Looks yummy and very similar to the dinner I’m about to make! For lunch today I had a yummy sandwich (apricot hummus, pear slices, and spinach) with some leftover tofu, carrot sticks, celery sticks, and grapes on the side!
I had leftovers and they never fail me. Sometimes I think they improve with the time they have to sit in the fridge, so the flavours can mingle a little more. Dinner tonight though is Mexican, can you say guacamole and salsa with spicy nachos?! I think so!
No lunch for me because I hate a late breakfast: 1 whole egg + 1 egg white scrambled with fire roasted red/yellow/green peppers & onions, a bit of parm & hot sauce; half a whole wheat English muffin toasted w/almond butter; 2 clementines. And coffee!
DUCK eggs, over easy, with salsa; a side of green chiles, and a bowl with frozen berry blend, greek yogurt and honey.
The duck eggs come from a gal that I have choir rehearsals with- she has a little farmhouse and sells eggs, and I got a batch with 2 duck eggs in it! They are MONSTERS!
They were a touch firmer, and tasted… I dunno… richer? Probably because they have more protein and cholesterol than chickie eggs. Definitely interesting! Not sure I’ll get more from her, but glad I got a chance to try them.
You have posted about vitamin D supplements and my doc just prescribed me a weekly supplement. Can you tell me what to expect? When will I feel the awesomeness? Also, I share your love of ketchup on pretty much everything. Even green beans. Especially green beans! Sometimes I give plain, old roasted veggies a squirt of ketchup love.
I seriously felt better within 2 days. The day I took it I didn’t feel a difference, but the next day I wasn’t as tired and my headache that I had for WEEKS was gone. The headache has yet to return. And I just feel overall happier. It’s incredible!
My lunch was appalling….a cup of jasmine rice with Braggs and….four slices of salami. *shame* BUT, I had overnight oats for breakfast (LOVE), and tilapia for dinner, so at least I kind of made up for it. Sort of.
mmm love the roasted veggies and eggs. I made green protein pancakes but they didn’t cook all the way in the middle My Chipotle for dinner made up for it though!
That stinks! Whenever I have pancakes that don’t cook through all the way (there’s a lot of flops over here…) I nuke them in the microwave and that seems to do the trick.
Mmmm.. your lunch looks great! On a side note, just wondering if you know what kind of Vitamin D you are taking; D2 or D3? I’m reading up on it trying to weigh the pros and cons of each kind..
D3 is the best to take because you don’t have to go into the sun for it to work in your body. With D2, you have to go in the sun for it to convert itself to start working in your body. The prescription I’m taking right now is D2 because they don’t make such large doses in D3, so I’ve just been making sure to go out in the sun for 15-20 minutes every day without sunscreen. After I get through my megavitamins, I’ll likely pick up a D3 supplement.
Leftover oregano lemon chicken with sweet potato, green beans and yellow patty pan squash. Added some fresh coriander, a squeeze of lemon juice and a bit of salt and pepper. Fast, fresh, and simple

We had brunch, coconut pancakes with your peanut butter banana glaze - which was delicious! And a side of blueberries
Just had a huge kale salad with olive oil, sesame seeds and garlic hummus. I licked the bowl clean.
3 whole eggs, veggies, olive oil, salsa, avocado, and toast with butter. Your meal is more like a tiny snack.

Roasted veggies with nutritional yeast…never fails to win me over! (cauliflower, celeriac both with curry powder, sweet potato, kale and brussels!)
