Good morning and happy Wednesday! I’ve got a crapton (it’s a word —I swear) of things to do today, and I just don’t know where to start! Well, it’ll start after I catch up on Teen Mom and The Glee Project, but those are minor details.

I love the theme for August (it’s AUGUST!! Argh!) —summer staples! I made sure to do one of my summer staples yesterday — grilling! Remember last year when I tried to grill everything? (turns out you can grill muffins!)
Breakfast 6:30 AM
Monday night was a horrible night of sleep for me, and I was up when a storm rolled through at 5:00 in the morning. No fun. I finally rolled out of bed and got ready for the day —followed by one of my new breakfast staples!
Surprised not to see oatmeal or pancakes? I’ve also added smoothies and eggs to the mix lately too. Yesterday was an egg morning — 1 egg and a good pour of egg whites, topped with nutritional yeast and ketchup. On the side I had half a gluten free bagel topped with almond butter, chia seeds, and banana slices.I love having some savory and some sweet!
Lunch 11:30 AM
Lunch was an old favorite! My spaghetti squash plant is NOT doing well this year (actually, none of mine are), and has only produced one squash (with no more in sight!). I picked it yesterday and made my spaghetti squash primavera. I had the other half today and topped it with a fried egg.
Followed by a few piece of chocolate just because.
Snack — 2:00 PM
Mid-afternoon always hits me hard — I always want to snack my way right through dinner! I ate two mini Larabars to tide me over.
And then I ate an apple that was given to me by my “Cruise Director” (we were playing Cruise Ship while I was babysitting yesterday).
Dinner 5:45 PM
Dinner came together quick last night, and I’m so glad —I was once again starving by the time I got home! I’m trying to use up our produce before Thursday (have I said too much?
), and cleaned out the bin!
I grilled up a sweet potato, about two pounds of green beans, and a veggie burger for myself. We don’t have any gluten free hamburger buns around these parts (meaning my house), so I used some romaine as a lettuce wrap.
Can we stop for a second and just gawk at how beautiful this tomato is? :sigh: I love summer!
Snack — TBD
I think I’m busting into some Chobani that was sent to me yesterday — 16 oz containers baby! So dangerous….
I forgot to announce the winner of the Core Meal Bars yesterday. The winner is #6, Kelly Michele! Congratulations! Please email me to claim your prize.

That looks like the perfect dinner!! Is it weird that I LOVE any veggies that are grilled and a little burned? Those sweet potatos made my mouth water.
Obviously I can’t believe it’s August either, because I still used my WIAW theme from July for this morning’s post haha!! I think I’m in denial!
I know and it feels like November here, weather is ridiculous in Ireland at the moment!!! I’m not sure I could put the other half of a bagel down!
The mini larabars a great idea, you get to have to flavours/satisfy to cravings in one sitting!
Wow… that’s a LOT of yogurt!! Are you really going to finish it all, before it goes bad??
of COURSE!!!
I do not understand how it’s August already! Grilling is the best summer staple. And holy chobani. I am dying to try the chocolate!
Love the meals!!!! So jealous of your chocolate chobani! Can’t wait to try that flavor!
Have you tried the Vanilla Chocolate Chunk yet?! Mine showed up yesterday too and it’s not going to last long!
Oh boy! Look at that Chobani! I picked up the chocolate chunk container at the store this past weekend and can’t wait to try it!
Anything topped with lots of ketchup + nooch = yes! Big fan
Ah, I know! August came up so fast! Good thing it’s going to be one amazing month but still….so sad summer is almost over.
Ahhhh you just got me so excited for getting my own shipment of CHO!!! Can’t wait till it get here!!
16oz containers of goodness! Especially the chocolate flavor that I’ve never seen before-I’ll be nice and take that shipment of Chobani off your hands! ……since you are cleaning out your refrigerator for some weird reason
YAY (times a million!)!!!!! Have a wonderful Wednesday!
Crapton is definitely a word - I use it all the time!! But your spaghetti squash looks delicious! I love spaghetti squash, but for some reason I NEVER think to actually buy any at the store! I may have to fix this soon!
That spaghetti squash looks really good! I need to use up the veggies in my fridge too. I’m learning that my new hubby doesn’t care too much for veggies, and I am going to have to buy less of them if I don’t want to waste food!
yummmm love Chobani! Enjoy it!
That spaghetti squash primavera looks so yummy! I cant believe it is already august! Have a great day
Teen Mom is the best. I’m not ashamed to admit it’s my weekly guilty pleasure.
Bentley and Sophia are adorable with what comes out of their mouths, and Leah is preciousness!
Love love love this show. Too much.
ahhh afternoon snacking is a huge battle for me, come 3:30pm all I want to do is snack. Trying to add more protein in earlier in the day to see if it helps!
Ahh everything looks so good. I love your eggs and those potatoes! Yum
My husband and I just tried grilling sweet potato fries for the first time a few days ago…we’ve made them in the oven countless times, but when we tried to on the grill they were charred so back they had to be thrown away
what do you do to prep them? and do you flip them often?
My plants aren’t doing so well either - my zucchini plant actually died!
So jealous of that Chobani shipment! I hate that we only have 4 flavours available here in Canada.
I’m dying to try the chocolate chunk one!
I finally came across some lara bars yesterday and after reading so much about them from others who eat healthy, I was stoked to buy one. Just got one to see how I liked it and I LOVED it! Going to have to stock up on them now! Now I just have to find out where I can get some Chobani greek yogurt that I keep hearing about as well!
Haha I don’t think I’d be able to handle all that Chobani!
That’s a good looking tomato! I can’t get enough of heirloom tomatoes during the summer..but they’re still on the pricey side. I want to grow my own, but I’m afraid..I kill everything…My track record not so promising. Ooh! Enjoy those Chobanis!!
Oh man, that Chobani surprise sounds like heaven!
I want to try some of the new Vanilla Choc Chip Cho!!!
Of course still thinking about you & miss you. Which reminds me - I will happily go with you to ANY of those restaurants you mentioned in your other post. And remember that since it’s August that means only 2 months until I come visit! Wheee!
Yum that sweet potato looks delish!
Grilled Green Beans! Yum! How do you do yours?
That tomato does look perfect, but I can’t stop drooling over all of that Chobani. I think I have a problem….
I can’t even believe its August! So crazy.
I heart spaghetti squash, I’ve got to try out your recipe, it looks superb!!
I’ve been on an egg kick too, I used to hate them. Now I love ‘em.
Can you believe I’ve still never tried Cho? None up here in my parts of Canada! They better come soon…
Love Chobani! Such a great company- they jsut opened an ice cream place in Soho in NYC! I NEED to go there : )
Ummm, you watch Teen Mom?! I seriously thought I was the only one. I try to act like I don’t watch it around the husband (ie: close all browser traces of it when he’s present), because he just doesn’t get it. Sometimes a girl just needs a little trashy television to run to! Please tell me who your favourite is lol
Those sweet potatoes look amazeballs! I’m still waiting for my overnight oats breakfast with you after our sleepover. The clock is ticking ya know.. its My birthday month already!
I know what you mean about wanting to snack through dinner - I have to fight that urge every single day!
Just got the Chobani today and it’s already being eaten up like THAT. And seriously — summer went by so fast!
Last night I had spaghetti squash topped with an egg and I’m pretty sure it is my new favorite meal! I could probably put and egg on anything and enjoy it but I am seriously LOVING it on top of spaghetti squash and can’t wait to eat it again lol! Thanks for the idea
