Let’s just call this week the longest week on the face of the Earth, shall we?
In all seriousness though, it’s been quite a busy one. Thankfully that means the week is flying by, but it also means I am trying my hardest to stay up for Modern Family (which airs at 8:00 — not pathetic at all). Despite the busy week, it’s been a relatively good one. School has been fun, my kids have been great, I can’t do any complaining.
Let’s get onto the eats from today! I can’t believe this is the last week in September. I know, I know — I say something like that every week. Humor me, will you?

Breakfast 6:15 AM
I felt like I was moving in slow motion this morning. I don’t think I opened my eyes at all until I stepped out of the shower (anyone else?) and then it took me much longer than usual to dry my hair and do my makeup. When I went to go make breakfast, I needed the quickest thing to make!
I ended up having scrambled eggs/egg whites (1 egg + a lot of egg whites) with some leftover roasted broccoli in the mix. On the side I had a combination I’ve been seeing someone put together lately. On my bagel, I spread about 1-2 tablespoons of pumpkin (+ a sprinkle of cinnamon and nutmeg!), a layer of almond butter, and then banana slices. Holy cow, this was delicious! I am definitely turning to that combination again soon. I’m a fan. Thanks, Courtney! I also ate the rest of my banana that didn’t make it onto my bagel.
Lunch 11:15 AM
Even though I’m a lunch hater, I was actually looking forward to my lunch today. It was so satisfying and filling as well! I love it when that happens — there’s nothing worse than feeling starving all afternoon when you’re trying to wrangle 24 little people.
I had about 1 cup cooked quinoa, topped with more broccoli, some garbanzo beans, nutritional yeast, and hummus. After I heated it up at lunch, I added 1/2 of a diced avocado. The avocado got all melty — it was the best thing ever. Loved this combination!
On the side I also had an apple and an Adora disk (unpictured).
After school I totally forgot to eat my snack because I had a follow up meeting with my principal about the lesson he observed last week. Of course I’m my hardest critic so I wasn’t too happy about the way it went, but we had differing views.That is a good thing!
I didn’t leave school until almost 5:00, so when I got home I started right on my go to dinner.
I made a salad with the other half of the avocado I used earlier in the day. I also had a baked sweet potato on the side. I’m not going to lie — BEST sweet potato ever! I microwaved it for 3 minutes since I didn’t have an hour to bake it. Then I rubbed coconut oil all over the skin and stuck it in the oven for 30 minutes at 430 degrees. The skin was crispy and had a great coconut taste!

I’m not sure what, but I know I’m going to have a large snack this evening while watching two of my favorite fall premieres! I’m so glad The Middle and Modern Family are back on!!!
Looking back at this day, I have to admit —it was a good day of eating. Love it when that happens!

New Girl is the one I’m most excited for! But Modern Family is a close second. I like the 30 minute shows because they’re only 22 minutes w/out commercials, so I can watch them during random free bits of time during my day.
YES I totally understand about not being awake for the first few minutes of being “awake!” When I swam in college, I would fall asleep on my kick board during warm-up sets at morning workout. And them “BOOM” there’s the wall. Haha…

A great post, and very inspiring for me as I’m currently trying to eat ‘cleaner’ - not easy for a sugar addict! Especially like the look of your lunch. Avacado and Hummus = winner!

I can’t say that I was really excited for anything to come back this Fall, that is so sad. Maybe Scandal - I am curious to see what’s going to happen there. But all my other shows (private practice, grey’s anatomy) they’ve taken a turn for the worse over the last few seasons and I just can’t get into them anymore… New Girl was pretty hilarious on Tuesday night, I will admit that. I’ll watch it, but I won’t be upset if I miss it on a Tuesday night.
Ack I always feel so left out when people start talking TV shows because I don’t watch any. Am I missing out?

Dexter! I almost forgot! I have loved Dexter since it first came out. Ah, I forgot about The Office and Community.
I, too, feel like it’s been an insanely long week, but unfortunately, mine is not flying by. I have my observation tomorrow (funny you mentioned yours!), and in Indiana where I teach, we have an insane new evaluation system we are all trying to muddle through. It was designed by politicians, so of course it includes a truckload of paperwork/documentation! Hopefully mine will end up like yours….
The one bright spot in the week is the season premier of The Big Bang Theory tomorrow night — a great way to celebrate my first (of 5) big observations!

I’m not really a TV watcher — especially not in real time. But I’ll probably be perpetually catching up on Big Bang Theory. And I might tune into a few Survivor episodes, for old times’ sake.
I definitely liked the look of your breakfast — I’m going to have to give the pumpkin/almond butter mix a shot!! Sounds like a winner — especially with the kick of banana. I’m thinking pre-run snack. Yum!

Do you just stick the sweet potato in the microwave as is? Do you wash it first or cover it in a towel or anything first? And then you smother it with coconut oil and put it straight into the oven? Just wanted to get the clarification, I’ve been searching to find an easier way to cook my sweet potatoes.

I’m also a TV junkie and watching New Girl, Modern Family, HIMYM, maybe Grey’s Anatomy (don’t usually watch but ended up catching last season’s finale and now I’m hooked), The Voice, and most likely about 10 others I’m forgetting right now…

Someone (ahem…me) was a bit cranky with her mother, who was nice enough to come stay for a few days and help clean up before a big dinner party/fundraiser at my house, when she woke up this morning. Mia is not a morning person, and you’d think my mom would know that. But she had a lot of questions about where I want things put and why I wasn’t doing more with my hair before running out the door (ahem…because I was doing science until 1AM and had to get up and finish homework before class at 10, plus I think I’m coming down with a cold…so yeah, hair and makeup are not high on the list). Still…she’s my mommy and I should be a bit less cranky. There’s always tomorrow…
As for shows: Whitney, for sure, and Private Practice. Parenthood has already started - thank goodness - I’m running out of stuff in the Netflix queue.
I am really looking forward to Revenge and the final Gossip Girl season.
Grey’s Anatomy! and then there’s American Horror Story and The Walking Dead; anyone else love these slightly terrifying shows?

I love how you made your sweet potato! Sweet potatoes are also my go to easy meal. I either bake/microwave them and throw a Laughing Cow herb cheese in it or roast one and throw it into a salad. YUM!!
My favorite show that airs in the fall is Blue Bloods! It’s amazing and really suspenseful!
Can you tells us how you cook the sweet potatoe exactly? DO you also wrap it in foil?
