a year ago today

It’s hard to believe, but on this day last year, Chicago was hit with almost two feet of snow. Very ironic since we have had weather in the 50’s for the past two days. I don’t think I ever remember a time when that has happened in January/February! While I sure don’t mind snow days, I don’t mind nice weather even more!

It’s Wednesday everyone — you know what that means!

Yesterday morning started bright and early after quite a restless night of sleep — 4:30 AM the alarm clock went off for me to get up and complete my back/bicep workout.

This was a new workout, and it was fairly challenging. It was much more challenging than the last back/bicep workout I did for the last two weeks. I enjoyed doing a few new to me exercises as well — I had to watch a few videos to figure out what in the heck I was doing!

Breakfast — 6:00 a.m.

I was ready to gnaw my arm off by the time I got home from my workout. Something about weight lifting makes me starving!

Breakfast included a big bowl of banana pumpkin oats with an egg white whisked into it. On top I had chopped apple, raisins, and peanut butter. It hit the spot.

Snack — 9:30 am

As a quick snack during my plan period, I ate about 1/2 cup of cooked peanut butter cacao quinoa with a little bit of almond milk tossed into the mix. I heated this up in the microwave in the teacher’s lounge — it was just what I needed to get me through the rest of the morning!

Lunch — 11:45 a.m.

I had some issues to take care of during the first half of lunch today, so I didn’t sit down to eat my lunch until a little later than normal. I packed a salad, which wasn’t a large and in charge as I enjoy them. Needless to say, I need more greens!

This salad was topped with roasted broccoli, tomato, onion, carrots, nutritional yeast and hummus! On the side, I had a passion fruit Chobani!

Snack — 4:00 pm

On my way home, I had the usual snack — it was much better than it usually is. Why? I don’t know.

Dinner — 6:00 p.m.

I wasn’t into cooking anything too extravagant this evening — all I wanted was simple and comforting food! I made stovetop potatoes by pan frying them in about 1 tbsp. of olive oil for about 15- 20 minutes. I also sautéed some kale and made eggs for the both of us.

Snack — 8:00 p.m.

I ended the day with some Greek yogurt and a protein muffin with a peanut butter spoon.

A big bowl of curried celeraic fries with some sweet chilli sauce for dipping! I ate a whole celeraic! Delicious, comforting and nutritious!:) Don’t give up the WIAW, you switch it up a little and it’s the fun of sharing!

This winter is drastically different from last year’s! I went outside without a coat yesterday…it’s crazy. Last year’s ice storm was ridiculous, but I’m not going to lie, I kind of miss having those days off :) .

That salad looks great! I love putting all sorts of roasted veggies on top, you don’t even need dressing when you do that.
For your almond and raisin snack, do you measure out how much you bring, or do you just put a handful of both into your baggy?

Just a handful of each - I’m sure it’s pretty close to serving sizes - one serving of each one of those is about 1/4 cup. I just kind of eyeball it though!

I totally understand, I eat the same things every single day. I’m okay with that, I own it. At least I know what to buy at the grocery store! :)

Wow I’m super impressed by your lifts- my biceps are definitely my weakest body part! Question about your protein muffins — do u think I can make them in the oven? We don’t own a microwave at home as my mom is anti-radiation (don’t ask ha)!

I’m not sure - i have never tried it in the oven, but I don’t see why not. I would say cook them on a lower heat 350 or 375?

I feel the same way at times with my eats. I always say I want to switch it up but then why should I mess with a good thing? I promise, people never get tired so seeing what you eat….I think that is a large reason why people read blogs actually.

The last comfortable meal I add was veggie chili with couscous and goat cheese. I haven’t had pumpkin oats in weeks but seeing yours makes me crave them. Who says pumpkin is just for Thanksgiving!

Cereal is my comfort food and I am eating it right now! If I’ve had a long rough day and don’t want to cook, cereal is my go to food. Some shredded wheat with skim milk and cut up banana….love!

I’m still so impressed you can make yourself get up that early. I struggle to walk Chloe a mile at 6:40!

aaand the reason I don’t do WIAW every week is due to my extreme lack of changeup in meals. I’m so boring. but I like what I like. ;)

winter sure is weird this year… i’m not complaining though. the arizona girl inside of me loves it. ;)

my husband and i went to a utah jazz game on monday night and we shared a big bowl of Farr’s ice cream that was rich, creamy, and oh so delicious. i can’t remember the last time i had REAL, full fat ice cream… it was so decadent! (ok, so it wasn’t a meal, but it was still totally comforting and delicious.)

I eat the same thing everyday of the week. Friday is my only exception since the hubby and I have to try a weekly date night then, but the meal still involves salad. I always find my oatmeal and coffee comforting.

Hahaha I eat a lot of the same things too it’s so funny. Your salad looks great though - I get so off salads at this time of year and you always remind me that if you roast some veggies and put them on top it makes a whole new - winter kind - of salad!

Glad you’re having a “heat wave” in the middle of Jan. in Chicago. I remember that winter was soooo long and gray and awful about this point in the year, so anything to break it up is a big welcome relief. Enjoy!

I just recently discovered your blog. I’m basically a vegan but still eat eggs and I feel like you might be a vegan too? But it seems like you eat eggs also, and yogurt? Maybe you are like me and cheat sometimes! :) Just curious if you have changed anything up recently. Thanks!

:) Thanks for being here! I’m a “declared” vegetarian but not a “declared” vegan. I wasn’t eating eggs for a while because they weren’t appealing to me, but I’ve recently found myself enjoying them again! I usually stay away from dairy because my body doesn’t digest it well, but I can tolerate greek yogurt really well. Both have been really great protein sources for me recently!

This has been quite the winter! I’m loving it though, as I am not a fan of the snow!! :) ha
I have never thought of adding an egg white into my oats, that’s a great idea though! Great for some added protein! I’ll have to give that one a try!
Love WIAW, gives me great ideas to switch up my eats, because I always eat the same things too!

I’m glad NYC has had a light/non existent winter (knock on wood)…being new here I don’t know if I can handle walking around in the snow!
Your pumpkin oat breakfast looks sublime! And I never really thought about adding a dollop of hummus to my salad so thanks for the idea.

I am a creature of habit, and tend to stick to the same basics foods all the time. The last comforting food I had was peanut butter banana crepes this morning, yum. The vanilla ice cream cone I had from McDonalds this afternoon though was not comforting and reminded me why I never, ever eat at fast food places.

Weight lifting makes me soo hungry too! My appetite is always raging on strength days. I guess that means we’re working hard. (:
The last comforting meal I had was a brown rice, tofu, veggie bowl that I threw together last night. Topped a combination of balsamic, dijon mustard, and a few other spices. Simple and delicious!

What type of different peanut butter brands have you tried? I swear I saw a different brand in one of your posts that wasn’t this one or a peanut butter company one…

Hi Lauren, I’ve tried a lot of different peanut butters - but all of them have been “natural” or “organic” peanut butters. I love Smucker’s, Trader Joe’s, Peanut Butter Co., and Justin’s. All are amazing!!

Thanks Chelsey! For some reason I came to a website.. that sold all natural/organic peanut butter. It was a women who came up with her own recipe.. ah! It drives me nuts when I want to try out a product and can’t remember where the heck I found/saw it!
