It’s hard to believe I’m even saying this, but it is the LAST Wednesday of the school year. What has seemed like the fastest year in the history of my life is officially almost over. End of the school year activities are in full swing right now too – our fifth grade picnic is tomorrow and our school’s field day is on Friday. All that’s left is a half day on Tuesday (I know, lame right? On the day after Memorial Day.) and it’s summer time!

Breakfast – 6:00 AM
Look at that sunlight at 6:00! I’ve been bringing back my summer favorite – cold overnight oats. I actually also put these in a peanut butter jar that I’ve been nursing for the last four months. I haven’t been eating peanut butter lately and have been using it mostly for Charlie’s bone (he loves peanut butter), but today I wanted to use the last of the jar. It was fantastic.
I topped the oats with cinnamon, coconut, and granola.
Lunch – 11:30 AM
I needed to have one last Chipotle lunch before the end of the school year! My order is usually always the same at Chipotle if I get a burrito bowl.

Snack – 2:00 PM
I was feeling either really snacky or was just plain hungry today, but I couldn’t even wait until the end of the day for my snack. The entire fifth grade was doing something together this afternoon so I was able to enjoy my snack before the day let out. I snacked on one of the new Uber bars from Larabar.
I actually ate the Apple Turnover flavor, which I really liked. All of the Uber bars are now gone – how sad.
Dinner – 6:15 PM
I had a meeting after school today, so when I got home, I was more than ready to start on dinner. While I was cooking, I was hungry again so I snacked on some chips and hummus while I cooked.
On the menu tonight:

All was topped with a generous serving of hummus!
After dinner I had an Adora calcium disk and another piece of dark chocolate. When I was done doing the dishes, I grabbed my shoes and walked over to Walgreen’s to pick up a few things (including paper towels which we have been out of for days – I’m horrible). The store is a little less than a mile away, so it was nice to get in some walking at the end of the day since I wasn’t able to walk due to my meeting. I wish I lived in a more walkable area, that’s for sure!
When I got home, I plopped myself down on the couch and am currently still there (okay not really when you’re reading it, but when I’m typing it I am!). Plans for the rest of the night include a snack and watching the season finale of Glee – I’m a gleek.

Even though I feel more anxious for summer than I have in past years, I would agree that this school year went by really quickly! Enjoy the last few days… hope the kids aren’t acting too crazy!

Thanks for reminding me that I have a jar which is ready for overnight oats in a jar…believe it or not, it’s been empty for over 2 weeks but I just keep remembering when it’s too late! Love your lunch- I’ve been making the same but with refried beans instead of black beans and adding in some Greek yogurt!

Hummus, that’s what you now have me craving, as if I wasn’t eating enough chickpeas! Do you have any summer holiday plans? How long do you get off in the US? It’s 2-3 months in the UK and Ireland for the school kids!
We get June-August! It comes out to about 10-12 weeks! I’m babysitting for a family friend and for my sister, and we are going to Mexico!
Very nice! I can’t say I’m not jealous of the holidays. Summer has finally arrived here. Was 4 degrees last week…20 this week! We’re easily pleased with temperatures in Ireland and the sun is now shining!
That’s a bummer that after this long weekend you have to go BACK to school on Tuesday. At least you’re freeeee after that!
Hope you enjoyed the Glee finale! I TiVoed it and am going to watch it when I have time tonight.. I can’t wait!!

I actually like the one I make at home the best. I don’t like the taste of the dry roasted almonds from the store! I like getting raw almonds, roasting them myself for 20 minutes, and then processing them!

So envious your so close to the end… We still have a few weeks left. Your dinner looks amazing by the way, I wish I could get my husband to eat something like that for dinner. Unfortunatly if there is no meat and potatoes involved he doesn’t think it’s a meal.
Oh don’t worry, the Husband’s was nothing like that. He ate the green beans and the rice, but his was topped with corn and meat.

I actually made banana soft serve with carob last week, but made too much (I’m the only one that eats it for some odd reason. it’s amazing stuff), so to save the rest of later, I put it in my peanut butter jar, which still had bit of PB that I was unable to get out. Got home from a long road trip Sunday and ate it as dinner, scooping the insides of the jar as I went. It was heaven.

i totally agree with your first paragraph about the year flying by! i started a new job one year ago TODAY and it feels like it was just a few months ago. when i was in high school, my oh-so-insightful friend said that he found as we got older, the years went by faster because they were a smaller percentage of our life. like when we’re 3, a year is 1/3 of our life. but at 25, 1 year is just 4% of our life. i think that makes sense?! 365 days is all relative, i guess!

Clearly I need to get into both chipotle and overnight oats. Do you prep yours the raw way with oats + yogurt/some milk+chia seeds? they look voluminous and perfect.
Also: Guess who was the commencement speaker at my college and listenned to my A Cappella group sing (while I’m abroad in London…) -> Coach Sue herself!! I was SO JEALOUS!
I actually put all the base ingredients together and microwaved them on medium heat for like 3-4 minutes, added more liquid and then put it in the fridge overnight!
Ahhh school just ended for me too, and it’s such a weird feeling!

I had to have some Chipotle as well this week and my server was very enthusiastic with his scooping. I didn’t even have to ask for extra lettuce, the guy put two giant handfuls on top without me even asking. No complaining here:)

I’ve always thought going after Memorial Day seems kind of wasteful, b/c the kids (and the teachers) are done mentally. Last year my district was out on June 3rd! This year b/c we had no snow days, we got out almost a week earlier and our last day with kids is today!

Gah what did you think of the Glee finale?? Apparently Chris Colfer, Cory Monteith and Lea Michele are all coming back next season, so no idea how they’ll work that one out.

It was kind of anticlimactic for me. I got bored and watched something else.
Congrats on being nearly done with school! I am a teacher too- my last day is June 18th. I can’t wait to use all of my extra time making more elaborate breakfasts, lunches and dinners. At my school, we only have about eighteen minutes to eat lunch on most days, which means I stuff my face and keep things simple. I live for summers, if only so I can take longer to eat!
