until next weekend…

December 10, 2012

What a weekend! I swear there’s never enough time in those two days, but I’m excited for this upcoming week. I’m a little less busy, I have my last grad class for an entire month, I have a shopping trip planned with my moms, and we have a wedding on Saturday! Hopefully I’ll find some time to wrap some Christmas presents too.

Here’s the weekend in a few pictures…

saturday morning perfection – starbuck’s and trader joe’s!

saturday afternoon run/walk. other workout this weekend included 25 minutes of cardio on the stair master and an upper body strength routine.

Charlie’s doppelganger. SERIOUSLY. How much does my cousin’s dog, Mila, look like Charlie?

Sunday afternoon lunch – big salad with a variety of veggies, avocado, and drippy egg. Chips on the side with salsa and hummus for dipping!

 Last paper of the semester = done! Hellooooo break from grad classes for a month!

my little cutie (and yes, now you should be scrolling up and down between Charlie and Mila)

Last week the Husband was upset he wasn’t getting enough meat in his dinners (the man puts up with a lot of vegetarian meals). So this week I decided I would make him the ultimate meat and potatoes meal – a Sheppard’s Pie!

Oh, and just so you’re aware – December is ONE THIRD of the way over! How the heck did that happen!??!?!

Just did the photo comparison - it is crazy how much they look alike!

my hubby puts up with a lot too… but he definitely gets his meat fix - both our parents are huge meat eaters so there’s never a shortage!!

Haha. Every couple of weeks, I made Vishnu a chicken dish because I feel bad about feeding him so many vegetables! We’re such awesome wives!

I cannot wait to hit up TJ’s when I go to Florida in a week. All I can think about lately are chocolate covered pretzels and their’s are divine!! I could use a little Starbucks too ;)

Congrats on being finished with your last grad class for the semester! I just graduated with my Master’s degree on Friday and it feels SO WEIRD to be finished. It will be here for you too before you know it! :)

My husband doesn’t get a ton of meat for dinners either, but thankfully he eats out with people from work a lot, and he gets his meat then. Plus, meat is what makes our grocery bill so much higher!

It’s so funny that you made your hubby shepard’s pie! My hubby was asking for this, but I don’t eat red meat…the one you made looks excellent! Normally I make mine with creamed corn, but hubby hates corn. How do you make yours?

Also, I am jealous that you’re already done with school for the semester. I had a monster paper last week, but I still have 2 finals left :( Congrats on being done!! Enjoy the next month for all it’s worth.

I just browned up the meat and added some spices (garlic, onions, liquid aminos). Then I added the veggies to the mix with about 1 cup broth and let it simmer while I made the mashed potatoes. After I made the potatoes, I just layered it up and cooked on 400 degrees for 25 minutes!

I love that you run walk too- I’ve been doing run a song/walk a song instead of running for miles on end like I used to and my body is definitely appreciating it!

Fry it up on one side, flip it, and only cook for probably 30 seconds on the other!

I’m with you on trying to force veggies down my hubby’s throat :) As long as I make a dish with meat in it at least twice a week, he agrees to eat what I make!

I also make my Husband his favorite meals after he’s put up with a few non-favorites. He loves meatloaf (made w/ ground beef, not turkey), chicken & yellow rice, and shepherd’s pie. I occasionally make healthier versions of those meals, but he never likes them as much as the “normal” version.
