i will eat more vegetables today

I’m not going to lie folks – I am BEAT (as I’m writing this Tuesday night). This is going to be short and sweet. My motto for today is “I will eat more vegetables than yesterday."

Peas and Crayons

Breakfast – 6:00 AM

I was so proud of myself yesterday morning – I got myself out of bed at 4:30 AM to go to the gym. GO ME! That hasn’t happened for about a month or so, so I’m pretty pleased with myself.

the last of the banana bread (::tear::) + almond butter + banana slices

I had a few errands to run after school and before my new class, so I scarfed this down as soon as I sat down. I knew dinner wouldn’t be until late!

almond butter, chia seeds, and bananas on one
avocado + fried egg on the other

Then I followed dinner up with a few pieces of chocolate. See? I need something green today. I’m thinking a nice big salad for dinner – mmmm! Maybe with an egg on top. I’ve been LOVING eggs lately.

Question: Tell me something I don’t know about you. I realize this is not a question – I just think it can be fun! :)

Before I had my daughter I used to be a 4:30 wake up girl and an early more gym rat… I miss it- now it’s my treadmill and I at 5am… it works :) I’m making your soup tomorrow! Can’t wait

I have been loving eggs so much too! Pregnancy craving I have, I love the runny yolk ones too, but had to give those up when I found out I was pregnant! I was eating them nightly because of craving them, then realized I was pregnant and had to quit! Baby can’t have raw yolks, but wanted them, haha!

Funny - I have multiples and when I was pregnant, I had to eat 2 eggs every morning .I have never been a huge egg person and could only eat (stomach!) hard boiled. I remember crying some mornings saying I can’t wait to just wake up and eat a bowl of cereal! I am now vegan ;-)

i was pg with triplets and there was a very good book out at the time that recommended this as well as a very high calorie diet. It worked for me - plus I was vegetarian (am vegan now) so it was a good protein source. There is something in the yolk that helps the baby’s brain develop if I remember correctly (that is in question!)

I totally have my days when not a veggie is consumed. I try to make them happen not so often but I figure it all balances out. I usually load up on veggies the next day and am totally fine :)

I have been telling myself the same thing these past couple of days. I noticed over the weekend that I had been slacking a bit in the veggie department and was relying a bit too much on fruit. I have done better the past couple days, so lets hope that I can keep it up!!

Horseradish hummus?? You have me intrigued! ;)

Eggs are amazing….especially with a runny yoke! I think that I could pair them with almost anything.

I have a sweet potato for lunch. Does that count? *womp womp* That’s my goal for this weekend is to stock up on frozen veggies and stuff for lunches next week. Right now, I’m just hoping that what I have will last me the rest of the day. I think it will, though.

Did you know Iowa is an extremely boring state and it kills me that I have to stay here when I’d rather live in Colorado, near my best friend, and the beautiful mountains? :-)

Different strokes for different folks, I guess. I enjoy some aspects of it, but I definitely enjoy the air and views of Colorado more than Iowa (Don’t know how it is in your part of the state, but I woke up this morning, and outside smelled a lot like cows…I live in SW Iowa).

You are right about that, though. Maybe there’s just not a lot to do in my town.

I grew up in SE Iowa and now live in the central part… always in the country so I’m used to the farm smell :) I’m not sure I know any different.

I think I need to try that soup - I feel very cold right now and it looks warm and inviting!
Good job on the early wake up - I am a morning person and love being up in the quiet, getting my run in (I do not know how people do it later in the day - my energy dies by then and too many things get in the way!) and starting the day with time for me. Keep at it - it is most difficult at this time of year!

I do not have a problem getting the veggies in but have been slacking with the water

Something about me? In 3 months I will have 3 teenage boyz!!! Where does the time go?

my energy fades after school too, but I will say that on those days where I’m sleepy, a walk with charlie always wakes me up! (or a nap does too ;) )

That’s a long day! I was up at 4am today to workout, but I’m done work (and don’t have school) at 4. I’m not sure how you survived!
Something you don’t know about me- I love to travel and never wanted to come home/never got homesick. We got a dog five years ago, and now after a week I’m itching to come home and see him!

WOW. that takes quite a bit of self discipline to wake up super early to go to the gym… i’m a morning sweater, too, but THAT hardcore ;) luckily, i start work at 9am and i only live about 7 minutes away, so i can get up at 7am and still get a decent sweat sesh in before a long day in the office!

I just tried toast with preserves on top of an egg the other day for the first time (got from courtney at STSL) I cant believe how good it was! I used to think it looked gross, but I was very wrong. :)

“I wonder why Chelsey never eats her eggs sweet…maybe it just really grosses her out because I was recalling when you were wanting to up protein and was hesitant to leave your sweet oatmeal in the am. Then I thought “or maybe she does who knows….” and then I thought “why am I thinking this, blogging is so weird”

Today I thought for a second the ketchup on your toast was jelly and my heart skipped a beat. LOL. I’m such a weirdo.

Good for you for getting up at 4:30 to work out! I just started getting up at 5 again to get in some mornings workouts…getting out of bed is definitely the hardest part! The night before I actually set my workout clothes literally right where I step out of bed so I just change and go, no excuses or wandering around.

I have that soup pinned. I need more cock pot/easily left alone meals, and I do love beans. Something to know about me: I’m a tattoo fan. I got my newest one the day after my 30th birthday in November. It’s in a somewhat visible location (under my collarbone) and I love that and I love even more it shocks people who think I am straight laced.
