Have you ever read the Dr. Seuss book Wacky Wednesday? If you haven’t, it’s about a Wednesday, that’s well — wacky. This week in school we are celebrating Literacy Week and have been doing fun activities related to reading and writing all week long. Today’s theme is “Wacky Wednesday”, so the kids have been encouraged to dress crazily, and the teachers have been encouraged to do wacky things like switch with another teacher for a period of time throughout the day. The kids are going to go CRAZY today — but it should be a fun time.

Looking back onto yesterday, my appetite was all over the place — I wasn’t hungry, then I was starving, then I didn’t know what in the world I wanted to eat. It was a wacky day.
Breakfast — 6:00 AM
I didn’t have to decide what I wanted to breakfast yesterday morning because I popped a serving of overnight oats in the fridge before I went to bed last night.
I followed my method for preparing overnight oats, and in the morning I added the following:
- 2 tbsp. greek yogurt
- cinnamon
- raisins
- coconut
- almond butter
It was quite delicious!
Lunch — 11:30 AM
Once lunch time came around, we all needed a little break before the afternoon. I decided to head out with some other teachers for lunch. We went to Jason’s Deli for some laughs and their amazing salad bar.

Snack — 3:15 PM
After school I had a meeting from 3:30-5:30 to work on some curriculum writing. On my way to the school that the meeting was being held at, I snacked on my last of the three Luna bars I was sent to try out — the Chocolate Peanut Butter.
This almost beat the cookie dough flavor — it was goood!
When I got home around 6:00, I was greeted with a great card from my bestie “just because”. It definitely made my day!
And I put some flowers one of my students gave me in one of my giant mason jars. It is also Teacher Appreciation Week this week, so all the students brought in flowers today — too sweet!
After I got home, I did some weeding in my garden (not enjoying this mushroom compost as it is producing a boatload of weeds) and then took Charlie for a walk. By the time I got home, it was already almost 7:00. I had no idea what to eat for dinner and the Husband was out getting pizza with one of his buddies, so I went ahead and made pancakes!
Dinner — 7:15 PM
I followed my Greek Yogurt Chia Seed Pancakes, but instead of almond flour, I used coconut flour. So fluffy and delicious!
And after dinner, I had a few squares of Lindt Dark Chocolate — it was the perfect ending to a very sweet dinner.
I ended up the night watching Glee and reading in bed. Perfection.

Ooo, curriculum writing isn’t much fun. I think this is partly due to me never teaching the same grade so I can’t get familiar or comfortable with what I’m trying to teach. We have to take a whole week out of the summer to write ours

We are in the midst of spirit week! Yesterday was twin day.. and today is Wacky Wednesday for us too! I put food coloring in my hair this morning and have on a funky outfit.
Kids will be crazy today here too, indeed! Unfortunately.. with the rest of the events for spirit week.. it is going to be an UPHILL climb to the weekend!!!

Lindt dark chocolate! My favourite, I love the 85%. Nice eats, lunch looks yum. I really need to get back in to reading, so hard to switch off the laptop at night.
I turn the laptop off in between 8 and 8:30 and I’m in bed by 9 reading! Every night!

Does coconut flour taste like coconut?
Sorry about the weeds:-( Maybe you could get a compost bucket and have your own? I would probably pick all my plants with the weeds. My husband bought cocoa shell mulch-it smells like chocolate (I opened the window just so I could have the house smell like it for a while;-) )
It does taste like coconut! It’s really good buuut you can’t use too much of it in recipes or else things won’t stay together or cook fully.
you guys are allowed to leave for lunch?? how long do you get?? we get 30 minutes and it never ends up being that long by the time we drop our kids off… lucky girl!
We have an hour lunch - it’s kind of unheard of, but a lot of kids in our district go home for lunch!

For teacher appreciation week, one of my schools PTO’s washed all of the teacher’s cars! I was gone that day, so I didn’t get my car washed though.

i already know what our perfect day together would be like… pancakes for breakfast, jason’s deli for lunch, and mexican food for dinner. of course all i think about is the food, but that’s a big part of it!

Happy Teacher Appreciation Week! Those Choc PB Luna Bars are awesome aren’t they?! I think that’s my fave flavour….and I love using a mason jar for fresh flowers! I store lots of my dry food in mason jars so I have tons floating around my pantry. I’m going to fill one up with something pretty this week!

ive been the same way recently…not hungry, not hungry, not hungry…an BAM…starving. but with zero clue what i wanted. anyway, pancakes sound lovely at all hours of the day.
ps i used to love those luna bars but they made my stomach hurt so bad. i suffered it out a few times (because they taste so good), but finally had to let go of them. sad.
