For those of you who were wishing me good luck on a snow day yesterday, I have to tell you that I did not get one. In fact, I think my school district and Chicago Public Schools were the ONLY districts around that did not get the day off. I’m not going to lie – I was upset. However, the day didn’t turn out to be too bad and now I don’t have to make up a day in June. I did get another night off of grad class though! That’s pretty fun if you ask me.
Today was pretty delicious in the food realm. I wasn’t too hungry (which is quite abnormal for me), so I kept it pretty simple.
Thanks to Jenn for hosting another week of WIAW – and did you hear she’s preggers? I’m so pumped for her!!! Congrats Jenn!
Breakfast – 6:00 AM
I was soooo not hungry when I sat down to ate breakfast – and I’m not going to lie, I had to force most of this down. However, usually if I don’t eat breakfast, I’ll either end up feeling off for the rest of the day or I’ll be ravenous by the time I get to school. So oatmeal I ate. It was filled with the best blueberries I’ve eaten since the summer and was topped with peanut butter (and a few chocolate chips just because).
This week is filled with state standardized testing for the kids, so I’ve got a lot of down time. I’m not going to lie – at some points during the day, I found myself bored! By the time lunch rolled around, I was ready to socialize and actually speak other than proctoring a test.
Lunch – 11:15 AM
Okay, so this wasn’t actually my lunch. However, I thought it’d give you an idea. It was a great big salad and it was topped with leftover roasted veggies, tofu, and avocado. It was a good one! On the side I ate some chips and hummus. Very good lunch!
Snack – 3:15 PM
I wasn’t that hungry after school, but I was planning on going to work out so I thought I should fuel up. I ended up eating half of a classic peanut butter and jelly sandwich.
Dinner – 6:00 PM
I made a new to me recipe tonight. I was planning on making Mama Pea’s crockpot chickpea pie recipe, but when I actually read the directions I realized I wouldn’t be eating until around 9 PM. That wasn’t going to work for me. Instead, I put that recipe away for a rainy day and found another chickpea pot pie recipe.
I ended up making this one from Prevention RD, and it was DELICIOUS. I didn’t really eat the topping because I wasn’t too hungry, and it was corn bread. I didn’t feel like having my stomach hurt. The filling was awesome though!
I don’t think I’ll be eating a snack tonight unless I start feeling super ravenous before bed. You can find me either watching How I Met Your Mother (on season 7!!) or reading The Storyteller. Oh, and I’ll also be avoiding washing dishes. Blech.

I’m usually ready to devour food whenever breakfast, lunch, or dinner rolls around. For the past few weeks I just haven’t been feeling lunch…weird. You can’t go wrong with a classic pb & j!

On Sunday night I made Szchuan (sp?) Pork, and it was awesome! It was a Cooking Light recipe, and it turned out so well that my husband ate the leftovers (which he never does!).
Yay for HIMYM. Isn’t it just a brilliant show? I love how little bits and pieces from past episodes are brought back!

I was actually a little bored at work today, too. My seniors are testing this week, too, and the days are starting to drag…..I’ll regret being bored as soon as we return from Spring Break and senioritis is rampant! I made gluten-free chicken and dumplings Sunday night and sausage rigatoni last night. Both were amazing!!
I made a black bean casserole the other day that was amazing. But then it always is. I wish I could convince my husband that we should have it every single night. Yeah…he’s not having that!
Sorry you didn’t get your snow day … when I was living in Ohio, I used to dread having to drive in the snow. Yuck. I am so thankful that I don’t have to deal with that anymore!

That chicken pot pie ended up looking delicious! I like my pot pie really thin, so I can totally understand why you avoided the cornbread part.
My mom has standardized tests coming up soon too. I think she goes through a couple of books during the test times. Ha.

I teach in the western suburbs too and felt like we were the only district that didn’t have a snow day. Everyone around my district did!

Last good recipe I made was a quick dish with chickpeas, onions, tomatoes and spinach and you just top it with some feta cheese and serve it with either more vegies or brown rice or quinoa. Super quick and easy but still tasty.

Oh and thanks for the breast pump tip! I did have it on registry, but I just don’t like having high priced items on it, but you never know, someone could split a gift. Plus, I could get gift cards, so that could help towards it too!
I know - I remember for our wedding I didn’t want to put high priced things on the registry, but you never know! Some people are uber generous, some people have coupons, and some people like to split things! I’m pretty sure if you register at Buy Buy Baby (not sure if you have those out there), they give you a 20% discount on your registry items after the baby is born. I know that Bed Bath and Beyond does that and they’re owned by the same company.
That chickpea pot pie looks awesome! Pot pie always brings me back to my childhood.
The last recipe I made was an adapted version of Moosewood’s lentil-walnut burgers. I subbed in roasted sunflower seeds for the walnuts and they were really good!
Is it sad that I’ve never really been a fan of the pot pies?
The purple cabbage, apple, and pecan stir fry that i made on tuesday night has probably been the best recipe i’ve made in a while. I kind of followed a recipe for a slaw, but changed it up a bit and made it into a stir fry. So yumm!

I’ve been proctoring the standardized test this week too. I’m not the classroom teacher, so there’s nothing for me to do but pace the room for three hours while I’m in there. SO boring. I’m glad that today is the last day

Isn’t it weird how some days you can’t STOP eating and then other days food doesn’t even sound appetizing? The days when food doesn’t sound appetizing weird me out. I love food too much for that to even make sense to me!

I think I’m embarking on an oatmeal kick, that bowl of oats looks soo good! Best recipe I’ve made lately was butternut squash mac and cheese, delicious!

The most recent good recipe I created was sweet curry tofu- tofu marinated in curry, cumin, sriracha, agave and soy sauce mixed together then pan fried. So easy and so delicious!
I am hoping for a snow day tomorrow! I feel like I can cross so much off my to-do lists on those lazy days.
Sad you didn’t get your snow day!! If it makes you feel any better, I work from home, so no snow day ever for me-even with all the epic snow we’ve gotten. Kinda sad.
