late to the party

Happy Wednesday everyone! Now that I’m back in grad class for the semester, I probably won’t be posting on Wednesday mornings again due to the exhaustion I’m feeling when I walk through my door at night. I was very lucky to have a professor for my last class that let us out of class every night before 7:00 (it’s supposed to go until 8:45), but this new professor doesn’t believe that same concept. It’s a good class though with a lot of great discussion, so I can’t complain!

I guess I’m a little late, but thanks to Jenn for hosting the WIAW party today! (Well, and every Wednesday)

However, I promise you my breakfast looked very similar! I finally ate oats (this egg kick I’m on is for real), and I won’t lie, I was kind of disappointed. I missed my eggs! This morning I had chocolate oats (oats with 1 tbsp. of cocoa powder mixed in) topped with cinnamon, coconut, and peanut butter.

I can usually wait until after school to eat my snack, but today I was ravenous by the time the kids settled into their silent reading time. I ate this new to me KIND bar flavor – peanut butter and strawberry. Oh my gosh was it good! I have some surprises coming in weeks to come from KIND. Be on the lookout!

Snack – 4:15 PM

When I got home, I snacked on some chips and hummus because I was hungry again. Then I proceeded to crash on the couch and take a nap. It was ridiculous how tired I was.

Dinner – 6:00 PM

Tonight was one of those nights where the thought of cooking something even remotely elaborate (in my mind, elaborate was pasta) seemed way too difficult. All I wanted to do was have dinner on the table couch in five minutes or so.

Dinner included the best balsamic vinegar I have ever had in my life. One of my students bought it for me for the holidays, and it is delicious. It’s super thick and has the best flavor!

I think not.

Tonight is Wednesday which means you can find me on my couch watching my favorite shows and perhaps ending my night with a piece of banana bread and peanut butter. Sounds about right!

mmmm banana bread!
i have homemade banana chocchip oat muffins curently at my house
one of bccomuffin+some peterpan honey roast crunchy pb+glass of soy milk=1 amazing bedtime snack ;)

They are delicious! My favorite is the dark chocolate cherry cashew. And that bedtime snack? Sounds AMAAAZZZINNNGGG.

I really need to start getting more protein in the mornings, but for some reason eggs are about the last thing I want then. I did see a recipe for herb frittatas that you make in a muffin pan that I might try out. Something different would be good.

Don’t feel too bad…I won’t be posting my WIAW post for about another hour. Now THAT is late to the party! ;)

I am loving the sound of a strawberry and peanut butter Kind bar..two of my favorite things! I am also loving the sound of a potential Kind giveaway in the near future?? ;)

Finally, you are right. Avocado on toast is AMAZING. I usually add salsa to mine, too!

I LOVE avocado on my Ezekiel toast!!!! SO YUMMY!!!! Seriously there is no other way to eat toast (uuuunleeess it involves coconut oil and cinnamon LOL).

I stopped eating oats for a while after getting seriously tired of them, and although I have welcomed them back into my life on some mornings, it helped me discover so many other breakfast favorite. Hello greek yogurt, pancake, and cereal obsession!

Last year, I used to eat avocado on a whole wheat english muffin practically every single day as a part of my lunch. I think this food kick needs to come back. The problem is that I’ve been so disappointed with the avocados around me lately! It’s hit or miss when I buy them.

That KIND bar sounds like a PB&J - yum! And no, there’s absolutely nothing better than avocado + sea salt on toast. I like to add a little dash of garlic powder too. Hope you’re feeling more rested today! Yay for Friday tomorrow!

I’m digging your salad! What does your hubby do for dinner when you make a quick salad for yourself? Sometimes when I’m too tired to cook I feel like I need to fight through it to make something my hubby can eat too….or he will starve (actually just eat a monstrous bowl of cereal with protein powder!)

Kind bars are so good. I rarely eat them but whenever I do I remind myself to buy some instead of my usual Luna bar stock. I haven’t had avocado toast in god knows how long but now I am craving it hardcore!! Yum.

I’m very late to commenting on this but had to because I’m so glad I’ve found someone else who loves my combo of avocado and sea salt on toast! The only weird thing about me is that mashed avocado kinda skeeves me out - no idea why - even though I love guacamole. So I have to slice mine on toast. But it is still amazing with salt and sometimes a splash of lemon juice too!

Btw I think I will be using your recipes a whole lot more in the future. I think I’ve worked out that wheat makes me pretty bloated - I seem to be okay with foods containing gluten, but straight wheat like bread or bran flakes or anything like that = not good. So I gotta start browsing your recipe section a little more!
