My goodness – I’ve been a bad blogger! What is my deal? Other than the fact that I have been fighting a little bit of a head cold, I’ve got no excuse. Thankfully I slept for almost ten hours last night (ummm yes, that would mean I would be asleep before 8:00) and I feel so so much better today. Rest really does help that’s for sure.

Okay – let’s get started with this What I Ate Wednesday. Thanks to Jenn for hosting as always!

Peas and Crayons

Breakfast – 6:00 AM

I had the pretty standard choice these days.

Two eggs (scrambled). Toast with peanut butter and banana. Apple slices.

mid-morning snack 9:00 AM

I had an unpictured half of a peanut butter sandwich to snack on during my plan time.

lunch 11:15 AM

I had one of these tasty veggie patties (I got them from Costco).

I may or may not have also broken into my chocolate stash after lunch. It had to be done!

afternoon snack – 3:00 PM

the other half of my peanut butter sandwich hit the spot!

After I got home from work, I actually made it to the gym for a nice workout. I felt pretty proud of myself!

Dinner 6:00 PM

The husband and I had some good conversation over some cheesy chickpea quinoa and spinach, which is one of both of our favorite dinners. He had quite a day – as did his sister. She rolled her jeep this morning (she’s okay, thank God!) and he came to the rescue. Such a good big brother. Then when he was hauling her jeep back to his shop, some ding dong hit him. My goodness! What a day what a day.

Right now, the Husband is on a run to the store for some snacks, including some coconut milk ice cream that I plan on demolishing when he returns. I can’t wait! But for now, I’m watching Raising Helen on Oxygen and of course, crying at almost every moment. I freaking love this movie – I have to watch it every time it’s on TV!

Question: Have you ever gotten into any car accidents?

I’m pretty impressed with your 10 hours sleep! I swear sleep is such a miracle worker, it can totally turn my day around if I just sleep well.
Mmm, I’m drooling over that cheesy quinoa and spinach. I’m definitely going to have to save that recipe! I’ve been looking for some new quinoa ones…
Oh my goodness, that sounds so scary! I’m so glad to hear your SIL is okay. I’ve never been in a car accident before and certainly hope I never am.
Oh man, Raising Helen is totally a tear jerker!

SO wish I could sleep 10 hours! Fighting a head cold too but, not giving in.
We hit a deer in our brand new Jeep Grand Cherokee! Uggghhhh!!!
Not good but… it’s okay…. we have insurance!!! :)

I totally demolished coconut ice cream after dinner tonight! I drowned mine in maple syrup! :) Delicious & well worth the bellyache I have going on. Enjoy!!

Thanks for the link to the cheesy chickpea quinoa and spinach dish. That contains soooo many of my favorite foods, so it HAS to be quite tasty. I will definitely be trying that :) .

Glad everyone is okay! I have been in four “accidents” (cars bumping, but no damage and no injuries) and two major accidents that totaled the car. One of the major ones I was an infant and every single part of the car was DEMOLISHED except for the corner where I was which didn’t have a single dent. Lucky day for me!

Oh my gosh! So glad everyone was okay-two accidents in one day is awful!!
I’ve been in a few car accidents, one very serious, but none when I’ve been driving, thankfully. I’m scared my day for that is due sometime soon.

I’ve been in several accidents, not fun! Once my car was in the shop for a month. At least I got a nice rental car for free.

Oy what a day with the car wrecks! Glad everyone is ok! I’ve been in a couple fender benders when I was younger, knock on wood, nothing recently!! PS - We got a snow day today!!! School was called last night before anything even started happening because the anticipation was so great! Literally all the districts are off today!!

Oh wow I’m so glad your sister in law is okay! I haven’t been the driver in any accidents, but over the summer I was in the car with my sister two times when she backed into other cars in parking lots. :P Luckily she seems to have learned her lesson since then haha.

What a day is right! Glad everyone is okay :) SOmetimes 10 hours of sleep is all you need to get back to normal. I’d be lying if I said this didn’t happen at least once every 2 weeks ;)

Oh my, now that’s what you can really call “quite a day”. It’s seriously scary when you find out about family members or other people you’re close to having been in accidents. Glad to hear both your sister-in-law and husband are okay!

Ah yes, the magic sleep can work :) - ten hours sound heavenly. Hope you’ll continue to feel better.

Those veggie burgers look great. Could you list the ingredients in the burger? Costco is a bit far but I would love to find a vegan, gluten free veggie burger that does not have soy. I would so be willing to make the trip to get these if the ingredients were ok for me and my girls (they also have food allergies). As a full time working single mom of 2, sometimes those quick and easy dinners are a must.

I do the microwave potato trick ALL the time. It’s so handy to have an easy and filling meal ready in minutes after I’ve been in downward dog and namasting my evening away.
