desires. For instance, I made some gluten free bread last night and I’m going to toast it and top it with some nutritional yeast+hummus and some peppered tomatoe slices right about…now. :)

My favorite way to use (up) bread is to recreate restaurant sandwiches…my latest and greatest (read: favorite):
whole grain bread (lots of seeds and fun stuff) with smoked turkey, vermont cheddar cheese, homemade guac, lots of shredded lettuce, red onion…pressed in a panini press (read: in a skillet with a lid that I put something heavy to to create the ‘press’, ha!).

I am obsessed with Rudi’s Whole-wheat English muffins! I have half of one every morning… Here’s my morning breakfast ritual:
1. Cook three egg whites in a small pan.
2. Slice english muffin in half and place one half in the center of the egg whites while making sure the entire slice is coated with egg whites.
3. I add little pieces of fontina cheese all around.
4. When it’s cooked on one side I flip it to cook the other side.

And Voila! My favorite breakfast is ready….So instead of having the usual “Eggs in a Hole”, I have “Bread in a Hole of Eggs” :)
