Happy June 13th — when did that happen? It’s crazy to me that I’ve already been enjoying two weeks of summertime bliss. The days go by much too quickly for my liking to tell you the truth!
Jenn’s at it again — another theme for WIAW this month — sensible snacking! I’m a snacker, always have, always will be. I know some people like to eat three square meals a day, but not me. I’m a 3 square meals plus at least three snacks kind of girl.
The eats I’m sharing today are actually from Monday — I knew yesterday with a bunch of meetings that I would forget about taking pictures, so I planned ahead (go me!)
Breakfast — 7:00 AM
No, no one has hijacked my blog — I actually ate something out of the ordinary for me on Monday morning! I had half an Udi’s gluten free bagel topped with almond butter, chia seeds, and sliced banana. On the other side of the plate is one egg plus 1/2 cup of egg whites cooked with nutritional yeast, onions, and red pepper. All topped with a hefty dose of ketchup.
A little sweet, a little savory — the best.
Snack 9:00 AM
I spent the morning working my life away at a table in Starbuck’s. I ordered an iced coffee and sat at one of their tables for three hours. Whoops.
After three hours of work, I figured it was only necessary for me to treat myself to a pedicure. You know, because my life is so rough. My toes are bright pink, like Barbie pink. I love it.
Lunch 1:00 PM
I really wanted a veggie burger for lunch, I was fresh out of buns, so I improvised with some lettuce leaves. It worked. I am such a sucker for mustard and ketchup mixed together. It’s possibly the best thing ever. And now that I’m looking at that picture, I’m a little upset I forgot to add some relish. #fail — I also had a microwaved sweet potato on the side. Not quite as good as baked, but in five minutes, lunch was ready.
Snack 4:00 PM
Two mini larabars as an “I’m done with all my assignments” celebration. Chocolate chip brownie is kind of dry. I like coconut creme pie better. And even better than that, I like chocolate chip cookie dough, but I’m fresh out.
Dinner 6:30 PM
Dinner was eaten on my couch during my Secret Life marathon — ugh. Okay, I take it back. I only watched part of Secret Life. I was going back and forth between Secret Life and Bachelorette. Who else loves Sean? I do I do!!!!
Back to dinner, it was ruby red rice, kale, chickpeas, and leftover fajita vegetables on the side. All topped with nutritional yeast. Apparently I like it a lot.Dinner was followed up by some chocolate — which reminds me, I never ate chocolate after dinner tonight (as in Tuesday when I’m typing this — hold on. Okay, problem solved)
Snack 8:30 PM
Snack time looked a little something like this — microwaved oats topped with cinnamon, blueberries, chocolate chips (!!!!) and almond butter. Obviously this photo is recycled circa June 8, 2011.
My day was finished reading the last Harry Potter in bed and waiting for my Husband to get home from work (darn busy season!!!!).
