Part of me cannot even begin to believe that it is already Wednesday night. The other part of me is screaming for tomorrow night (my Friday because of my guest!!) to be here right now.

Jenn has come up with a new theme for What I Ate Wednesday for the month of October:

Does chocolate count as a healthy Halloween snack? Because I do a lot of chocolate eating!

This morning I actually attempted to get up and go work out before school. I did it on Monday, and I kind of felt like a rock star. I don’t know how I did that every single day last year… and the year before that… and the year before that. Ew. Needless to say it didn’t happen. I can barely get myself out of bed on time on Wednesday mornings because of class the night before, let alone get up at 4:30 to go on the treadmill. No thanks.

Breakfast — 6:00 AM

Breakfast was a batch of hot voluminous oats with pumpkin. On top I sprinkled some nutmeg, cinnamon, diced apple, raisins, and homemade almond butter. I made another batch of the coconut chia seed variety!

When I left for work, I felt the urge to stop by Starbuck’s (who are we kidding… it happens every day, and I can’t stay away from coffee. I’m done trying — note it please.)

I have to warn you — all of my lunch pictures are recycled. Deal with it. Today I had a large salad topped with hummus.

Snack — 4:00 PM 

I forgot to pack a snack, so I grabbed a Larabar when I got home from work.

Then I started a soup for dinner and headed to the gym for the workout I couldn’t get myself out of bed for earlier today. 3.5 miles done — woohoo! I’m on a roll.

Dinner — 5:56 PM (seriously)

I made one of my top five soups today — stuffed pepper lentil soup. It is absolutely delicious.

Better yet, it seriously takes 10 minutes to prep, and then you can walk away while it simmers for an hour!

On the side, I had another Udi’s gluten free roll (unpictured).

Then after dinner I ate some chocolate chips.

Now I’m going to grab a snack while I watch my Wednesday night comedies and finish some homework. Have a great night!

Your eats look delish! What are the remaining four of your favourite soups?

It’s hard to decide on a favourite but I’d say in Summer it’s my mum’s mixed bean soup (green beans and cannellini plus tons of vegetables) and in Fall/Winter a pumkin-sweet potato soup/stew. Your lentil soup looks like a must-make, too.

OMG I am a soup-a-holic. Pumpkin is my favourite but I haven’t even made any yet this season and pumpkins have been in the stores for weeks. That’s a weekend must-do project.

All of your food looks delicious, especially the oatmeal and soup! I made paella on Sunday (that kind of counts as a soup, right?), and it was perfect. Last week I cooked (okay, heated) some organic roasted red pepper and tomato soup. That stuff is awesome.

I’ve been having hot pumpkin oats this week since the temp decided to drop 20 degrees. I didn’t have them this morning, but after seeing your picture, they are definitely making a comeback tomorrow!

I too love soup this time of year! I just finished eating the last bowl of my 4th batch of the year so far! I made broccoli cheese, broccoli cheese with mushrooms, mockingbird soup (veggie soup with quinoa), and roasted potato leek soup! The last one was the best! I made it up as I was going along, but it was awesome! Thank you farmers market!

Hahaha, I was thinking the same thing today as I did my daily S-bux trip. I literally can not go a day without it and I never want to even try. No shame in being a caffeine addict.

My mom and I just made Skinnytaste’s Crockpot Minestrone Soup over the weekend. Soooo good! And packed with veggies. :) Minestrone is definitely my fav.

My Dad makes a rocking sweet potato and butternut squash curry/cinnamon/cumin smooth soup that we put chopped broccoli, cauliflower and lentils in — totally to die for!! We’ve both been so busy we haven’t had time to make it yet — I’m planning on getting on it soon!
Ps. Congrats on not denying yourself you love of Starbucks. Everyone has a vice, it could be worse. Your body will love you even if you have Starbucks in the morning — in fact, it might just love you more. ;)

Oh the joy that comes from a cup of coffee… I grab a cappuccino on my way home from work pretty much every day, and even though it’s pricey, I don’t see myself stopping anytime soon. Why deny ourselves such simple pleasures?

I have two butternut squashes that are patiently waiting to be made into soup. That is probably my favorite kind of soup. But, I am trying a new kind tomorrow (recipe from Real Simple that includes white beans, andouille sausage, and collards).

Borscht! Seriously, it is so good! I’m lucky to be in Russia right now where borscht is a dietary staple. Lentil soup is also amazing in any form.

I pretty much eat soup everyday in the colder months. I think my all time favorite is Butternut Squash Soup with Apple. Your soup looks delicious and I might just have to make a batch soon!

Love your food choices today, Chelsea! Although I’m not teaching this year, I have taught grade six for the past 5 and know how time consuming and busy it can be. It’s so easy to fall into a trap of poor eating and not preparing your meals in advance. I appreciate your consistency and making sure that health and happiness never fall to the wayside :)

I’m a huge Chili fan, but I always have to add TONS of cheese, which isn’t the healthiest option in the world. I also made a butternut squash sage soup a couple years ago that was delish! I should make it again. It’s that time of year. :-)

I have no idea how you got up so early every day last year to work out either! 6 am workouts are early enough for me!

Yummy! I’ve been collecting soup recipes for the last couple weeks. Now I’ve gotta decide what to make this weekend. I’m thinking buffalo chicken tortilla…or maybe just a simple minestrone if I’m feeling healthy.

I don’t think I can choose a favourite soup! I love so many different kinds! When I was younger I was all about broccoli and cheese…mainly the cheese though.

Um, THIS soup is my new favorite! So making it tonight! Also, that oatmeal got my mouth watering. It just turned freezing in MN today and I forgot that my normal toast/jam doesn’t cut it in the cold mornings.
Also, LOVE your nail color on your Starbuck’s pic :-)
