This has nothing to do with anything in this post and I probably have mentioned it before, but I think one of my all time life dreams is to be on Wheel of Fortune. As I was watching it last night (Couples Edition!), I thought about how the Husband and I could have rocked that special and went home with a million dollars and a trip to Jamaica. Just sayin’.
Yesterday came and left in what felt like an instant! Whenever there are “special” days at school, the time just flies.

I started my day out bright and early at 4:30, a little upset that it only snowed like 1/8 of an inch. I headed out to the gym and completed Day 30 (minus the cardio) of LiveFit which made my arms want to fall off just a little bit. I was okay with it until this workout called for me to do 75 pushups. I’m sorry – what? In typical fashion, about a third of them were done on my knees – it was hard!!
When I got home, I made breakfast after getting ready for school – and I am now aware that I need to switch up breakfast because you’ve seen the same thing for at least a month.
Breakfast 6:00 AM
Same picture, same bowl as last week.
- 1/3 cup oats
- 1 cup water
- 1/3 cup almond milk
- 1 egg white
- 1/2 banana, whisked in
- 1 tbsp. chocolate protein powder
- 1/2 cup blueberries (they’re in there!)
- cinnamon
- almond butter
Although, whoever told me I needed to store my almond butter upside down in my fridge is a genius – it really thickened it up! I am almost an almond butter convert – almost.
Snack – 9:15 AM
I had a ridiculous amount of meetings yesterday – one before school, one in the morning, and one in the afternoon right after lunch. I had a sub for part of the day while I was out. In between my first two meetings of the day (and during my plan time), I ate a fried egg with some nutritional yeast and ketchup. It did the trick in holding me over until lunch!
Lunch 11:30 AM
Lunch was deeelish! I made some of my mom’s veggie chili on Sunday and have been bringing it for lunch the past few days. On the side I ate a piece of my homemade gluten free sandwich bread and topped it with mustard and avocado once I toasted it at lunch time.
I also grabbed a bag of carrots from the fridge last minute only to find that there were like only two carrots in the bag – epic fail. Instead of eating carrots, after lunch I dug into some of the dark chocolate my students got me. It was glorious.
Side note: Someone asked me last week if I ever eat chocolate and/or sweets. The answer to that is – YES! Every day! I typically forget to take pictures of it, but every day after dinner I have a few pieces of dark chocolate. I refuse to not give into that craving.
This afternoon flew by – I had so much fun watching all of my kids pass out their valentines and indulge in a few sweet treats.

Okay, so really this was my dinner on Monday night – BUT! My dinner last night was boring. If it makes any difference, the Husband ate these leftovers yesterday. We can pretend this is what I ate instead.
After dinner I had some more dark chocolate (Lindt with sea salt is where it’s at – this girl got me hooked on it) and parked my booty on the couch for the rest of the night while I watched the Husband paint our bay window.
Another Side Note: The Husband came home and surprised me with some flowers this afternoon before dinner! I wasn’t expecting anything since we celebrated over the weekend, but it was the highlight of my day.
Snack 8:00 PM
Before I headed to lay in bed to read, I ate my usual snack of a pumpkin protein muffin, some Greek yogurt, and half an apple – all topped off with some almond butter of course!

I had a bite of some delicious dark choco. almond bark and lemon custard cakes with strawberries for dessert. Yum!

I am really good about sweets. I hardly ever crave or feel the need to have them. My weakness is Peanut Butter, I could seriously eat a whole jar in one sitting. Sooo I indulged in some Peanut Butter, just a spoonful or 4…eeeek. It is one thing I am trying to cut out of my diet because I feel like I eat so much of it, but it sooo hard. Any ideas on how to stop craving Peanut Butter?? I have tried not buying it (doesn’t work…it really does call my name the whole time I am grocery shopping) and I have tried PB2 (makes my stomach feel icky) Happy Wednesday!
I feel for you! Nut butters are those things that I have to really watch my intake on because I can overdo it REALLY quickly! Have you tried the “out of sight, out of mind” trick?
I went the savory route yesterday in terms of indulgences. Although I did have 2 Hershey kisses to round up the night and I forgot how delicious they are. As much as I love American products in general, Hersheys and Reeses are 2 of the few (or possibly only) companies that do chocolate well! Happy Wednesday, Chelsey!

My day was so busy yesterday but it felt like I put in my time because I was the one in charge of everything. The parties the mom’s usually throw- all me, because they were too busy. We had a TON of fun though! I need to start brining eggs to eat as my snack, that is such a great idea! Do you make them in the morning before school?

My company passed out heart shape cookies so I indulged in one of those! It’s much harder to turn down festive treats than it is regular treats, at least for me. lol. I love holiday foods!

I am officially obsessed with the pumpkin protein muffin. I seriously have eaten for every breakfast since Sunday! It’s SO good and SO easy, and it really keeps me full until lunch time which helps because I have no time to eat when I’m at school!
I also indulged yesterday while my kids were passing out Valentines
starburst and skittles for me! So yummy, but made my stomach hurt because I am not used to eating that kind of food!

I had a few macaroons that I bought from Whole Foods. Dark chocolate with sea salt is 100% where it’s at. I bought one yesterday that has almonds too and I can’t wait to try it

Your food always looks so good! Do you make your own protein pumpkin muffins? I know I’ve seen a recipe for it, but I couldn’t remember. I know almond butter would be really good, but b/c of the calories I just haven’t bought it. I’ve been using the Better ‘N Peanut Butter with less calories, and have liked that pretty well.

Despite the fact that I do eat meat and that I come from a family of true carnivores, I think my entire family has taken a liking to veggie chili. It’s still got that great chili kick, and if done correctly, it doesn’t have that nasty, cheap-beef grease. Love it!

Your eats looks so good! I tried to make your protein muffin but failed. It’s my own fault though. I didn’t have pumpkin so I put in banana. It worked ok, but I think I need to try your exact recipe before I start trying to make my own tweaks!

I did! I had a couple pieces of chocolate dipped pineapple at work, and a chocolate…then we made supper and dessert at home to celebrate and I had sticky toffee pecan pudding with maple walnut frozen yogurt. It was one of the best desserts I have ever made and ate, 100% worth every bite

you better believe i indulged on a few sweet treats for valentine’s day yesterday! reese’s hearts are my absolute favorite, so i had one of those. i also had a few bites of the cookie dough i made for my husband’s pizookie. i love my sweets! (a little too much!)

I totally had some “sweets” for the holiday yesterday, though unfortunately not the brownies that my housemates seemed to have all to themselves…(would have been nice to try them). The best thing I had yesterday was 1T cashew butter extended with 1T milk and some cinnamon, ginger and nutmeg mixed in. Delicious!

and dipped some pretzels in chocolate. I went to the wheel of fortune audition before…SUCKED…because you have to wait in line…then n a crowded room for the chance to have your name drawn to audition. My mom and i would ROCK that show though!!
Yes I def indulged with a big slice of chocolate cake. It was worth it! I managed not to snack on the chocolates and cupcakes people brought in to work though, thank goodness.

I did! My friend made chocolate covered strawberries and another friend bought red velvet cupcakes! I haven’t had sugar all year but I figured valentines day with delicious treats was worth the splurge…and it was!

I had a few pieces of Russell Stovers that my boss gave me - other than that, healthy day! I think it helped that I started my day with a run, so I didn’t want to erase all of that early morning work

Yes, we had a very tasty sweet treat. I made some Panna Cotta, and we ate it all. Come see the pictures. Some of this panna cotta would be really good for me today after I had my wisdom tooth removed, and can eat only soft food for a while. So far I had just water…

I made a faux Reeses for dessert last night:
Chocolate Casein
Enough Unsweetened Almond milk to get the mixture going
1 TBSP PB
Put half the mixture into a sprayed single serving dish
Put the PB on top of that
Top with the other half of Casein
Freeze- It pops out like a big reeses!

There was a large abundance of Hershey’s Kisses, Reese’s pieces, Stover’s Chocolates and cookies at my office. It was glorious.
