I have a little confession to make to you all.
I have a wee little case of summeritis. Okay, that’s a lie - it’s a huge case of summeritis. Not only has this disease started to spread rampant throughout my classroom, but I have started to feel the effects of it as well in all areas in my life other than school. During the school day, summeritis doesn’t seem to affect me. I am able to complete my work, teach to my heart’s desire, and enjoy all of the fun activities the end of the year seems to bring. It’s when I get home that the summeritis starts to get to me.
I do NOT take for granted how much free time I have in the summer. I can leisurely complete household chores - washing the dishes, making the bed, or walking Charlie never seem to be so bad during the summer. Because, heck - I’ve got all day! During the school year I get pretty good at managing my time to make sure everything gets done. But somehow every year when May comes around, all time management skills go out the window. I lay in bed when I should be getting dressed for the day moaning and groaning about how I’m too tiiiireeed to do anything but lay there doing nothing. I start to forget what my hair can look like because I spend too much time sitting around the kitchen table or watching TV in the morning instead of using a round brush to tame the beast that my hair is. When I get home at night, nothing else but laying on the couch seems acceptable - just ask my husband who has eaten take out for the last three nights in a row. Or you could have just looked in my sink yesterday and seen the large pile of dishes that accumulated over the weekend.
I’ve got to get it together. Tomorrow I vow to wake up on time, function without caffeine, and be a productive member of society.
All that craziness about having more time on my hands will have to wait another three weeks.
And because this fits into my life goal, no more waiting a month to share a recipe with you.
I’m not even joking. It has been a month. I’m ashamed.
It all started when I wanted to make Katie’s Portobello Pesto Paninis and I didn’t have the right ingredients to make pesto — so I improvised — and it worked!
Cilantro White Bean Spread
- 1 cup packed cilantro
- 1/4 cup white cannellini beans
- 2 cloves garlic, minced
- 1/4 cup olive oil
- salt and pepper to taste
- 1 tbsp. nutritional yeast
- 1-2 tbsp. water if necessary to thin out
Instructions: Place all in food processor and process until smooth.

I’m pretty much obsessed with bean dips/spreads and all their possibilities. This is a great idea! I love cilantro and am looking for ways to use up the leftovers from Cinco de Mayo. Good thing you waited a month to post this!!

Go get em girl! ….. I totally know what you are talking about- time management thing going out the window. This girl was late for work yesterday- FIRST TIME EVER! It was only 5 minutes and I was still the first one (okay second one) there. How does that work?!? We have to be there 35 minutes before the kiddos walk into the classroom and I’m always early- but it is always so hard this time of year!
This is a great recipe- I’ve got some fresh basil to use up- PERFECT. It will be different but just as delicious!
Our contract just changed and we don’t have to be to school until 8:00 - that’s CRAZY!!! The kids walk upstairs at 8:20. No way could I get geared up for the day and be sane!
Mmm… this sounds really good. Any ideas on what I could substitute for the nutritional yeast?
If you like cheese, I’d just go with some sort of parmesan or something?

Cannellini beans, cilantro and garlic make everyone’s life better! Today I am getting a 5lb bag of organic dried cannellini (that’s the smallest they were able to order for me), can’t wait to start cooking! I love cannellini beans, one of my favorite! When I was reading this post, I was smiling: you are not alone! When I don’t work, I am the same…:)

I feel so bad for the people who have a taste aversion to cilantro - it’s one of my favorite herbs! I bet this spread would be awesome on carrot sticks too.

I think I’ve had summeritis since last summer. Seriously. This first year out of college has been difficult — getting out of bed in the morning is not fun! Thankfully, I’m making a career change and I think I’ll be much happier now!
haha!! If I was at a job where I didn’t get summers off, I’d be mourning for the rest of my life.
This spread looks great! I’ve made something very similar except I added jalapeño and cumin to give it a southwest feel. Yummmmm

I am totally having summeritis right now! My poor house is a mess. It literally looks like a tornado ran through it. I am so unmotivated to fix it though. Apparently I think summer break starts next week, not next month. Oops.

YUM. Do you think parsley would work just as well as cilantro? I am one of those unfortunate souls that tastes soup when cilantro hits her tongue.

sounds delicious. ever since I found out that I can not have cilantro from being allergic to it, it has been killing me as I LOVED IT. luckily though I have lots of other tasty herbs to enjoy

This looks great - I make a similar thing but with a cup of fresh basil instead since I can’t (won’t!) eat cilantro. I just spread it on a baguette with salad! So good.
