summer be gone

August 15, 2012

This month’s What I Ate Wednesday’s theme no longer applies to me — summer? What is that foreign concept you speak of? Just like that, my summer is over. You might think I’m upset about that, but I’m actually not. I am more than ready to get back into my daily routine of going to work to teach those kiddos every single day. I’m one of those people who crave structure, and I’m happy to get back to it!

Peas and Crayons

Breakfast 7:00 AM

Breakfast today happened about two hours after I got up since I went to the gym to lift some weights.I was starving by the time I showered and got ready (ps — I washed my hair again, don’t worry!). Before I headed off to school to work on organizing my life, I had a great breakfast to fuel me through the morning.

Breakfast this morning was….

  • 1 egg
  • 1/2 cup egg whites
  • 2 cups chopped kale
  • 1/4 cup diced onion and red pepper
  • topped with nutritional yeast and ketchup

On the side I had half of an Udi’s gluten free plain bagel topped with almond butter and banana slices.

I spent the morning working in my dark classroom (the power went out at 9:00 and never came back on!) and collaborating with some other teachers about some changes we want to make since we read The Book Whisperer.

Lunch 11:30 AM

I had brought my lunch, but when word on the street was that everyone was going to Chipotle, I couldn’t say no.

This is a recycled picture, and it’s not even what I got — I ended up getting one of their salads. I tried their dressing for the first time, and OH MY GOSH. I’ve been missing out. If you’ve never tried it, you need to.

 Snack 3:00

I had an acupuncture appointment this afternoon, so on the way there I had a few snacks — an adora disk and a combination of almonds and raisins.

On my way home, I stopped by my sister’s to see the baby. Right when I got there, my mom was walking out the door with her to take my nephew to football (who else LOVES little boy football?!?! I’m so excited for his games!), so I offered to stay there with Aubrey while she took him. Aubrey was NOT happy. I’m not sure if she was just crabby or if she was just not used to being around me (I haven’t watched her in almost a month), but tears were shed. Don’t yell at me, but I comforted her by giving her puffs. Tears be gone! Then she was happy and kisses were given to her auntie. I’m going through withdrawals not being able to watch her.

Dinner 6:15 PM

I FINALLY made the Husband and myself some dinner last night. I was pretty proud of myself, and the Husband happily gobbled it up. I made my Cheesy Chickpea Quinoa (I added a bunch of kale to the mix today — holy greens today!), and the Husband had chicken with his. I actually served his up without and garbanzo beans, and he got mad at the end of dinner when he found out he didn’t get beans. That comment made me fall in love all over again and brought tears to my eyes.

Thankfully there’s a nice portion of leftovers for me to bring to school one day this week!

After dinner I ate a handful of dark chocolate chips before I happily plopped down on the couch.

Snack 8:30 PM

Okay, enter in my new dangerous obsession with Cinnamon Chex. Whyyyyy have I never bought Chex before as a cereal to eat? This seriously tastes like Cinnamon Toast Crunch (aka the best cereal in the world),and my heart soared when I ate it for the first time on Monday night. I have to show some self control and not eat the entire bag in two days.

 

And with that, I’m out of here — but not for too long. Be on the lookout this evening! You’ve been warned! ;)

Summer has well and truly left Ireland..it was only here for about 2 days!!! I’m back on the pumpkin oats! Love the chessy quinoa…quinoa and chickpeas and kale…I couldn’t live without any of them! Great combo!

I’m feeling the same way about going back to school… I thought I was dreading it, but once I got into my classroom yesterday for set-up, I got super excited!!

Oh that’s so exciting! I would have loved a fall wedding, but I just couldn’t do it with the school year - a summer wedding = pure bliss for this teacher!

School starts for me in two weeks and I am also ready. I miss my coworkers and students!
My favorite cereal of the moment is Corn Chex - I finished the last cup of it last night as a snack.

Look great Chelsey! My favorite cereals are from Mom’s Best. They’re super cheap, but have no bad oils, artificial ingredients, and whole grains. I try to make myself get healthy things like shredded wheat, but every once in awhile I indulge in their version of lucky charms! Also, I just finished quite a few books off your summer reading list- thanks for the great suggestions girl!

My favorite cereal of all time is Frosted Mini Wheats. I practically survived on them for dinner when I was pregnant with my 11 year old son. I lived in NYC at the time, was hugemongous (is that a word), it was H.O.T. and I had no desire to fire up a gas stove to cook. So I ate Mini Wheats and popsicles. Don’t judge…he’s healthy!

I also cannot turn down Chipotle! My favorite place to eat! I will have to try the salad and dressing. I always get the veggie bowl.

I don’t eat cereal as much as I used to, but Cinnamon Toast Crunch was always a favorite. I even found a CTC Cupcake recipe on Pinterest! (That I still have yet to try)

I am currently obsessed with Cascadian Farms’ Cinnamon Crunch cereal. Looks and tastes just like Cinnamon Toast Crunch cereal.

I love plain wheat cereal or some form of TJ’s cheerios with a bunch of cinnamon dumped on-and of course the more berries added the better. I rarely ever eat just one cereal at a time though because I’m always mixing a little of 2 or 3 kinds into a bowl together. Once I started doing that it’s hard to go back to just one! :)

I am also addicted to Cinnamon Chex. Addicted. ( I had to cut back, though…too much sugar but I love them!) Always love your posts…they make my day! Have a great week.

I’m actually not a HUGE cereal-eater because I tend to go for the unhealthy, “kid” cereals like Lucky Charms… yum! Although I do really like peanut butter Cheerios!

Cinnamon Toast Crunch always takes me back to my childhood :D Actually, I don’t think I’ve ever met a person who didn’t love that stuff growing up… maybe there’s a “secret” ingredient. Or maybe it’s the swirls of cinnamon and sugar, and the taste you can SEE! Lol omigosh. I feel so old for actually remembering those commercials… Saturday morning cartoons and a bowl of cereal drowning in milk was the epitome of my growing up.

And Mini Wheats. (preferably the blueberry muffin flavour, but any one will do)

I love way too many cereals! Kashi Honey Almond Flax is my standard choice, but I also love Mini Wheats and Cheerios too!

Sadly I’m totally a cereal monster and can’t keep my hands out of the box, so I dont often buy it. But handsdown my favorite is whole wheat peanut butter cherrios. They taste like the old Reese’s Puffs, but at least SOMEWHAT healthier. I could easily down a box in a day or two. It’s a problem
