how is it august?

Good morning and happy Wednesday! I’ve got a crapton (it’s a word —I swear) of things to do today, and I just don’t know where to start! Well, it’ll start after I catch up on Teen Mom and The Glee Project, but those are minor details.

Peas and Crayons

I love the theme for August (it’s AUGUST!! Argh!) —summer staples!  I made sure to do one of my summer staples yesterday — grilling! Remember last year when I tried to grill everything? (turns out you can grill muffins!)

Breakfast 6:30 AM

Monday night was a horrible night of sleep for me, and I was up when a storm rolled through at 5:00 in the morning. No fun. I finally rolled out of bed and got ready for the day —followed by one of my new breakfast staples!

Surprised not to see oatmeal or pancakes? I’ve also added smoothies and eggs to the mix lately too. Yesterday was an egg morning — 1 egg and a good pour of egg whites, topped with nutritional yeast and ketchup. On the side I had half a gluten free bagel topped with almond butter, chia seeds, and banana slices.I love having some savory and some sweet!

Lunch 11:30 AM

Lunch was an old favorite! My spaghetti squash plant is NOT doing well this year (actually, none of mine are), and has only produced one squash (with no more in sight!). I picked it yesterday and made my spaghetti squash primavera. I had the other half today and topped it with a fried egg.

Followed by a few piece of chocolate just because.

Snack — 2:00 PM

Mid-afternoon always hits me hard — I always want to snack my way right through dinner! I ate two mini Larabars to tide me over.

And then I ate an apple that was given to me by my “Cruise Director” (we were playing Cruise Ship while I was babysitting yesterday). 

Dinner 5:45 PM

Dinner came together quick last night, and I’m so glad —I was once again starving by the time I got home! I’m trying to use up our produce before Thursday (have I said too much? ;) ), and cleaned out the bin!

I grilled up a sweet potato, about two pounds of green beans,and a veggie burger for myself. We don’t have any gluten free hamburger buns around these parts (meaning my house), so I used some romaine as a lettuce wrap.

Can we stop for a second and just gawk at how beautiful this tomato is? :sigh: I love summer!

That looks like the perfect dinner!! Is it weird that I LOVE any veggies that are grilled and a little burned? Those sweet potatos made my mouth water.

I know and it feels like November here, weather is ridiculous in Ireland at the moment!!! I’m not sure I could put the other half of a bagel down! :) The mini larabars a great idea, you get to have to flavours/satisfy to cravings in one sitting!

Crapton is definitely a word - I use it all the time!! But your spaghetti squash looks delicious! I love spaghetti squash, but for some reason I NEVER think to actually buy any at the store! I may have to fix this soon!

That spaghetti squash looks really good! I need to use up the veggies in my fridge too. I’m learning that my new hubby doesn’t care too much for veggies, and I am going to have to buy less of them if I don’t want to waste food!

Teen Mom is the best. I’m not ashamed to admit it’s my weekly guilty pleasure.
Bentley and Sophia are adorable with what comes out of their mouths, and Leah is preciousness!

ahhh afternoon snacking is a huge battle for me, come 3:30pm all I want to do is snack. Trying to add more protein in earlier in the day to see if it helps!

My husband and I just tried grilling sweet potato fries for the first time a few days ago…we’ve made them in the oven countless times, but when we tried to on the grill they were charred so back they had to be thrown away :( what do you do to prep them? and do you flip them often?

So jealous of that Chobani shipment! I hate that we only have 4 flavours available here in Canada. :P I’m dying to try the chocolate chunk one!

I finally came across some lara bars yesterday and after reading so much about them from others who eat healthy, I was stoked to buy one. Just got one to see how I liked it and I LOVED it! Going to have to stock up on them now! Now I just have to find out where I can get some Chobani greek yogurt that I keep hearing about as well! :)

That’s a good looking tomato! I can’t get enough of heirloom tomatoes during the summer..but they’re still on the pricey side. I want to grow my own, but I’m afraid..I kill everything…My track record not so promising. Ooh! Enjoy those Chobanis!!

I can’t even believe its August! So crazy.
I heart spaghetti squash, I’ve got to try out your recipe, it looks superb!!
I’ve been on an egg kick too, I used to hate them. Now I love ‘em.
Can you believe I’ve still never tried Cho? None up here in my parts of Canada! They better come soon…

Ummm, you watch Teen Mom?! I seriously thought I was the only one. I try to act like I don’t watch it around the husband (ie: close all browser traces of it when he’s present), because he just doesn’t get it. Sometimes a girl just needs a little trashy television to run to! Please tell me who your favourite is lol

Last night I had spaghetti squash topped with an egg and I’m pretty sure it is my new favorite meal! I could probably put and egg on anything and enjoy it but I am seriously LOVING it on top of spaghetti squash and can’t wait to eat it again lol! Thanks for the idea :)
