sick weekend & meals for the week

November 24, 2014

Happy Thanksgiving week! (to people in the US anyway ;) ) This weekend definitely had its ups and downs. On Friday, my mom and I went to go see Mockingjay Part I and it was absolutely amazing. Anyone else see it yet? Thoughts? I’m not going to lie – I forgot about a few things that happened in the book, and I think that made the movie that much better!

Saturday I felt off all day – my head was pounding even more than it had been, and I was just tired and not feeling well. Well, wouldn’t ya know I woke up in the middle of the night with a 102 degree fever. Yuck! Thankfully John took the girls to church so I could rest for a little while in the morning and gave up some of his work time in the afternoon so I could rest. (As a business owner, he does most of his paperwork on Sundays – the work never ends!) After a quick trip to urgent care for some medicine, it was determined that I had a sinus infection, and I am already feeling so much better! Which is great because the thought of having to reschedule all of my parent teacher conferences for the day was giving me heart palpitations.

It was also great because that meant I could truly enjoy spending some time with my little ladies yesterday afternoon!

I have climbers… and it’s pretty terrifying. They try to scale just about anything. Let’s just say that this activity table, which they felt was the perfect climbing apparatus, has been put away.

This week’s meal plan is pretty  short and sweet because of the holiday, but I thought I would include the girls’ lunch plan as well since many of you were interested in seeing what I feed them. It’s nothing exciting, and they like most of their meals “deconstructed”, but I love seeing other ideas on what to feed picky toddlers, so I’ll share with you!

Dinners

Saturday – black bean & spinach quesadillas with pico de gallo
Sunday – pasta with spinach & meat sauce
Mondaychicken taco chili
Tuesday – leftovers
Wednesday – cobb salads
Thursday – Thanksgiving! I am contributing The Pioneer Woman’s Brussels Sprouts
Friday – Thanksgiving leftover night

Girls’ Lunches

Saturday – leftover macaroni and cheese, broccoli florets, grapes
Sunday – deli turkey, cheese, bread with hummus (this was boycotted), apple sauce pouches
Monday – grilled cheese with chopped spinach (hide those veggies for those picky ones!), avocado, pomegranate arils
Tuesday- black beans, diced tomatoes, avocado, tortilla with cheese
Wednesday – meatballs & marinara sauce, bread with butter, grapes
Thursday - Thanksgiving
Friday – wing it

I try to give the girls variety in their lunches because something that they liked one day, they might not like the next. I also try to give them at least one item that they enjoy (that can be difficult because they like different things) so they don’t end up in a giant puddle and throwing a huge tantrum throughout the meal.

I’m going to try to stay as with it as possible for the next couple of days, but hang tight with me if I miss a day. Conferences always have me wiped! I am, however, going to share my survey results with you sometime this week. You.Guys. Are. The. Best… just thought you should know that!

So happy you’ve started feeling better. Isn’t it wonderful what meds can do for you? ha! I’ve just recently come down with a horrific cough yesterday. It’s been pretty crappy seeing as my throat, ears & chest/back now hurt from it all. Thankfully I went to my obgyn doctor today to get stuff I’m able to take. Let’s just hope it kicks in fast.

Gah! Being hugely pregnant (but adorable by the way - I meant that in the most affectionate way possible lol) and sick is NO FUN! I can’t believe how far along you are. I can’t wait to see those beautiful little girls!

Thanks! I actually LOVE parent teacher conferences. It’s a lot of fun to meet with the parents and get a sense of their personalities/etc. It’s just a long day!

Boo! Being sick on the weekends is no fun! But I’m with you, as a teacher, it’s so much more difficult to be sick during the weeks. Sub plans just stink. And parent conferences…I cannot imagine having to reschedule. What is it about conferences and parent “issues” that is so exhausting! Hoping you make it through today with enough energy to make it home. ;-)

Sorry to hear you weren’t feeling well for the first part of the weekend, but I’m glad you nipped it in the bud and you’re mostly feeling back to your normal self!

Thanks for sharing the girls’ lunches! Lunch is the hardest meal for me to come up with ideas for Hunter. I feel like we rotate between rotisserie chicken, deli turkey/ham, grilled cheese, and PB&J sandwiches (along with various fruits/veggies on the side). I should make a batch of mac ‘n cheese for him throughout the week. For some weird reason, Hunter won’t eat quesadillas. Weird, right?! I think it’s a texture thing. He’s funny with textures. Do both of your girls eat avocado? I’ve been trying since day one to get Hunter to eat them, and now he won’t even touch them. Stinker.

Glad you’re feeling better! That’s amazing that you plan out both your own meals and your kiddos. I only plan out our dinners M-F, and find that challenging enough to stick to.
